What’s for supper? Vol. 426: You may want to write this down

Happy Friday! I didn’t have anything extra on my calendar this week, and it was sunny every day, so I was able to just . . . do the things I am in charge of, and it was immensely satisfying. 

You know what else is satisfying? Food! Especially when you are hungry! I don’t know if other people have made that connection, or if I just invented it.

Here is what we ate this week:

SATURDAY
Leftover Delite and taquitos

Looks like some bo ssam, spiedies, chicken pie, and pizza pockets, plus of course taquitos.

The family is not nearly as enthusiastic about Leftover Buffet Saturday as they were when I inaugurated it, but I still absolutely love it as a weekly staple. It saves money (I generally spend less than $10 on Saturday meals), it saves time and mental energy (I always know what’s for supper!), and it doesn’t force me to clean out the fridge once a week, but it sure encourages it. And I have a much easier time throwing out Perfectly Good Food if it’s been given a second chance and still didn’t get eaten. Very Marie Kondo, with a lot fewer nameless ziplock bags of sludge lurking in the back of the fridge. So I’m pretty proud of this new thing I invented: Eating leftovers. Feel free to copy this idea. 

SUNDAY
Omelettes and hash browns

Sunday I did the thing I’ve been threatening to do for weeks now: I cleaned Corrie’s room. First I sent her up to bring down one big bag of trash and as many clothes as she could find, and try to put all the books in one spot. Then she went to a birthday party and I went in and did the fling zone method I invented, and I listened to the first two of “The Fall of the Aztecs” episodes of The Rest Is History. I’m not a big podcast person, just mainly because I’m a late adopter in general, and don’t want to rush into any new fads. But The Rest Is History is FANTASTIC. Incredibly entertaining and compelling episodes about people, places, and events you may never even have thought to wonder about, and all rigorously researched and frequently very funny. Damien often plays it in the car when it’s his turn to bring the kids to school, and it is not exactly PG, but in general I would be comfortable playing it for kids ages 10 and up. 

So that took probably three hours, including removing the old bunk bed and putting a single bed in. Well, first I had to repair the bed, because it was Millie’s old bed (it’s a really pretty white wooden bed with spindles at the head and a sea shell carved on it), and I couldn’t get it out of her house, so I ended up uh sawing it in half. The actual repair was fast, but it took me FOREVER to figure out which piece went where, somehow. (There were four pieces. I’m just. . . not good at some things.) 

I knew this would take all day, so I planned a quick meal: Frozen hash browns and omelettes with your choice of cheese, Canadian bacon, and mushrooms. Nobody picked mushrooms. 

I use about three eggs per omelette, but I speed it up by cracking all the eggs into a bowl and beating them, and then measuring out about half a cup of beaten egg per omelette.

They were not delicate and beautiful, because I was TIRED, but they tasted fine. 

Perfectly fine. I lay down for a while and kept thinking about how tomorrow, I was going to put together a pen for the new ducks, so they wouldn’t keep getting stuck in the stream and need Damien to come get them, but then freak out like lunatics when he does come get them. Eventually I realized I was expending so much mental energy thinking about it, I might as well go ahead and do it.

We have an old trampoline frame, which I put together upside-down and then stretched chicken wire around it and fastened it with zip ties. Easy peasy. By the time they ducks are big enough to jump over the fence, they’ll be big enough to roam freely but still come home at night, and we won’t need the pen. I highly recommend having an old trampoline frame in your yard! You can use it to make an enclosed garden, too. 

MONDAY
Pizza

Monday I planted a ton of flower seeds finally, and I potted a bunch of pansies in hanging buckets from Aldi, and made a little flower area — a garden, I suppose you could call it. This week, you may have noticed, I’m in the business of inventing things that definitely haven’t already existed for millennia — in front of the deck

Daisies and day lilies transplanted from elsewhere in the yard, and clematis seeds in the pot on the left. I feel like I also planted some kind of seeds between the lilies, but I guess I’ll have to wait and see. Life is so exciting when you routinely hide your own actions from your conscious mind. Either way, it won’t matter, because any seedlings I plant will get eaten by rabbits.

But I had fun. I finally got to use my new Japanese weeding sickle I got for Christmas, and dang, that thing is useful in about six different ways. It’s also one of the few tools I put the little plastic sheath back onto when I’m done, because dang, that thing is sharp. (Yes I cut myself.) I’ve also been using my hori hori knife a lot. I really think the Japanese are onto something. 

Monday I also found a NIB electric rotisserie on the side of the road, plus a vinyl countertop in great shape! Corrie also got some kind of wooden shelf thing that she feels will be useful. I don’t know where she gets these garbage-picking ways. Some people are just born pack rats. Probably a recessive gene. 

So, a ROTISSERIE. Just think of the meat we can slowly turn. We can eat like Hobbits! We can eat like Henry VIII! I can make SHAWARMA WITH THAT LAMB I’VE BEEN SAVING IN THE FREEZER. I remember when the kids were little, we would go shopping, and the three exciting things were: Free cookie, lobster tank, and “the chicken ride.” And now we shall have a chicken ride of one’s own. 

I also remember going shopping with my son, who was so incredibly terrible in the store that every time I got back I would tell my husband “I am never taking him out of the house again.” And now he is a children’s librarian. You never know. 

TUESDAY
Musakhan and taboon

On Tuesday, I got some chicken marinating in the morning and measured out the ingredients for bread, wrote a ton, and then did some extensive cleaning out of old flower beds. Then, with the gracious permission of Millie’s family, I dug up a white peony and a purple lupine from her yard and moved them into my yard.

The peony is doing great, as peonies tend to do. The lupine is not super happy about the move, but I think it will pull through. I had bought a bunch of crazy cheap perennials from the local garden club, and added those to this garden, so now it has tulips, daffodils, hyacinths, and crocuses in the early spring, and then alliums, speedwell, some asiatic lilies, purple lupines, white and pink peonies, pink dianthus, purple garden phlox, siberian blue irises, and shasta daisies for the late spring/summer. I hadn’t really planned a pink, white, and purple summer garden, but it just worked out that way, and soon it will have a background of goldenrod, so that works out! 

The chicken was mousakhan, or Palestinian chicken. I use this Saveur recipe and I was a little sad because I was a short on sumac, which is an important flavor in this dish, giving it a wonderful sour-bright tang. I subbed in a bunch of lemon pepper seasoning, and it wasn’t quite the same, but not a terrible idea.

It has to rise for an hour, so while it was doing that I put the chicken in the oven and did a little more gardening. Then I rolled out the dough and stretched it onto a giant pan and baked it for about 12 minutes.

It was a little bit gummy, to be perfectly honest. I think I rushed mixing the dough. But still, piping hot bread with savory chicken on top, sprinkled with sizzling hot pine nuts and fresh parsley. Pretty, pretty good.

You just tear off what bread you want and then help yourself to chicken, and the juice from the chicken seeps into the bread and it’s pretty great.

I had mine outside. 

And then I went inside and had some more!

WEDNESDAY
Regular tacos, chips and salsa

Wednesday I decided to mow, and gave the pull string thing a mighty yank, and yanked it right out of the lawnmower. So instead of mowing, I tackled the area with the potting table (or, as I absentmindedly called it much to Corrie’s delight, “my plant desk”), where I have just been flinging basically everything yard-related all year. I threw out three bags of rotten crap, tossed some disreputable wood onto the scrap pile, organized my extensive collection of empty flowerpots, dragged a lot of old chickenwire out of the tall grass, and reconfigured the whole thing using that countertop I picked up. 

Pretty swanky! I need to slap something on the underside of the counter to seal the wood and make it last a little longer. There is, in fact, wood sealant in this photo, and it is a thing I may actually do, because it’s June, which is the month when I actually do things. 

Then I quickly made some very boring tacos. I had a “chub” of ground beef — the kind that is wrapped in plastic printed with a photo of meat, which is not as reassuring as they think — and added salt, pepper, garlic powder, onion powder, cumin, paprika, and cayenne pepper, and we had shredded cheddar, salsa, and sour cream, and tortilla chips. Basic but fine. I was HONGRY. 

THURSDAY
Chicken enchilada rice bowls, black beans with spinach

Thursday it suddenly got quite hot. When I get hot, I get angry, and suddenly the things I’ve been ignoring become intolerable, so I often end up doing gross and heavy jobs on the hottest days. Hey, it’s an ethos.

This time, I cleaned out the fire pit, which was all overgrown and kind of foul (SOMEBODY had pulled the old straw off the strawberry bed and just dumped it, and it was rotten and stinky and full of slugs); and then I was so sweaty and grubby I figured I might as well face the six tubs of broken bricks and gravel that I had deserted on the side of the patio when I made the patio uh two years ago and have been avoiding thinking about ever since. 

I thought maybe I could use the sand to fill in some eroded spots in the driveway, which is unfortunately uphill and on the other side of the house. So I did one load, then another, and then another, and then decided, you know, death comes for us all eventually, things fall apart, the driveway will erode, and what can one do, really. Definitely not drag any more of this shit up that hill, I don’t care what Kate Bush says. 

I complained about this problem I had invented until Damien suggested maybe the fire pit could use some gravel and sand, and that happens to be downhill. That man is brilliant. 

I also dragged the old plastic play house out of the blackberries and across the yard to the duck house

and was extremely proud of myself for inventing a system where you could store hay in a special little house that’s sheltered from the rain and conveniently located next to the animals, until a friend pointed out that this what’s commonly known as a “barn,” and I didn’t actually come up with it. Then Damien reminded me of the time when I was pretty, pretty tired and came up with the idea of plastic bowls.

Whatever! I am living life fully over here, enjoying my specially curated grass-adjacent flower area, my outdoor plant desk, and my weather resistant hay house, and if you people keep pushing me, I won’t tell you about the incredibly convenient portable food I once invented, which you can carry with you by, get this, affixing it to a piece of bread. It has lots of protein in it, because it is made of nuts, of all things, that you process in some way. I haven’t worked out the kinks yet, but I am thinking they could be blended up into something almost resembling butter. So it would be spreadable! Wouldn’t that be handy? I bet it would taste good, too. 

(This is a faithful rendition of an idea I actually had one time, when I was, yes, pretty tired, and invented peanut butter. You’re welcome.) 

Anyway, on Thursday I invented chicken enchilada bowls. I took some chicken breasts and seasoned them with Tony Cachere’s seasoning, on the principle that, if it’s orange and sprinkly, it’s probably more or less Mexican or whatever. I browned the chicken slowly in oil in a pan, and then shredded it in the standing mixer. Then I sliced up a ton of onions in the food processor and browned them slowly in the pan that I had cooked the chicken in. Then I mixed the chicken and onions together with a can of red enchilada sauce and put that all in the slow cooker. 

I also made a batch of black beans, and I threw some spinach in there, and left that to cook all day.

Late afternoon, I made a big pot of rice, and we had rice with the saucy, oniony chicken, beans, shredded cheese, sour cream, and corn chips, with lime wedges. PRETTY GOOD. 

I was pretty pleased with myself for inventing this entirely new dish. As I was writing it up just now, I went to add the new tag “chicken enchilada rice bowls” and discovered that I had already used that same tag.

Do you know what this means? I INVENTED IT TWICE. Science should study me. That’s how good I am. 

FRIDAY
Tuna noodle casserole 

Sophia volunteered to make dinner and this is what she wants to make, so I am not arguing. 

And that’s my week! Last night I dreamed I had signed a contract for a new book, and I came up with this brilliant plan of taking every essay I had already sold to this publisher, and just billing them for it again. Toward the end of the dream, I couldn’t shake the nagging feeling that this wasn’t how you do it, and then I woke up. 

I tell you, between me and the ducks, there’s just not a lot of brain action around here lately. But it is Friday!

taboon bread

You can make separate pieces, like pita bread, or you can make one giant slab of taboon. This makes enough to easily stretch over a 15x21" sheet pan.

Ingredients

  • 6 cups bread flour
  • 4 packets yeast
  • 3 cups water
  • 2 Tbsp salt
  • 1/3 cup olive oil

Instructions

  1. Mix the flour, salt, and yeast in the bowl of a standing mixer.

  2. While it is running, add the olive oil. Then gradually add the water until the dough is soft and sticky. You may not need all of it. Let it run for a while to see if the dough will pull together before you need all the water. Knead or run with the dough hook for another few minutes.

  3. Put the dough in a greased bowl, grease the top, and cover with plastic wrap. Let rise in a warm spot for at least an hour until it has doubled in size.

  4. Preheat the oven to 400. Put a greased pan or a baking stone in the oven to heat up.

  5. If you are making separate pieces, divide it now and cover with a damp cloth. If you're making one big taboon, just handle it a bit, then put it back in the bowl and cover it with a damp cloth. Let rest ten minutes.

  6. Using a little flour, roll out the dough into the shape or shapes you want. Poke it all over with your fingertips to give it the characterstic dimpled appearance.

  7. Bake for 10-12 minutes until it's just slightly browned.

Instant Pot black beans

Ingredients

  • 2 tsp olive oil
  • 1 onion, diced
  • 6-8 cloves garlic, minced
  • 2 16-oz cans black beans with liquid
  • 1/2 cup fresh cilantro, chopped
  • 1 Tbsp cumin
  • 1-1/2 tsp salt
  • pepper to taste

Instructions

  1. Put olive oil pot of Instant Pot. Press "saute" button. Add diced onion and minced garlic. Saute, stirring, for a few minutes until onion is soft. Press "cancel."

  2. Add beans with liquid. Add cumin, salt, and cilantro. Stir to combine. Close the lid, close the vent, and press "slow cook."

What’s for supper? Vol. 242: Vindaloo! Couldn’t escape if I wanted to!

Hey! Didn’t get a food post out last week, but I have a decent excuse this time: We got about forty inches of snow

and lost power for three days. We had a drought this summer, so the trees are brittle, and tons of them fell on power lines, including the ones right across the street from us.

We have a well, which is run by an electric pump, so that means we also didn’t have water for those days, and that means we had to buy water (in the next town, because the stores here were closed, because the power was out) to flush the toilets.  Yes, you can melt snow to get water to flush toilets, but if you’ve actually ever done this, you’ll know it takes about a roomful of snow to melt down into about three cups of rather smelly water, which is not enough to flush two toilets that ten people have been using; and also, if you are trying to keep your house warm, I do not recommend bringing in a roomful of snow to melt, with a heat source that you do not have! Everything was like that: Yes, there is a sort-of kind-of solution, but is it better? Unclear. The dog, at least, had a wonderful time. He always has a wonderful time.

Anyway we survived by the light of candles and light sabers,

and we didn’t have any babies or toddlers, so that made it easier. I had just bought a ton of comforters on clearance, so we had plenty of bundling material. We even lucked out in that I hadn’t done the weekly shopping yet when the power went out, so all we lost was a pack of ground beef. And we are now the proud owners of a small but decent generator, and all my baby trees survived, and we’re very, awfully tired of board games and turkey sandwiches. 

The power came back on last Friday, which was St. Patrick’s day, and our bishop did give a meat dispensation, so we popped out and put together a nice meal for that: Irish breakfast with all the parts we actually want, so no blood sausage or anything dyed green, but sourdough toast, fried mushrooms, beans, roast tomatoes, roast potatoes, bacon, and eggs fried in bacon fat. 

Very tasty, because how could it not be. I got cherry tomatoes this time, rather than attempting to roast slices of large tomatoes, which are insanely fragile. I mean who isn’t these days, but the cherry tomatoes was a good idea. 

SATURDAY
Hot dogs and smile fries 

I actually love hot dogs. The kids act like it’s some terrible thing when we have hot dogs for dinner, because they are barely American, possibly barely human. 

SUNDAY
Antipasto plate, pasta and ragu, garlic bread, vanilla bean panna cotta with fresh fruit

Sunday was St. Joseph’s day. We usually have a big Italian feast with several courses, but we were still sort of in shambles from the power outage, so we kept it on the modest side. I put together two big antipasto plates with various cheeses, cured meats, olives, sun-dried tomatoes, and fruit

and yes, I was worried I hadn’t bought enough food. 

But I had.

Damien made a wonderful ragù with veal, pork, and pancetta. Wow, it was good. Like especially good. He uses this recipe from Deadspin, but it comes out different every time, and it was so savory and lively. 

We had a bunch of bruschetta for the antipasto, and garlic bread for the pasta. And Italian ices, and then also for dessert, I made something I’ve been wanting to try forever: Panna cotta. I used this recipe from Serious Eats and started infusing the cream and milk with vanilla bean pods the night before. 

You rub the vanilla bean seeds into the sugar, which feels very fancy. Then in the morning, I bloomed some unflavored gelatin powder in milk with vanilla extract, warmed up the cream, scraped the insides of the vanilla bean pods into it, and whisked in the gelatin mixture and the vanilla sugar. Then I just poured it into ramekins, covered them with plastic wrap, and let it chill for the rest of the day. 

Shortly before dinner, I mixed a little sugar with blueberries, blackberries, and raspberries. I didn’t want them to break down a lot, so I didn’t do this far ahead of time. When it was dessert time, I ran a knife around the inside rim of the ramekin and then slammed them upside down on a saucer, and they came out well. Topped with the sugared fruit, plus some slices of mango, and oh it was so pretty

We also had some kind of fragile almond cookies on the side, I forget what it was called. 

I’ve never had panna cotta before, but it was a wonderful texture, silky smooth, and very creamy and refreshing. The vanilla bean specks had gathered at the bottom, so they were strewn all over the top of the glossy turned-out panna cotta and looked very elegant. 

Some of the kids opted to keep theirs in the ramekin and just eat them like cup custards. This is also a normal way to serve them, although people like to make them in glass containers, even wine glasses, if they’re going to serve them this way. 

So, very pleased with this foray. Damien, who isn’t a big fan of custards and such, thought they were great. I see many kinds of panna cotta in our future! You can put whatever you want in there. 

MONDAY
goblin food

Monday I served a truly terrible meal of very burnt chicken nuggets, a wad of very underdone hash browns, and dried-out leftover pasta. 

This kind of meal can be made more appealing by taking pains to make the table attractive. You can achieve this look by not clearing away yesterday’s dessert trash. Follow me for more etc. etc. 

TUESDAY
Reubens, chips

Tuesday there was still corned beef on sale, so I threw a few hunks in the Instant Pot for a few hours, and we had the meat sliced on toasted marbled rye bread with thousand island dressing, Swiss cheese, and sauerkraut. 

Wish I had run the whole sandwich under the broiler to melt the cheese, but it was still quite delicious. I really don’t miss boiled dinner at all. Corned beef is great, but it needs to be squashed in among other tasty things, not just lying there like a cadaver. 

WEDNESDAY
Pork vindaloo and rice, pineapple

I was having a conversation about real mindfulness with my family — about the experience of deliberately standing as nothing but a witness — and the tremendous sense of gratitude that often arises when you’re able to shift into this mode. I realized this happens to me often while I’m cooking, which explains why this isn’t really a recipe blog, per se, but more of a food experience appreciation blog (as well as a big family slice of life blog). And it explains why I often forget to taste while I’m cooking, which I have frequently felt very guilty and stupid about. It’s because I’m not thinking about the end result, but just feeling overwhelmed with the beauty of the things passing through my hands, the colors and sensations and smells and patterns. This does not make for the best food, necessarily, but it makes my life better!

Anyway, Indian food is very conducive to this kind of experience. Just assembling the ingredients almost always puts me in a different frame of mind. Everyone had been sick for several days with a nasty head cold one of the kids brought home, and I was very optimistic about knocking that out, at least while we were actively eating, when I saw what was going into the marinade for this pork vindaloo

This isn’t even as many peppers as the recipe called for (I was doubling it), but it was all I had. So it’s guajillo peppers, garlic, ginger, cinnamon sticks, tamarind paste, cumin seeds, cloves, peppercorns, and turmeric, sugar and kosher salt. The recipe calls for white vinegar, but I only had cider vinegar. 

It’s quite easy. You just make a paste out of all the ingredients above. You just bash them all together until they’re a sticky paste, and then marinate cubes of pork in it. The recipe calls for pork butt and also pork belly, but I just went with the butt. As I often etc etc.

Marinate a few hours

and then add some water and simmer it up along with sliced onions for a few more hours, and then that’s it. You serve it with rice, and throw some cilantro on top. 

OH IT WAS GOOD.

Immensely tender, and the sauce was spicy, yes, but not blast-your-head-off spicy. Just enough to make your nose tingle. It was also tangy and a little bit fruity and a little earthy, and wonderfully nourishing and warming. 

I had a second helping of rice with just the sauce with little fragments of meat it in, and it was a joy. Wonderful recipe. The kids liked it! This may have been because I really talked it up ahead of time, and purposely acted very excited and happy about it, and mentioned many times that it was called “VINNNDALOOOOO,” but it’s not the kind of thing that they usually like. 

I also cut up a few pineapples that were hanging around, and that was not the absolute ideal side, because they were extremely acidic. Mango or something a little more mild would have been better. But it was a wonderful meal all the same. Vindaloo! Knowing my fate is to be with you!

THURSDAY
Chicken enchilada bowls 

Thursday we had school conferences right before dinner, so I prepped everything ahead of time, and we had an unsophisticated but tasty hot meal waiting for us, and everyone liked it. 

I dumped a bunch of chicken legs in the Instant Pot with a can of red enchilada sauce and some diced tomatoes and chiles, and pressed the “poultry” button. When it was done cooking, I fished the chicken out, pulled the meat off the bones, and transferred it to the slow cooker along with the tomatoes and enough of the sauce to keep it from drying out. 

I chopped a bunch of scallions and cilantro, sautéed some frozen corn in olive oil to give it a little char (it’s dumb, but everyone loves it this way) and put that in a bowl, and set out shredded pepper jack cheese, sour cream, corn chips, hot sauce, and Taijin seasoning. Then I set up the Instant Pot again with rice and water. When I was on the way home, I texted one of the kids to press the “rice” button, and when I got home, I heated the corn in the microwave. 

Boom, hot dinner, with cheese.

One of the kids told me, “Jolly good meal, mother. I said that in a silly way, but I meant it.” When a kid stops to make sure you know they’re sincere, you know they’re sincere. 

FRIDAY
Pizza

Just pizza. No tricks!

And I still haven’t written up Corrie’s under the sea cake! I think I will have to give it its own post, as it was quite a journey. It is the reason I happened to have unflavored gelatin in the house for panna cotta.

Oh, one more thing, I got a big sack of flattened rice, something I just found out about (by seeing it on the shelf), which I haven’t had a chance to use yet, but I’m pretty excited about it.

Apparently it is parboiled, so you barely need to cook it, and Indians use it for all kinds of things: A quick, cozy breakfast, savory or sweet, a side dish with vegetables and potatoes, or you can fry it, or you can do whatever you want. It’s healthier than white rice because it hasn’t had as many nutrients polished away.

Hot dogs, hot pretzels

I vaguely remember Saturday. 

SUNDAY
Thai food

The kids had chicken nuggets at home and Damien and I went to a party at the house of one of his editors. We had a really nice time! We took our time coming home and stopped for dinner at Siam Orchid Thai Bistro in Concord, which has a pleasant outdoor table area. Lovely meal. We had a plate of various appetizers, all very fresh and delicious, and then Damien had some kind of amazing crunchy duck arrangement on spicy noodles, and I had a spicy beef and vegetable situation, also scrumptious. My rice came in an adorable little basket. 

We felt like such hot shots, we even ordered dessert. Damien had mango fried ice cream and I had coconut ice cream with peanuts on sticky rice. 

This refreshed and enchanted me so much, I went home and starting mooching around for information about ice cream makers, and I ended up getting an excellent deal on a like-new Cuisinart ice cream maker on FB Marketplace. It should get here in a few days, so hold on to your butts. 

MONDAY
Blueberry almond chicken salad

Easy and pleasant. The blueberries are sweet and cheap this year. I roasted some chicken breasts with olive oil, salt and pepper and garlic powder, sliced it, and set it out with mixed greens, blueberries, slivered almonds, thinly-sliced red onions, and some freshly-shredded parmesan cheese.

I had mine with red wine vinegar for a dressing, and stale crackers on the side. I didn’t toast the almonds, because it was already monstrously late, and sometimes you feel like you don’t even have two more minutes to spare. But here is my periodic reminder that you can easily toast nuts in the microwave, and it makes them crunchier and nuttier, and only takes two minutes.

TUESDAY

I keep making this meal and it keeps not being anything more than okay. Why do I keep trying? Nobody knows.

I made a big pot of rice in the Instant Pot, and roasted the chicken breasts with olive oil and lots of Tajin seasoning, and then shredded it. I mixed half the shredded chicken with red enchilada sauce and half with green enchilada sauce, from cans. And I served the rice and two saucy chicken varieties with some black beans, shredded cheddar cheese, corn chips, and sour cream.

It was fine. I guess I’m just going to have to break down and make actual enchiladas again, though. I guess the real problem with this dish is that it’s not actual enchiladas. 

Tuesday, or possibly Wednesday, was also the feast of Saints Anne and Joachim. The only reason I know that is because I was looking for something that rhymes with “ice cream” for the title, and I was like, hey; so I looked it up the date, and I was like, hey! Or should I say: “AIEEEEEEEEE!!!!!!!” 

WEDNESDAY
Carnitas, guacamole and tortilla chips, corn on the cob

Now this meal turned out great. I made a large dish of guacamole, including one of the more successful tomatoes from our largely unsuccessful garden

Every year, I plant six tomato plants, and five of them are spindly, wizened, and blighted, and one of them is cheery, robust, and prolific. I water and fertilize them all exactly the same, and they all get the same amount of light. I know why this happens, though. It’s to drive me crazy.

I didn’t take a picture of the guacamole, but one must imagine guacamole. One must imagine Simcha happy. Guacamole makes Simcha happy.

For the carnitas, I followed John Herreid’s simple, delicious recipe, which I have finally made up into a card, because I altered it slightly.

It turned out so lovely. You cook the seasoned meat up in oil and Coke with cinnamon sticks, orange quarters, and bay leaves,

 fish out the flavoring elements, continue cooking, and then scronch that meat.

I forgot to drain the fat out of the meat at the end, but there were zero complaints. I took my plate outside with the carnitas, some guacamole chips, and an ear of corn, and listened to Benny talk about how beautiful the world is.

And this is the best possible way to eat carnitas.

I ate outside again and saw THREE hummingbirds. Here are two of them.  I think they were mad at each other:

I installed the Merlin app on my phone, and it’s very entertaining, but I can’t say it’s taught me anything. I’ve always had a hard time remembering all but a few bird calls, and now that my phone tells me what they are, I still can’t remember them unless I’m looking at my phone. Nicely designed app, though.

Later today MY SISTER IS COMING OVER. I AM EXCITE!!!!! Get ready for lots of food, because that’s what I do when I am excite!!!!!!! She and several of her kids are staying the weekend, and we are also having lunch tomorrow with a priest who is passing through on his way home from seeing the pope. I hope the hummingbirds behave themselves. 

And don’t forget to tell me about your homemade ice cream! I want to make ridiculous delicious flavors. We still have a few weeks of vacation left, and we are most definitely open to all kinds of ideas.

White Lady From NH's Guacamole

Ingredients

  • 4 avocados
  • 1 medium tomato, diced
  • 1 medium jalapeno, minced
  • 1/2 cup cilantro, chopped roughly
  • 1 Tbsp minced garlic
  • 2 limes juiced
  • 1 tsp chili powder
  • salt and pepper
  • 1/2 red onion, diced

Instructions

  1. Peel avocados. Mash two and dice two. 

  2. Mix together with rest of ingredients and add seasonings.

  3. Cover tightly, as it becomes discolored quickly. 

 

 

Carnitas (very slightly altered from John Herreid's recipe)

Ingredients

  • large hunk pork (butt or shoulder, but can get away with loin)
  • 2 oranges, quartered
  • 2-3 cinnamon sticks
  • 4-5 bay leaves
  • salt, pepper, oregano
  • 1 cup oil
  • 1 can Coke

Instructions

  1. Cut the pork into chunks and season them heavily with salt, pepper, and oregano.

  2. Put them in a heavy pot with the cup of oil, the Coke, the quartered orange, cinnamon sticks, and bay leaves

  3. Simmer, uncovered, for at least two hours

  4. Remove the orange peels, cinnamon sticks, and bay leaves

  5. Turn up the heat and continue cooking the meat until it darkens and becomes very tender and crisp on the outside

  6. Remove the meat and shred it. Serve on tortillas.

What’s for supper? Vol. 298: Pack of goons

It’s summer! Today is officially the first full day of summer vacation. The feeling I felt when I turned off the alarm before going to bed last night . . . well, it was a good feeling. 

We had a pretty hectic (although not as hectic as last week, which was HECCIN hectic) final week of school, with a field day, a birthday party invite, a trip to Six Flags, a graduation, and then a half day with a beach trip, so if you’re looking for elaborate recipes, turn back! We had a few decent warm-weather meals, though. Here’s what we had:

SATURDAY
Baseball!

Damien took the kids to a colleague summer league baseball game

where I believe they had burgers, fries, popcorn, and Crackerjacks (not to mention balloon animals, glitter tattoos, slime with little treasures in it, pencils, stickers, and so on!).  Everyone at home (including me) just scrounged for dinner. I think I had restaurant leftovers. And very good they are, restaurant leftovers.

SUNDAY
Pizza

I spent most of Sunday decolonizing the front yard. There are two or three rhododendrons that have slowly been getting swallowed up by invasive oriental bittersweet, and I worry about it every time I see it, which is 426 times a day. So I finally snipped and chopped and dug and tore it all up, and the paid the girls to carry it all away on tarps and dump it in a part of the property I don’t care about. Gonna have to do it all again in a month or so, but the rhododendrons are looking around blearily, blinking in the sunlight, straightening their backs, and even gingerly putting out some new leaves at this late date, so I feel pretty good. 

Damien made some gorgeous pizzas while I worked. One pepperoni, one olive, one sausage and mushroom

and one fennel, onion, feta, and anchovy

If I remember correctly. Magnificent.

MONDAY
Strawberry chicken salad

One of my favorites. I broiled the chicken with olive oil, salt, pepper, and garlic powder, then cut it in to chunks. Served over mixed greens with toasted almonds, feta cheese, diced red onion, and sliced strawberries. 

I bought a special strawberry poppyseed dressing, but nobody could open the bottle, so I just had wine vinegar. 

TUESDAY
Chicken “enchilada” “bowls”

Some people start out with a vague idea for a meal and then, under the wizardry of their expert, uh, spatula, it blossoms into something ingeniously delectable. (I deliberately said “blossoms” even though we’re talking about food because that’s just how magical these people are.)
I, on the other hand, groaningly open up the supermarket website, see that chicken is on sale, and say to myself, “So . . . I guess. . . chicken, um, um, um . . . .chicken enchiladuuuuuhhhhhhhh . . .. . uh, chicken enchilada BOWL!” And I write that down, because it sounds like a thing. 

Then actual dinner time comes around, and I have nooo idea. I ended up de-boning some chicken breast and pan frying it in olive oil with lots of chili powder, cumin, and salt, and then kind of squonching it with a wooden spoon. So far so good. Then I diced up a shit ton of onions and fried them in the chicken pan. Also fine.

Then I got involved in this project where I am attaching hardware cloth to the inside of a garbage enclosure I built out of pallets to keep the raccoons away, and I was getting all sweaty, and there were a lot of flies, and I ran out of nails, and some of that wood is really hard, and I was thinking about the price of heating oil, and how my metabolism is changing, and other cheerful thoughts, and next thing you know, it was after 5:00. So I zip-zip made a pot of rice, re-heated the chicken and onions, opened up a couple of cans of tomatoes, found some sour cream that wasn’t frozen, dug out some bags of shredded cheese, chopped up some cilantro, and hurled it all in the direction of the dining room table.

It was then that I realized I had never even taken the cans of enchilada sauce out of the cabinet, much less combined the sauce with the chicken in any way. Hence: “enchilada” “bowls.”

My husband complimented this meal so repeatedly and earnestly that I’m afraid it must have been pretty bad. I was hungry, though (see: garbage enclosure raccoon pallets hammering), so it was fine. Kinda salty, though. 

WEDNESDAY
8th grade graduation!

Kids at home had chicken nuggets in the shape of dinosaurs, and Damien and Lucy and I went to her 8th grade graduation, and then to Local Burger

which is as advertised. They certainly give you plenty of fries. We ate outside and saw a pretty good dog show on the sidewalk.

We also had ice cream at a place I suggested, which I variously called Boondoggle’s, Hasenpfeffer’s,  Hammacher Schlemmer, and Hamantaschen before they acknowledged they knew I was talking about Humdinger’s. I guess Boondoggle’s was semantically the closest, but it wasn’t very close. I think all ice cream places should just be called “That Ice Cream Place, You Know, The One With the Wooden Horse” or “That Ice Cream Place Where We Hit That Crazy Lady’s Car.” Just for clarity. My brain is not getting any more elastic, here. 

And so now we have SEVEN children who are high school aged or higher. Good grief.  When Irene was five, she told me, “You know, you go into my kindergarten cwass and fink, ‘What a wovewy bunch of kids.’ But you get to know them better, and they’re just a big pack of goons.”

 
I think about that a lot. Just a big pack of goons, all the way down. 
 

THURSDAY
Burgers, chips, carrots

Damien took the pack of goons to the beach and then made supper.

I, on the other hand, couldn’t even figure out how to make the photo above into a gif without exceeding the upload size of this site. I honestly don’t even know what it is I do around here. Just look pretty, I guess. 

FRIDAY
Spaghetti?

Damien is making supper. I must go curl my eyelashes now.

What’s for supper? Vol. 173: The pineapple gets the works

Today, I bought dental insurance. That has nothing to do with what’s for supper. I just wanted to tell someone. I’m pretty excited, as this is basically me and Damien:

Why dental heath is not included in regular health, I’ll never know. I guess it’s because teeth are just inside your head and your skull, so how important could they be. Anyway. Onward! 

SATURDAY
Regular tacos

This is my meal when I’m feeling merciful toward the kids. No fermented vegetables, no sprouts, no seasonings with diacritical marks in their names. Just ground beef with orange powder from a little packet, sour cream, salsa from a jar, and shredded cheddar cheese. Completely unchallenging food has its charms.

I had to put greens on mine because I am a mom and that’s the rule.

SUNDAY
Spiedies, raw peppers, blueberry tart

This recipe is really, really good if you have the time to zest lemons and chop fresh mint and such, marinate the meat overnight, skewer it, and cook it over the coals. It’s still quite nice if you just slosh in a bunch of stuff, chop some cheap pork into chunks, let it marinate for a few hours, and shove it under a hot broiler.

Serve the meat on toasted rolls with a lot of mayo. It comes out tender, juice, and a little spicy. 

The original recipe is a NYT one which is currently behind a paywall. The quickie one I threw together was olive oil, lemon juice, red wine vinegar, kosher salt, oregano, crushed garlic, red pepper flakes. Basically Italian dressing but with extra lemon juice and red pepper flakes. 

For dessert, Clara made a blueberry tart. Every single last damn time I go to write “tart,” I type “tard” first. I choose to believe this is because I have watched so much Dr. Who, and not because I don’t deserve to live in the 21st century. Anyway, here’s the picture.

If you zoom in, you can see that I accidentally sprinkled yarrow pollen all over it while trying to get an Instaworthy photo. If I could figure out the right SEO for this post, I could probably form a partnership with Gwyneth Paltrow and pass it off as a cure for yarrow allergies, uterine prolapse, and ennui. 

Clara and I worked on this together, and it certainly did highlight the difference between our cooking styles; it certainly did. She is more of a “wait, stop, what is seven eights of a cup times two and a half?” baker, and I’m more of a “just mash faster, no one will know” baker.

Between the two of us, we came up with something tasty, anyway, although it was reluctant to leave the pie plate. To appease the Visigoths, we chose the kind of whipped cream that comes squirting out of a can.

MONDAY
Chicken enchilada rice bowls, corn chips, pineapple

This meal looked better than it tasted. I was going for a “all the ingredients you love in Mexican food, but without a tortilla, for some reason” kind of meal. So I cooked up a pot of rice, then roasted some chicken with lots of chili lime powder. Then I cut up the chicken and cooked it again in green enchilada sauce from a can. I mixed together some black beans, chili beans, and diced tomato with chili peppers in it. We had limes, cilantro, sour cream, and shredded cheese, and corn chips.

It was. . . fine. I will just go ahead and make enchiladas next time. 

The exciting part was I finally bought a pineapple corer from Aldi for like $3, and it was so cool! I thought it would just extract the core so you can peel it and get rings, but it cores and peels it, and leaves you will a continues spiral of pineapple. Corrie and I made a video, and we hope it blows your mind. 

This is my first attempt at including a food video, and I hope it’s not terrible, because people keep telling me this is the only way to make some money, and if you can’t make money sharing a video of yourself testing a $3 pineapple corer, than is this even really America? 

TUESDAY
Pizza

Tuesday was the final school concert of the year. If you wish to hear my views on school concerts, I can make that happen. This time, I dropped the kid off, nipped over to the liquor store and picked up some liquid courage in small bottles, and zipped back to my seat before the curtain. And now I have a brand new plan for school concerts.

I made a few pizzas before I left. There was a limited edition “everything dough” available, so I got some. It wasn’t everything, per se, but it certainly had poppy seeds in it.

Oh. You know about the “Make me one with everything” joke, right? This remains my favorite moment ever recorded on video. Especially the part where he leans in and goes, “Know what I mean?”

It’s so beautiful.

WEDNESDAY
Chicken burgers

What was I even doing on Wednesday? I think I was writing like a maniac while Damien brought Lucy to the pediatric endocrinologist and then rock climbing. And that’s what chicken burgers are for. 

THURSDAY
Deli sandwiches, fruit salad, chips, cookies

Actually, that was lunch. I had planned cumin chicken thighs, yogurt sauce, pita, and tabbouleh for supper, but in lieu of that, I took a nap, and everyone just ate more lunch. But what a lunch it was! One of my favorite families in the whole world, John and Aletheia Herreid and their wonderful kids were in town. The weather was great, Clara made a ton of cookies, we have a trampoline for bouncing and stream for floundering, John and my older kids swapped sketch books, Aletheia brought sunshine to the whole world as she so often does, and they brought cheese and beer and a luchador mask, and it was just swell. 

FRIDAY
Ravioli

Just frozen ravioli. Not one of my most thrilling culinary weeks, but it was a good week. And thorough.
