What’s for supper? Vol. 293: I’ll tell YOU what’s yakitori

Happy Friday! I am headed to adoration in a bit, and shall yell at Jesus about your intentions. 

Quick covid report: Everybody in the house eventually got it, except for one kid, who is either supernatural, or somehow got false negatives on a LOT of tests. The other kids only got a little bit sick, happily, and some didn’t get sick at all. They are all completely better. I’m definitely on the mend. I don’t think I even took a nap yesterday! And my splendid covid rash actually retreated a bit yesterday, rather than spreading, for the first time since it made its debut. Damien has started running again, and I have slowly, carefully started up yoga. I’m wheezy, but not horribly wheezy. Today I’m exactly three weeks out from the day I tested positive, so I guess that’s pretty normal. In conclusion, covid is stupid but not nearly as stupid as it could have been, so, Deo gratias. 

Spring has sprung for real. 

The ticks are ticking, the dog is romping, Damien is battling the pool water, and away we go. Outdoor cooking season is fully underway, happily, as you will see.

Here’s what we ate this week: 

SATURDAY
Smoked pork ribs, cole slaw, chips

Damien made three luscious racks of ribs in the smoker with a sugar rub and mustard.

It doesn’t really taste mustardy; it just has a savory tang with a little muted fireworks aftertaste, and they are incredibly juicy and flavorful. I can never tell if these “cutting up meat” pictures look amazing to other people, or just kind of grisly, but they look amazing to me.

Great meal. 

I also had the great fun of briefly meeting an old friend who was selling her wonderful prints at a local craft fair. Do check out Rabbit Dog Fine Arts on Etsy for some really striking, lively work, very very reasonably priced. I, uh, bought four prints because I couldn’t help myself.

SUNDAY
Italian sandwiches, french fries; lemon cake

Sunday was Mother’s Day, and I’m happy to report that, in a few short decades, I’ve successfully made the transition from having a painful, bitter day when I feel unappreciated and neglected, to getting showered with gifts and attention and feeling a little guilty about it. But not too guilty! 

I requested Italian sandwiches and a lemon-based dessert, both very delicious.

I do love lemon desserts. We recently saw the Great British Baking Show with the Sussex Pond Pudding, which is a pastry with a lard crust that contains butter, sugar, and an entire cooked lemon. I think I would eat that? Yeah, I’m pretty sure I would eat that. I would eat that.

I also went to Home Depot to finally get started on some gardening, finally. I am at a point in my life where, yes yes, I live in New Hampshire, but I just don’t want to dig up any more rocks, at all, ever. So that means container gardening. But I don’t just want buckets of dirt all over the place, either. But I don’t want to pay for lumber. So I wandered around in the yard with a measuring tape making vague diagrams, got to Home Depot, made a wild guess about how many cinder blocks we might need (um, 60?), loaded up as many as we could pull on a single cart, and, full of anxious foreboding about the expensive, cell-like, somehow-still-inadequate structure I was going to build, and how bad it was going to be on the car to bring it home, I went off to find a second cart, and on the way, discovered that for about the same price I could buy . . . look at this . . . four galvanized steel window wells, that are food safe because they are galvanized steel, and are already designed to be jammed into the ground.

But they turned out to be $20 each, not $10 as I originally thought, so I put the back, and felt sad about it, and looked at the cinder blocks again, but then I thought about how rotten I would feel if I came home with nothing, and I decided that not feeling that way was worth at least $30, and I would just eat the extra $10, because it was Mother’s Day. So I abandoned the cinder blocks and bought four metal thingies instead. This is how I do math. This is how I live. It’s better than digging up rocks, I guess.

The plan is make two long ovals, with a few cinder blocks stacked up between the pieces to form the long ends. I think maybe we have a few cinder blocks in our yard somewhere, left over from my last boneheaded project. Those are free, because it was last year.

Anyway, I finally got started, and that’s the main thing. And we stopped at the local nursery and bought several varieties of lettuce, some Brussels sprouts, and some celery, which are all plants I can leave outside even if it gets cold again, which it will. We’re not doing seeds this year. We’re just not.

MONDAY
Cuban sandwiches, chips, carrots and dip; birthday cake

Monday we celebrated Moe’s birthday. He requested Cuban sandwiches on ciabatta rolls. I started the pork a bit late, and ended up just roasting it in the oven covered with tinfoil and with lots of salt and pepper, garlic powder, oregano, and cumin, and doused with cider vinegar, and it was fine, if a tiny bit bland.

So, bread, mustard, pickles, Swiss cheese, pork, ham, more cheese,

and fried in an alarming amount of butter.

I pressed the heck out of the sandwiches with in iron frying pan as they fried,

and then put them in a warm oven to seal the deal, by which I mean the cheese.

This picture makes me laugh. This sandwich looks like it has its mouth full. Happy murfmay, Mofef! That is what the sandwich says.

He requested a whale shark cake,

and maybe if I had had more time time to prepare, it would have come out better, but maybe not. 

TUESDAY
Meatloaf, baked potatoes, salad

The secret of my meatloaf is I don’t make it very often, so the kids think it’s a treat. And it’s really pretty good; it’s just that there’s only a certain amount of good that meatloaf can be. My meatloaf has red wine, Worcestershire sauce, and fried onions in it. I always think I should make a gravy to go along with it, but it’s really fine as is. It’s meatloaf.

Certainly looked portentous coming out of the oven. I’m pretty happy the sun is up for dinner again. 

We had baked potatoes and salad. Did I already say that? I think I already said that. Well, here’s proof. 

WEDNESDAY
Yakitori chicken, rice, sesame string beans

Now this was a tasty meal. I made the sauce and Damien cooked the chicken on the grill. He used half the sauce to baste the chicken as he cooked it,

and then we served the other half for dipping. The meat comes out sweet, tangy, and gingery, and wonderfully glossy. 

You don’t have to marinate this meat; it gets plenty of flavor from basting. I made a triple recipe of this sauce, but I massively increased the amount of fresh garlic and ginger, and I cooked it considerably longer than she said. I cooked it through the entire third movement of Mendellsohn’s “Reformation” symphony before it thickened up. 

We used skinless, boneless chicken thighs but did not bother cutting them and putting them on skewers, but just sort of unfurled them and grilled them whole. They were wonderful that way, but technically they are not yakitori, which really is supposed to be on skewers. Although [snort, snort] technically “yaki” means “roast” and “tori” means “bird,” so I guess it depends if you want to be pedantic, or just, you know, eat the yummy chicken. 

Everyone was very enthusiastic about this meal. Served with sesame seeds and chopped scallions and more sauce, as you can see, which had a sharper, brighter flavor as a dipping sauce than it did when basted onto the chicken. Gosh, it was so good. I wish I had some right now, but it’s Friday, so I’m having some fwiggin yogurt and hummus and carrots. 

THURSDAY
Chicken burgers, cheezy weezies

Everyone was also very enthusiastic about this meal, served with mayonnaise. And buns from Aldi. 

FRIDAY
Seafood lo mein

We haven’t had lo mein for a while. I just bought some linguine or fettuccine, I forget which, for the noodles. Basically you just need something flat and slurpy that will pick up the tasty sauce and make a happy home for whatever you want to add in.

I often put in sugar snap peas, asparagus, or shrimp.

This time, I bought a little bag of mixed seafood from Aldi, which seems to have shrimp, scallops, some kind of shellfish, and misc. I’m a little concerned about the various cooking times it will need, but only a little concerned. 

Okay, that’s it! Here’s some recipe cards for yez. Do try the yakitori (or whatever) sauce. 

Smoked pork ribs with mustard rub

Ingredients

  • 2 racks pork ribs

Pork rub

  • 1-1/2 cups brown sugar
  • 1/2 cup white sugar
  • 2 Tbsp chili powder
  • 2 Tbsp garlic powder
  • 2 Tbsp cumin
  • 2 Tbsp paprika
  • Yellow mustard
  • salt and pepper

Instructions

  1. The night before or several hours before dinner, mix together the rub spices. 



  2. Spread yellow mustard all over the rack of ribs and apply the rub. Cover and refrigerate. Let it come back to room temp before cooking.

  3. Light the fire and let it die down. Put the meat on the grill off to the side, where it will get indirect heat. Put the cover down and let it cook at least four hours. 

  4. Add salt and pepper, then separate the ribs and enjoy. 

Meatloaf (actually two giant meatloaves)

Ingredients

  • 5 lbs ground beef
  • 2 lbs ground turkey
  • 8 eggs
  • 4 cups breadcrumbs
  • 3/4 cup milk OR red wine
  • 1/4 cup Worcestershire sauce

plenty of salt, pepper, garlic powder or fresh garlic, onion powder, fresh parsley, etc.

  • ketchup for the top
  • 2 onions diced and fried (optional)

Instructions

  1. Preheat oven to 450

  2. Mix all meat, eggs, milk, breadcrumbs, and seasonings together with your hands until well blended.

  3. Form meat into two oblong loaves on pan with drainage

  4. Squirt ketchup all over the outside of the loaves and spread to cover with spatula. Don't pretend you're too good for this. It's delicious. 

  5. Bake for an hour or so, until meat is cooked all the way through. Slice and serve. 

basic lo mein

Ingredients

for the sauce

  • 1 cup soy sauce
  • 5 tsp sesame oil
  • 5 tsp sugar

for the rest

  • 32 oz uncooked noodles
  • sesame oil for cooking
  • add-ins (vegetables sliced thin or chopped small, shrimp, chicken, etc.)
  • 2/3 cup rice vinegar (or mirin, which will make it sweeter)

Instructions

  1. Mix together the sauce ingredients and set aside.

  2. Boil the noodles until slightly underdone. Drain and set aside.

  3. Heat up a pan, add some sesame oil for cooking, and quickly cook your vegetables or whatever add-ins you have chosen.

  4. Add the mirin to the pan and deglaze it.

  5. Add the cooked noodles in, and stir to combine. Add the sauce and stir to combine.

 

What’s for supper? Vol. 281: Wellness with yogurt sauce

Another week, another vow to write more, another week in which I did not write more. It’s just that I only have a very few things to say, and those things are paralyzingly overwhelming, that’s all. Good thing there’s food! Here’s what we had this week:

SATURDAY
Tacos, corn chips

Just regular tacos. Actually slightly irregular, because it was a pre-packaged seasoning kind of day, but all they had was fajita seasoning. They were fine.

I had cilantro and jarred salsa verde with mine, and they were fine, mild little tacos.

SUNDAY
Spaghetti with Marcella Hazan’s sauce, sausages, garlic bread

Damien made dinner again. Yummy.

I skipped the sausage either because I was virtuously counting and limiting calories and decided to forego sausage, or because I had already consumed a monstrous number of calories that day and didn’t deserve sausage, I forget which. MONDAY
Cuban sandwiches

Slowly working my way through meals that people have been begging for. Cuban sandwiches are supposed to be made on Cuban bread, which is made with lard. I just went with sourdough bread because these are gigantic, unwieldy sandwiches, and sourdough holds up well. 

The essential ingredients are: Pork, ham, pickles, swiss cheese, and mustard, and it’s grilled in butter. There are all kinds of scrumptious ways to prepare the pork, but I was in a hurry, so I just chunked a boneless loin in a pan in the oven with some cider vinegar and salt and pepper, covered it with tin foil, and cooked it at 325 for 40 minutes or so. 

Then, after I sliced it up and put it on the sandwich, I sprinkled each piece with cumin, oregano, and garlic powder, and more salt and pepper before frying. Kind of a backasswards way to do it, but sometimes I have to prep dinner in bits and pieces throughout the day, so that’s how it went. 

I made sure there was cheese on both sides of the sandwich, to glue it together, and used plenty of butter to grill it. And my dears, this is one tasty sandwich. 

TUESDAY
Chicken caesar salad

Another hurry-hurry day. Damien roasted the chicken. I shredded some fresh parmesan and made some croutons from stale hamburger buns, and then somewhat burned them, which was sad. Just bottled dressing. An okayish meal, but everyone was hungry, so that helped.

I do have a kickass recipe for caesar salad dressing, if you feel like making it from scratch, and you don’t care about doing it “the” “right” “way.”

It tastes good to me, and a few teaspoons will wake your face head up. Last summer, I made it with local raw duck eggs and it was insane. 

WEDNESDAY
Quesadillas ala leftovers

We had lots of taco/fajita meat left from taco/fajita night, plus chicken left from chicken caesar salad night, so I sliced up some cheddar cheese and away we went. I also chopped up some cilantro and opened a jar of jalapeños, and Benny went around taking orders. 

I had chicken, jalapeños, and cilantro in mine.

Nothing to report. I managed not to burn anything. There was one quesadilla that had some cheese that just wouldn’t melt. I fried and fried and fried it, but it just wouldn’t melt. I don’t know what the hell was up with that. I just thought I’d let you know. 

THURSDAY
Chicken shawarma, fried eggplant

For the first time in my life, I made chicken shawarma, and didn’t really feel like eating it. The reason was because I also made some fried eggplant, and could not pry myself away from the pan.

so there is more batter coverage, it’s a tad spicier, and I increased both the water and the baking powder. They turned out SO GOOD.

A lovely crisp outside with a little bit of lofty batter inside, and the eggplant is almost creamy, with that thin sharp ribbon of skin, and a little shpronkle of kosher salt that nestles in the nooks and crannies, and then a very subtle spicy aftertaste. 

I ate some shawarma just for propriety’s sake, but I was totally in it for the eggplant. I didn’t even bother with any yogurt sauce (although I made plenty)

I used to add red onions in with the chicken when I marinated it, but they got a little mushy, so I started holding them back until it was time to cook. This time I forgot to put them in, so I sprinkled them over the top of the chicken halfway through cooking it.

I am here to tell you it doesn’t matter. It’s all good. It’s shawarma. 

FRIDAY
Tuna boats and hot pretzels for the kids, supermarket sushi for adults

Gotta have some fun. 

Marcella Hazan's tomato sauce

We made a quadruple recipe of this for twelve people. 

Keyword Marcella Hazan, pasta, spaghetti, tomatoes

Ingredients

  • 28 oz can crushed tomatoes or whole tomatoes, broken up
  • 1 onion peeled and cut in half
  • salt to taste
  • 5 Tbsp butter

Instructions

  1. Put all ingredients in a heavy pot.

  2. Simmer at least 90 minutes. 

  3. Take out the onions.

  4. I'm freaking serious, that's it!

caesar salad dressing

Ingredients

  • 1 cup vegetable oil
  • 6 cloves garlic, minced
  • 12 anchovy fillets, chopped
  • 1 Tbsp kosher salt
  • 1/2 cup fresh lemon juice (about two large lemons' worth)
  • 1 Tbsp mustard
  • 4 raw egg yolks, beaten
  • 3/4 cup finely grated parmesan

Instructions

  1. Just mix it all together, you coward.

Chicken shawarma

Ingredients

  • 8 lbs boned, skinned chicken thighs
  • 4-5 red onions
  • 1.5 cups lemon juice
  • 2 cups olive oil
  • 4 tsp kosher salt
  • 2 Tbs, 2 tsp pepper
  • 2 Tbs, 2 tsp cumin
  • 1 Tbsp red pepper flakes
  • 1 tsp cinnamon
  • 1 entire head garlic, crushed

Instructions

  1. Mix marinade ingredients together, then add chicken. Put in ziplock bag and let marinate several hours or overnight.

  2. Preheat the oven to 425.

  3. Grease a shallow pan. Take the chicken out of the marinade and spread it in a single layer on the pan, and top with the onions (sliced or quartered). Cook for 45 minutes or more. 

  4. Chop up the chicken a bit, if you like, and finish cooking it so it crisps up a bit more.

  5. Serve chicken and onions with pita bread triangles, cucumbers, tomatoes, assorted olives, feta cheese, fresh parsley, pomegranates or grapes, fried eggplant, and yogurt sauce.

 

Yogurt sauce

Ingredients

  • 32 oz full fat Greek yogurt
  • 5 cloves garlic, crushed
  • 1/4 cup lemon juice
  • 3 Tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp pepper
  • fresh parsley or dill, chopped (optional)

Instructions

  1. Mix all ingredients together. Use for spreading on grilled meats, dipping pita or vegetables, etc. 

 

Fried eggplant

You can salt the eggplant slices many hours ahead of time, even overnight, to dry them before frying.

Ingredients

  • 3 medium eggplants
  • salt for drying out the eggplant

veg oil for frying

3 cups flour

  • 1 tsp baking powder
  • 2 tsp cumin
  • 2 tsp paprika
  • 2 tsp red pepper flakes
  • 3+ cups water
  • 1 Tbsp veg oil
  • optional: kosher salt for sprinkling

Instructions

  1. Cut the ends off the eggplant and slice it into one-inch slices.
    Salt them thoroughly on both sides and lay on paper towels on a tray (layering if necessary). Let sit for half an hour (or as long as overnight) to draw out some of the moisture. 

  2. Mix flour and seasonings in a bowl, add the water and teaspoon of oil, and beat into a batter. Preheat oven for warming. 

  3. Put oil in heavy pan and heat until it's hot but not smoking. Prepare a tray with paper towels.

  4. Dredge the eggplant slices through the batter on both sides, scraping off excess if necessary, and carefully lay them in the hot oil, and fry until crisp, turning once. Fry in batches, giving them plenty of room to fry.

  5. Remove eggplant slices to tray with paper towels and sprinkle with kosher salt if you like. You can keep them warm in the oven for a short time.  

  6. Serve with yogurt sauce or marinara sauce.

What’s for supper? Vol. 103: Kitten pie, Mr. Tweedy

Sad story, short version: I was sitting in the bathroom, half-watching Corrie paddle around in the tub, half-writing something or other. Enter the kitten, who strolls in placidly, sniffs at my feet, checks out a little toothpaste smear on the cabinet, and then propels himself into my lap with the force of a rocket and anchors himself to my thigh with his claws. I jumped up, knocked over my seltzer, and killed my laptop dead dead dead.

I tried putting it in rice for 48 hours. No dice. Maybe I should have put it in dice.

Here is the kitten, by the way. I KNOW. He’s very cute.

We’ll see, cat. We’ll see.

We’re working on getting a replacement computer. We have probably fourteen internet-enabled devices in this house, but I can’t get any of them to work well with WordPress or uploading images, and the hilarious podcast we recorded, using a new program on my husband’s notebook? It turned out it wasn’t recording. I’m setting up as much as I can on the weekend, and hoping it won’t be long before I get a replacement.

But food still fooded! Here is what we ate last week:

FRIDAY
Birthday party!

I think we probably had pizza. This was so, so long ago. I made my first and last gorgon cake

and magically transformed the dining room into ancient Macedonia by . . . tacking some leaves up.

Look, it was short notice. It definitely looked different from how it usually looks.

Fish tacos

I forgot to buy limes, and I did buy cilantro, but I forgot to serve it. Oh well. Batter fried fish fillets on flour tortillas with salsa, sour cream, shredded cabbage, and sliced avocado. Still quite good.

SUNDAY
Italian Food in the Middle of October Day!

Suppli, pork ragù with fettucine, bruschetta with basil, tomatoes, and provolone, and many kinds of olives; garlic bread, pears with prosciutto, and cannoli with shaved chocolate and cherries, and lemon ices.

We briefly considered salad, but only briefly.

My husband used the fabulous Deadspin recipe for pork ragù.

This has milk in it, not tons of tomato, surprising carrots, and a kind of meaty fluffiness that you really have to experience to understand.

Here is my suppli recipe, which I have updated to include information on how many suppli you will actually end up with. I made thirty suppli the size of goose eggs, and we froze a dozen of them.

If our family keeps shrinking like this, we won’t even be able to drain an entire lake dry by each taking one little lap of water with our little pink tongues. Mew mew!

Well, they turned out quite lovely. I didn’t crowd them in the pot or rush to take them out, so they held their shape. Refrigerating the risotto is vital.

Nice and melty on the inside? This is why they’re sometimes called “suppli al telefono”: because the cheese looks like telephone wires.

I have been to Italy, and their telephone wires look very much like that.

I didn’t even try to find empty cannoli shells this year. I got some of those anise pizzelle waffle cookies and topped them with cheese filling, then shaved chocolate and a maraschino cherry. I used about 32 oz. of whole fat ricotta cheese, maybe 3/4 cup of powdered sugar, and a tablespoon or more of vanilla extract. You don’t want it too sweet.

Well, the food was fantastic. As you may have noticed, the photos get worse as the food gets better. So we’ll close with a day-after shot of the cat eating the cannoli my husband was saving for later.

Hot dogs? I think?

I think I put blue cheese and buffalo sauce on mine. I can never decide if it’s pretentious to write “bleu cheese” instead of “blue cheese,” so I alternate.

TUESDAY
Meatloaf, roast red potatoes, salad

I used dear old Fannie Farmer’s meatloaf recipe, and then vandalized the loaves with a lot of ketchup. Nobody wants to admit that they like eating chewy, hot ketchup varnish, but they do, they do.

I put things in the potatoes. Come on, you know how to make potatoes. Oil and spices, hot. Kinda burnt, oh well.

WEDNESDAY
Cuban sandwiches, cheez puffs

They lost the valve to my Instant Pot again, so I was reduced to cooking the pork in the oven like an animal. I forgot to get some of that nice Mojo marinade, too, so I just put some frickin spices on it and put in a shallow pan, fat up, at 425 for maybe 35 minutes.

Then I ate all the fat. You think this is disgusting, and I’m not saying it wasn’t, but it was also crisp, golden, savory, and sizzling, and some people’s destinies look like that.

I had some amazing sourdough bread from Aldi, and made ten enormous sandwiches with mustard, Swiss cheese top and bottom, sliced pork (I cooked it in the morning, then sliced and heated it in the microwave in the evening), sliced ham, and sliced pickles.This is one of those sandwiches that you lean into while cooking it, as well as while eating it. I put them in the oven for a bit to make sure the cheese was all melted.

It was.

THURSDAY
Spicy pork with vegetables and rice

I had a little gochujang in the house, so I mixed it up with the other stuff I happened to have, which was a little soy sauce, a little sugar, and a lot of maple syrup. And garlic, of course. I will let myself run out of arms and legs before I run out of garlic.

I cut the pork into little nuggets and let it marinate all day, then cooked it up in a shallow pan with the sauce. I heated up frozen veg in the microwave and added that to the meat, and served it over rice. I don’t know why I’m explaining all this. You cook the thing. You eat the thing. It was fine.

Penne with jarred sauce

My husband came home late and lightly sauteed the cooked penne in a pan with olive oil and minced garlic, and added just a tiny bit of sauce, and it looked fantastic. Gonna try it that way next time.

SATURDAY
Fancied-up chicken burgers, chips

The chicken burgers from Aldi are pretty good, and taste like actual chicken. We dressed them up with bacon, honey mustard, and in-sandwich onion rings. Not bad atall. Probably didn’t need to serve chips alongside a sandwich that actually contained onion rings, but the freedom to make this kind of decision is what being an adult is all about. That and a little sex, and some booze, lots of interior pep talks, frightening conversations about major appliances, and you’re the only one who can change the toilet paper. And coffee.

SUNDAY
Pork Bánh mì

We’ve made steak bánh mì a few times, and it is delightful, but expensive. Pork, however, is cheap cheap cheap. So I got me a half loin (about four pounds), sliced it thin, and started it marinating in the morning using this recipe from Serious Eats.
I also sliced several carrots into thin coins and set them to quickle-pickle in wine vinegar and some sugar.

In the evening, I spread the pork slices in a single layer on broiler pans and put them right up under a hot broiler, turning once. We toasted some rolls and piled them up with the pork, pickled carrots, sliced cucumbers, jalapeno slices from a jar, lots of chopped cilantro, and plenty of mayo. (You can stir some sriracha into the mayo, but there’s plenty of flavor without the extra spice, and I appreciated a little creamy coolness.)

Verdict: It smelled completely revolting as it cooked, because fish sauce; but the taste was superb. The pork picked up much more of the salty, tangy fish flavor than the beef. Put it together with the sweet, crisp carrots and the cool cukes and cilantro and the zippy jalapenos, and it was just a swingin’ party in your mouth. Ha cha cha!

MONDAY
BBQ chicken thighs and sausages, fruit salad, spicy grilled corn, S’mores

My husband cooked the meat outside, in the drizzle, in air so cold we could see our breath. Stupid New England. Here’s how he describes the rub he made for the meat:
Lots of kosher salt, like unhealthy amount, lots of brown sugar and white sugar, generous amounts of garlic powder, little bit of cumin, paprika, and chili powder. Works for pork, too.

I thought it was fantastic, but he is researching different chicken-cooking methods with more indirect heat. I happen to like it charred, but I will probably force myself to eat the next meal he cooks, too, because I’m a good and generous wife that way.

It’s still a bit early for really good corn, but check it out! You grill it, roll it in butter, sprinkle on a little parmesan cheese and paprika, then squeeze on some lime juice.

So nice.

Some of the kids had read about S’mores and really wanted to make them (even though they shivered as they toasted their marshmallows). S’mores are completely lost on me. They are fine, I guess. I feel resistance toward foods that don’t have a food for the noun. Corrie approved.

Nothing to report, except that I finally smartened up and bought two tubs of sour cream, one for the family and one for Corrie.

WEDNESDAY
Cuban sandwiches, cucumber avocado salad

It Instant Pot time! (affiliate link) I’ve made Cuban sandwiches before, using oven-roasted pork that I marinated for several hours ahead of time. This time, I took a four-pound half loin and threw it in the IP with a bottle of Goya Mojo Criollo marinade. I don’t quite trust the “meat” button yet, so I set it to manual high pressure for 45 minutes. Perfect. It was very moist but cooked all the way through, and the marinade had permeated the meat. No yummy crust, of course, but it was fast and easy, didn’t heat up the kitchen (yeah, it suddenly got hot out. Stupid New England), and clean-up was a snap. I let it stay on “warm” for several hours until I was ready to make the sandwiches.

I sliced the meat up and put it on ciabatta with deli ham, pickles sliced into long flats, swiss cheese, and mustard. Grilled the sandwiches in butter, then pressed them hard on both sides with a glass pie plate. They were excellent and insanely filling. Here is a terrible picture:

I think authentic Cuban sandwiches are supposed to be made with spongier bread, and probably heaped ridiculously high with meat and cheese but I had zero complaints with our results.

The side was something I took from The New York Times Cooking. I took it, and then I made it slimy somehow, I dunno. My version had red onion, avocado, cucumber, cherry tomatoes, leftover grilled corn, fresh lime juice, olive oil, salt and pepper, and feta, and I ended up just mixing everything together, rather than spooning things over other things.

It was good, but it tasted like guacamole that left home on a quest to become pasta salad, but couldn’t find any pasta, so went back home, only to discover that the guacamole family no longer accepted it. Probably won’t bother with this again. Stupid New York Times.

Pizza

Didn’t take pictures of pizza. Husband did snap a photo of the river as we slogged by on our evening run.

Stupid New England. I mean, wait! Lovely, gorgeous New England, my love! Feeling better and being more in shape are fine incentives, but really I’m in it for the pretty views and the husband time.

What’s for supper? Vol. 60: A good week, and thorough

Hooray for Friday! It only took eleven years getting here. Here’s what we had this week:

SATURDAY
Deli sandwiches for 9 kids at home; a variety of foods for parents and Corrie on the road

On Saturday, we were at the excellent Bridgeport Catholic Women’s Conference, being well-fed spiritually and foodily. Note to other conference organizers: they offered a nice, long breakfast, and then snacks and drinks were available until lunch, and then snacks were available until dinner. That is how you have a women’s conference.

We weren’t able to stay to hear the third speaker, and Corrie was so buggy that I only heard part of the second speaker, Damon Owens. I went to chat with him afterwards, and said how disappointed I was not to hear the final third of his speech. He said, “Oh, it was like the first two thirds, except louder.” Heh. (Great speaker, by the way. Don’t miss an opportunity to hear him.)

On the way home, we stopped at a restaurant which always intrigued me, because it’s called “The Marina On the Water.” It’s a good name. And thorough! Do they also serve bread rolls, and will the waiter see you to a chair seat in the sitting area?

It turns out that the waitresses were friendly, the water view was spectacular, the food was mediocre, and it cost and arm and a leg and another arm. And Corrie spent most of the time on the foyer and bathroom floor, screaming “NOT NOT NOT, MAMA!” and pouring water into her lap. Here she is in happier times (right after and right before screaming):

I think my face conveys something of how much we enjoyed that meal. Anyway, we both ordered grilled swordfish sandwiches with pesto mayo and sweet peppers. I had coleslaw. The overwhelming sensation conveyed by every aspect of our food was: Do not forget that you are in Vermont.

Let’s just say our taste buds not only refused to tingle, they all yawned elaborately and muttered something about turning in early.


SUNDAY
Pan-seared salmon burgers with pesto mayo; sweet potato fries; cole slaw

Yep, I decided to redeem the previous day’s meal, and I succeeded. I bought a dozen of those individually-wrapped, frozen salmon steaks from Aldi (they are wild-caught) and pan-fried them according to this method from The Kitchn. They were swell. Ooh, that crisp seared skin.

I mixed tons of bottled pesto into some mayonnaise, and served it on toasted rolls with spinach.

My daughter made the coleslaw, nice and tart. Her recipe:

1 cup Mayo
1 cup White vinegar
Half cup Lemon juice
Half cup Sugar
1 head cabbage
A few carrots
4-5 Radishes

Mix wet ingredients.  Add wet to shredded cabbage.  Add sugar and stir.  Grate carrots and radishes and stir in.

Very satisfying meal.


MONDAY
Hamburgers, chips, salad

I have no memory of Monday. On Mondays, my world is restricted to whatever I can see through a clean spot in the grimy windshield of the van.


TUESDAY
Sausage, pasta, and onions with meat sauce and parmesan

As usual, I made enough to feed a battalion of marines. As usual, they ate enough to make an almost-visible dent. I don’t even know why I made this dish.


WEDNESDAY
Grilled Cuban sandwiches

This has been on my list forever. I’ve never had a Cuban sandwich, so I guess we can call this a New England version. First I roasted a pork using this simple, tasty method from Cook The Story (which I will use again. It turned out moist and flavorful, and would have been great as a stand-alone dish.

I used thick sourdough bread, and assembled the sandwiches in this order:
Buttered sourdough bread
Mustard
Swiss cheese
Sliced ham
Roast pork
Pickled peppers
More Ham
More Swiss Cheese
Mustard
Buttered Sourdough bread

I grilled them on both sides, then pressed them hard with cans and grilled them again.

I like how the recipe suggests using a kitchen press, or a brick. I think they are trying to sound tough. “Yeahhh, just grab one’a dem bricks you got lyin’ around yer kitchen, ya know? Or brass knuckles, yeah, dat would do da trick, too.”


THURSDAY
Chicken nuggets, carrots and cukes, hardboiled eggs

I put this one the table and then went to go close my eyes for a minute for three hours. Then I got up, had a mug of wine, and went back to sleep for another eight hours. Don’t hate me. I’m so far behind on sleep, I’d have to spend 23 hours a day sleeping and live to be 125 years old before I got caught up.


FRIDAY
Quesadillas, tortilla chips and salsa, mangoes

That’s the plan, anyway.
