Preheat the oven to 450. Grease and flour the pizza pan, stretch the dough over it, pierce it with a fork, spread the sauce, sprinkle the cheese as usual.
Spread the garlic and a little rosemary on the cheese. Sprinkle with salt and pepper, and drizzle with olive oil if you like. Cook as usual.
While it is cooking, make a salad of the arugula, lemon juice, and a little olive oil, plus salt and pepper.
When the pizza comes out, lay the torn-up prosciutto over the top and throw the arugula on top of that. Top with parmesan cheese. Let it sit for a few minutes before slicing, to let the arugula wilt slightly.
