Cut the chicken into small pieces and sprinkle with salt and pepper.
Make the sauce by mixing all the ingredients together.
Heat the sesame oil in a large pan and add the chicken. Cook until it's done (duh)
Add the sauce to the chicken and cook at a medium heat, stirring, until the sauce thickens. Stir in the cashews.
Spoon chicken mixture into lettuce leaves. Add chopped scallions to top, plus sriracha sauce if you like.
