What’s for supper? Vol. 384: One caprese summer (relics notwithstanding)

Happy Friday! I had a week that was just plain weird.

Let me tell you about it, and also what we ate. 

SATURDAY
Nachos

Saturday I was still in the grips of whatever it was that made food into my mortal enemy last week. I went grocery shopping verrrrry slowly and cautiously, and then came home and made nachos, but did not take a photo, because I can buy food and make food, and even eat a little bit of food, but apparently pointing a camera at it is a bridge too far. 

My nachos are not terribly inspiring anyway. I just cook and season some ground beef and sprinkle it over tortilla chips, throw some jalapeños over that, and cover it with shredded cheese, then heat it up, and serve it with sour cream and salsa. It’s one of those dishes I don’t really want to start making better, because then people will expect it, and I need to preserve some quick and brainless meal preps for myself.

In the afternoon, I rested for a bit and then to the flower farm up at the top of the hill, because the rabbits gobbled my beloved poppies up, and I was just feeling tragic about my garden and its stubs. It had been murderously hot and and humid for several days, but it suddenly turned cloudy and breezy, and flower son stood gazing at the horizon, and said, “. . . In about five minutes.” And then it started to sprinkle.

So I scurried around grabbing what I came for (perennial dianthus, tickweed, and some eggplants), but not fast enough. SUCH A DOWNPOUR. I briefly turned into Fielding Mellish

But I got my flars!

SUNDAY
Grab whatever

Sunday was a little rough. I ended up having to leave Mass early and go sit in the car because I was feeling so blehhhhh. Not too bleh to take a selfie because my hair was having a nice day, though. 

Clara and Damien went to a Bonny Light Horsemen concert, and a bunch of the other kids were doing this and that, so I couldn’t work up the enthusiasm to cook anything for the small group that was left. I may have had a bagel, but I truly don’t remember.

MONDAY
Steak and peach salad

Monday I was feeling quite a bit better, and agreed to take the kids to the library. Then on the way home, I remembered we needed duck food; and then the exit from the feed store is a weird traffic spot where it’s hard to turn left, so I decided to go right and take the long way home, and as long as we were on that road, I asked the kids if they wanted to hit the Salvation Army. 

And that is how I found the first class relics of Saint Peter, Apostle, and St. Helena, Empress. 

I am not kidding. They were in the jewelry case for $3 each and I was like, “oh, um, could I see those little round pieces, please?” and then I was like, “um, oh, I will take them, please.” I zipped them into my Vera Bradley wallet, because I didn’t know what else to do. And that is where they still are, actually. 

I didn’t have my reading glasses onat the store, so I couldn’t read the little labels until I got home. It just felt too insane to take in, and still does.

But I carefully unscrewed the backs

and saw this:

I talked to Sean Pilcher of Sacra Relics and sent some photos, and he said they are “doubtlessly authentic,” and that the wax seal inside is the seal of Giuseppe Nicolini, the bishop of Assisi who founded the Assisi Network that saved hundreds of Jews during World War II.

So. 

I have relics. Most likely.

I still have to pack them up and send them over to be cleaned and repaired, and I hope they can be documented. Pilcher said one of the major misconceptions about relics is that Catholics expect you to accept on blind faith that they are what we say they are; but actually it’s a pretty rigorous process of authentication that draws on expertise from several different fields. So we shall see!

In the mean time, it sure looks like our household picked up a couple of amazing new friends. I’m working on writing a long piece about it, and just trying to understand what it could possibly mean that I’m temporarily sharing a bedroom with some nearly 2000-year-old bone fragments of a man who was chosen by Jesus to be the rock on which the Church is built, and the woman who found the true cross. I’m open to ideas! I’m open to all kinds of things. 

My sister and her husband are making a reliquary for them, for as long as they will be in our house, and I’m waiting to hear back from my pastor about whether our parish wants and can accommodate them, and I talked further with Sean Pilcher and left some messages with Fr. Carlos Martins who hosts Treasures of the Church. My first goal is to have them as local as possible, with as much access for the faithful as possible.

I just. I don’t know. At first I was frightened and distressed, but now I am growing attached. 

Told you I was having a weird week! And yes, I did go back to the Salvation Army to see if there was . . . anything else. Which there was not, except for a silly nicknack from Target or something that looks exactly like a monstrance, except with a mirror in the middle. I talked to the manager about what I had found, and she said that, if someone drops off relics again, they will call a priest. (I was like, “So, for future reference, these are human remains. . . ” and she was like, “We can’t know everything!” and I was like “OH, I KNOW.”)

But! Relics none the less, I still needed to make supper. And this is still a food blog. So.

London broil was on sale, so I got four nice cuts. I seasoned them with salt and pepper, heated a skillet up screamingly hot and melted some butter on it, and then seared each steak for three or four minutes per side. 

Very nice. 

Some of it was a little underdone, even for us, so I threw those pieces back in the pan and finished them up while I cut up a bunch of peaches. So we had mixed greens, beef strips, peaches, crumbled goat cheese, and a sweet vinaigrette. 

Superb. I was feeling extremely depleted in general, so some lovely rare beef really hit the spot. 

TUESDAY
Corn dogs and chips

Tuesday I was feeling very much better, and RELICS NONETHELESS, I scurried around getting caught up on weeding and mulching and yard work. The grass was pretty high, and that is how I mowed right over an aerosol can of bug spray, which exploded with a bang and a cloud. No biggie, I have St. Peter and St. Helen in charge of the house now. I can run over whatever I want!

I’m just talking. I don’t know what is going on, for real. 

WEDNESDAY
Caprese pasta

Wednesday was our long-anticipated annual dumpstravaganza, relics howbeit. The kids cheerfully and willingly, just kidding, helped me drag a year’s worth of clutter and horrible crap from the yard into the driveway

and then I ruthlessly cleared off the porch, and four trips to the dump later, it looks like human beings live here.

You know you’re having a wonderful day when the dump guy asks if you’re okay. I was okay! I was just hot and exhausted and deep in “WE HAVE TO THROW EVERYTHING OUT AND WHAT IS THE MATTER WITH THESE PEOPLE AND WHAT IS THE MATTER WITH THIS HOUSE” mode. You’d think a dump guy would be familiar with that look, honestly. 

Got home and decided to tear down the vines that I had spent the last five or six years cultivating to grow over the porch to disguise its shabbiness. I had ordered Concord grape vines, which arrived as bare roots. I dutifully watered and fertilized and trained them, and was so excited that they finally started putting out fruit last year! And that is when I discovered that I may have ordered grape vines, but what they sent me were actually porcelain berry, which is poisonous and invasive. LE SIGH. So we’re starting over. 

Around 5:00, I saw to my dismay that I had scheduled myself to make a brand new recipe, which wasn’t ideal for how hot and pissed off I already was, but I didn’t want to waste the tomatoes and basil I had bought. So I made this caprese pasta from Sip and Feast.

but it came together very fast, and I thought it was delicious. 

Tasted exactly like what it was, of course (you can’t see it, but there are hunks of half-melted fresh mozzarella in there, and a good amount of red pepper flakes), which is a good thing. Lovely summer dish.

And now the last three times I made pasta, I did not overcook it! I can learn. 

THURSDAY
Pizza

On Thursday (relics regardlessly) I finally finally finally got back to working on the deck. In my old age, I have gained enough wisdom to realize that nobody who is feeling weak and shaky needs to be messing with a Sawzall, so I kept putting it off and putting it off.

But Thursday I was ready, and I got so much done. I took out the bad joist and put in a new joist with different hardware (and it fit, and *ahem* I rejoist) and cut and installed some floor planks, to close up the gap between the original structure and the new platform

Then I added a post on one corner and reinforced it with a sort of sheath of two long boards; and then I put a bottom sort of kickboard thingy (I don’t know what you call anything) and a top railing on. 

So today, all I need to do is buy some spindles or something, to fill in the railing, and then paint or stain it all, and it will be DONE.

I really wanted stairs for it, but that will be next year’s project. It has a ladder on one end and a climbing wall on the other, so it’s easy enough to get up and down. I know this, because I did it approximately 927 times yesterday, because I am constitutionally incapable of thinking about what tools I will need before I climb up a ladder.

I am so pleased with how it’s turning out.  I know it still looks very much like something that most people would be finally getting around to getting rid of; but it’s quite stable and strong, and the kids like hanging out of it. Once it’s had a little sanding and it’s all one color, I think it will look a lot more reputable. I have a vision, I tell you! And my secret is being too dumb to stop even when I realize I don’t know what I’m doing. 

Clara kindly made pizza for us. One pepperoni, one cheese, and one with leftover goat cheese, leftover basil, and red onion, which was fantastic. I forgot to eat all day, so believe me when I tell you. That was some good pizza. Relics notwithstanding. 

FRIDAY
Fish tacos

Just tortillas, frozen breaded fish, avocados, salsa, and sour cream. I just this moment realized this is supposed to have shredded cabbage on it, which I forgot to buy. Maybe I will chop up some collard greens, which are coming in nicely and desperately need thinning.

Oh, and fish tacos are supposed to have cilantro and limes. WELL, maybe I will go to the store. Maybe I’ll go to Aldi and find the Ark of the Covenant, who knows? 

Also, in relics notwithstanding news, I think I can say for certain that the weight loss I experienced when I was in full on NO FOOD NO HOW mode was not “just water weight.” I lost nine pounds when I was super sick, but I’ve been back to eating normal food for several days now, and, deliberately riding the wave of encouragement from having lost nine pounds, I lost another three pounds, meaning I’m back under The Terrible Number once again. 

My only regret is that I’m still revolted by even the idea of shrimp. Shrimp used to be my all-time favorite luxury treat, and now it feel like more of a threat. But you know, when I was about six, I had some Crackerjacks and then threw up out the window of my grandfather’s Toyota on the New Jersey Turnpike, and it was years and years before I could even think of Crackerjacks again. But now I can! Crackerjacks, crackerjacks. See? I’m fine. So I’m sure someday I’ll live to shrimp again. 

And that was my week! Headed to adoration in a bit, and I will ask St. Peter and St. Helena to watch over all of you, and make your collards grow or your power tools behave or your fat melt or your kids be helpful or whatever it is that you need. It’s on the house, especially if you’re too dumb to stop when you realize you don’t know what you’re doing. What a world. 

 

 

What’s for supper? Vol. 253: Salad days

Hi! It’s Friday! Here’s what we cooked and ate this week: 

SATURDAY
Bacon cheeseburgers, chips

Damien cooked ’em outside.  

They were delicious, of course. Try pickled jalapeños on your burger instead of regular pickles. It’s just nice. 

SUNDAY
Turkey bacon wraps, cheese balls

These wraps were based around what was in the freezer and what was on sale. We ended up with honey turkey, sriracha turkey, thinly sliced corned beef, baby Swiss, and smoked gouda. I fried up some bacon, and it looks like I put some lettuce and maybe honey mustard in there. 

I like wraps because they present as a sort of efficient nutrition delivery system, but then there’s bacon and smoked gouda inside. I guess I’m easily amused. 

MONDAY
Pork ribs, baked potatoes, peas

Damien cooked again. I remember this being tasty, but not many details, and I don’t seem to have taken a photo. I think he put olive oil, salt, and pepper on the outside of the potatoes before baking them, and that was a very good idea. 

TUESDAY
Bagel egg cheese sausage sandwiches

Busy day calls for bagel sandwiches. Fried eggs, American cheese, frozen sausage patties. 

And orange juice. This bagel sandwich appears to be leering at me.

WEDNESDAY
Jerusalem mixed grill with tomato cucumber salad

I was pretty excited about this meal, because I remember being absolutely smitten by it last time. This time it was good, but not great. I forgot to sear the meat first, and I left the liver in pieces that were too big. So it was a hearty and pleasant meal, and the flavors were good, but the texture was not excellent, and I left a lot of meat on my plate. 

I still recommend the recipe, which is nice and easy.

You have boneless, skinless chicken thighs, and livers (and hearts if you have them, which I did not. Ask anyone) tossed with your spices (which include cinnamon and nutmeg). You caramelize a ton of red onions, then sear the meats, then finish cooking them with the onions. 

Next time, I’ll sear the meat first, and also cut the liver into smaller pieces, and possibly even use two pans so as not to crowd the pans (ha ha, I am not going to do that. I would rather die than not crowd the pan). You serve the meat with a lemon wedge so you can give it a little squeeze before you eat it. Then we’ll see who leers at whom.

and I made an Israeli salad, and we had sharp little pickles and your choice of pita or marbled rye bread. I’m not complaining!

I guess I’m complaining a little bit. It’s like everything else lately: You’ve been waiting and looking forward to it for such a long time, and then you get it, and it’s . . . fine. 

The Israeli salad was definitely the most popular part of the meal. This particular iteration was Roma tomatoes, little baby cucumbers with the peel on, fresh lemon juice, lots of fresh parsley, a little olive oil, and some kosher salt. I would have put some diced red onions in there, but I caramelized them all. 

This is a wonderful salad, with the lemon juice and parsley really adding interest and making it refreshing. A good accompaniment to lots of different meals. 

Half the kids were actually at McDonald’s having a BTS chicken meal, which they pronounced “fine.” It did not come in a pretty purple box as advertised. Now you know as much as I do. 

THURSDAY
Steak salad with pears and feta

A tasty meal with a few elements that work so well together. Mixed greens, sliced pears, feta, and roast beef cooked in red wine. 

I accidentally ended up with a kind of weird cooking method for the meat, but it worked out well. I seasoned a big hunk of beef with pepper and garlic salt and put it in a 350 oven in a pan with some red wine sloshed on. I cooked it for maybe 40 minutes until it was quite rare, then sliced it up, added some more wine, covered it, and finished cooking. I don’t think this is a technique so much as a demonstration of why I haven’t gotten around to writing that cookbook yet, but the meat was tasty and tender. 

I had my salad with red wine vinegar and it was delightful, very summery and sophisticated, but filling. I feel deep within me that red meat may be bad for your heart, but it’s good for mine. 

FRIDAY
Shrimp lo mein for those who want it, canned tuna for those who don’t

and throw some shrimp in. Here’s a lo mein of ages past. 

I may have some sugar snap peas, fresh ginger, and scallions lurking about. This is a great end-of-week meal, last chance to use up those vegetables. 

And that’s my story. Pretty happy to be fully into cooking summer food now. How about you? Anything nice on your table? 

Jerusalem mixed grill

May not be the most authentic spice mix, but it sure tastes good. Serve with pita bread, hummus, yogurt sauce, dill pickles, and Israeli salad 

Ingredients

  • 4 lbs boneless, skinless chicken thighs trimmed and cut into pieces
  • 8 oz chicken livers
  • 6-7 red onions, sliced thin
  • olive oil for cooking
  • 4 lemons

spices:

  • 2 tsp cumin
  • 4 tsp cinnamon
  • 2 tsp paprika
  • 4 tsp thyme
  • 1 tsp nutmeg
  • 1 tsp red pepper flakes
  • 1 Tbsp salt

Instructions

  1. First caramelize the onions. You know this will take at least an hour. Set the onions aside. 

  2. Toss the chicken thigh pieces, hearts, and spices together. 

  3. Heat the oil in a large skillet. When it's very hot, add the meats and sear on all sides. Then turn the heat to medium and continue cooking, stirring occasionally, until the meat is cooked all the way through. Note that livers cook faster than thighs, so make sure the thighs are done all the way. 

  4. Serve with pita and yogurt sauce. Squeeze the fresh lemon over the meat. 

 

Yogurt sauce

Ingredients

  • 32 oz full fat Greek yogurt
  • 5 cloves garlic, crushed
  • 1/4 cup lemon juice
  • 3 Tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp pepper
  • fresh parsley or dill, chopped (optional)

Instructions

  1. Mix all ingredients together. Use for spreading on grilled meats, dipping pita or vegetables, etc. 

basic lo mein

Ingredients

for the sauce

  • 1 cup soy sauce
  • 5 tsp sesame oil
  • 5 tsp sugar

for the rest

  • 32 oz uncooked noodles
  • sesame oil for cooking
  • add-ins (vegetables sliced thin or chopped small, shrimp, chicken, etc.)
  • 2/3 cup rice vinegar (or mirin, which will make it sweeter)

Instructions

  1. Mix together the sauce ingredients and set aside.

  2. Boil the noodles until slightly underdone. Drain and set aside.

  3. Heat up a pan, add some sesame oil for cooking, and quickly cook your vegetables or whatever add-ins you have chosen.

  4. Add the mirin to the pan and deglaze it.

  5. Add the cooked noodles in, and stir to combine. Add the sauce and stir to combine.

WE ARE ON VACATION! All this week we’ve been at the ocean, which we adore.

We rented this beach house back in January, but didn’t know until the very last minute if it would be safe to go. But it’s been fine! We don’t share living quarters with anyone, there has been a good, brisk wind all the time, and we like the boring end of the beach with tide pools and no cool people or entertainment anyway. We warned the kids we’d be skipping souvenir shops and playgrounds and indoor restaurants and arcades and just focus on being at the beach. And it’s been great!

But wait, I guess I didn’t do a food post last week? Here are a few of the more photogenic things we ate last week:

A very delicious pizza with cherry tomatoes and basil from the garden, thinly-sliced garlic, red onion, black olives, and parmesan. Very pretty

and did not disappoint. 

They had a nice sale on steak, so I picked up a few, which Corrie helped to season

and then I broiled them, sliced them, and served the meat on mixed greens with plenty of blueberries, blue cheese, and diced red onions, with red wine vinegar, watermelon on the side.

A wonderful summer meal. This is also great with pears or green apples, rather than blueberries.

We also had sausage subs with fried peppers and onions, and here is a photo of the lovely peppers and onions

Okay, on to this week! We keep meals very simple when we’re away from home, so this is more of a “yay, beach!” post, interspersed with a couple of food pictures. Of course there are tons of pics, but I’ll mostly link to my Facebook albums, sorry, lazy person. Four of the oldest kids stayed home for various reasons, so it was just the eight of us this year. And the parakeet, whom we brought for reasons.

(We did not bring the cat, the lizard, or, after much debate, the puppy.)

Corrie packed on Friday. She was very, very ready on Friday. Then she wanted to flip a coin to see if we should go on Saturday, or just go on Friday. She dibsed Friday. 

We did whittle her essential luggage down somewhat from here.

SATURDAY
Pizza

And then it was time to go! We got to the beach house around dinner and Damien went to find hunt up some pizza while we unpacked. We don’t have an ocean view from the beach house, but I am not complaining. This is the view from the grownups’ bedroom:

One of the pizzas was sausage and ricotta, which is definitely going into our rotation. Heavens.

SUNDAY
Deli sandwiches

We slept through the 9:15 Mass right down the street, but made it to a 10:45.  Masks and hand sanitizer and social distancing were all enforced, and the priest announced before communion that we should all remember to keep our masks on until right before we receive, and that if we want to receive on the tongue, we have the right to do so, but he asked that anyone who wants that should go to the end of the line so everyone receiving in the hand could go first. Then he stepped into the sacristy to wash his hands thoroughly and mask up. A good solution. 

Then I did grocery shopping. Then we finally got to the beach! It’s such a good beach.

MONDAY
Fried chicken

We packed a lunch and spent the late morning and afternoon at the beach.

Then we went for fried dough, which is Corrie’s main reason for going to the ocean, but it was wayyyy too hot, so we had ice cream. Dinner was cold fried chicken from the supermarket and I think chips and peaches.

Damien and I popped out for drinks in the evening, but I got spooked by the crowds, so we just got some Heinekens and drank them on the beach under the full moon. 

NO COMPLAINTS. 

TUESDAY
Hot dogs, chips

We were expecting major storms, so we stuck close to the house on Tuesday. In the morning, we investigated the foggy, foggy salt marshes behind the house.

We also made cookies and played games (I brought Bananagrams, some magnet maze games, Battleship, lots of markers and coloring pages, and cookie and cupcake mix) and read books and watched TV. It got pretty blustery, but we didn’t get hit that hard.

Then when the wind and rain stopped, we went to see how the beach was. Still very windy!

WEDNESDAY
Steak, corn on the cob, chopped salad, bread, S’mores

Day after the storm and the ocean was still out of sorts. Lots of weird stuff on the sand, including this molted baby horseshoe crab shell,

absolute gobs and gobs of seaweed and a million rocks, and the water was murderously cold. This made for a challenging but exhilarating swimming day.

Guys, I cannot even begin to express how much easier it is to be at the beach when you don’t have toddlers or babies. No one wandered away or got lost. No one almost drowned. No one even tried to get drowned. Damien and I could go out and bob around past the breakers together while the younger kids played on the shore, and then sometimes we could lie on a blanket in the sun while the kids played in the water. No one got hysterical because they had sand in their mouth. No one got hysterical at all, or had some kind of diaper emergency. Everyone was reasonable and had a nice time. I never thought we’d get here, but here we are.

 I even had help pulling the wagon.

The steak that was on sale at home last week was now on sale at this supermarket, so I bought a bunch and Damien grilled them. He seasoned them with salt and pepper, lime juice and tequila, and they were very tasty! The corn was just boiled in salted water, and we had plenty of pull-apart bread to stop up the steak juice. 

We were all fairly exhausted and grumpy by afternoon, but I had been promising S’mores forever, and the coals were still hot after dinner, so S’mores time was upon us. I hate S’mores. They are so absurdly overrated, and the name might as well be “Goods” or “Highly Requested.” What the heck. Then we realized (a) we had no sticks to roast the marshmallows with (and not a tree in sight), and (b) the chocolate bars had already melted in their wrappers. One of the kids wanted to freeze them, but I couldn’t see taking melted chocolate and freezing it so as to re-melt it. So we laid a bunch of graham crackers on a pan, snipped the corners off the wrappers and basically extruded chocolate onto the graham crackers, doled marshmallows onto that, then balanced another layer of graham cracker on that. Then we put the pan over the coals until the graham crackers were burnt and the marshmallows were just barely heated. This is exactly the kind of treatment S’mores deserves, in my opinion. Stupid dessert anyway. S’m’less is more like it. 

THURSDAY
Boardwalk food!

We had a lazy morning and a good swim in the afternoon. There were some ducks or something bobbing around, and I told Lucy that, if she could catch one, she could bring it home. This didn’t work out well when I made the same offer about a frog, but so far we are duck-free.

At one point during the day, Corrie became The Head of Knowledge, and foretold that our youngest daughter would have rice and seaweed for dinner, but, failing that, that she would settle for a burger.

We stopped at home to de-sand and then went out again in search of dinner. It turns out the kids all wanted burgers and fries, so that simplified things. Damien and I had steak and cheese, which arrived without cheese or mayo or anything, but I wasn’t gonna start passing food trays back and forth across the counter. Then we got ice cream.

FRIDAY
Grilled cheese? 

I think Damien and I may pop out for an actual seafood dinner, which is something none of this particular group of kids wants or needs. But we may also answer a deeply adult call to lie around and watch TV. Damien has been working about half-time throughout the week (including virtually attending two hearings as a defendant in a free speech case) and I’ve been gloomily writing terrible things that will never see the light of day.

The great thing about this house is that it’s in quiet neighborhood, it’s a very easy walk from the beach, and there is this wonderful view from the bedroom. Two windows show the church steeple and the water tower, and the other window is the salt marsh, where white egrets swoop around and the brackish tide rises and falls throughout the day.

The ground is dense mud covered with waves and waves of cordgrass, and if you look close, there are periwinkles and little crabs all over the place.
Here are a bunch of pictures of our little trip to the marsh. 
The vegetation looks like coarse weeds at first, but up close, they look more like seaweed. Fascinating place. Some of the channels are natural, but some of them are man-made, and there are complicated sluice gates with floating balls to raise them and, I guess, keep the arcades and stuff from flooding. It’s not far from home, but so very different from home!

However, we did promise fried dough back on Monday, and we haven’t yet gotten any fried dough. The Head of Knowledge doesn’t forget these things. So I think we’re getting fried dough if it kills us. And maybe, if the crowds aren’t too bad, your name on a grain of rice.

Okay, I guess my recipe cards this week are just for the Asian meatballs we had last week, and fried dough you can make at home.

Vaguely Asian meatballs with dipping sauce

Very simple meatballs with a vaguely Korean flavor. These are mild enough that kids will eat them happily, but if you want to kick up the Korean taste, you can serve them with dipping sauces and pickled vegetables. Serve with rice.

Servings 30 large meatballs

Ingredients

  • 2.5 lbs ground beef
  • 1 sleeve Ritz crackers, crushed finely
  • 1/3 cup soy sauce
  • 1/2 head garlic, minced
  • 1 bunch scallions, chopped (save out a bit for a garnish)
  • 1 tsp kosher salt
  • 1 Tbsp ground white pepper

For dipping sauce:

  • mirin or rice vinegar
  • soy sauce

Instructions

  1. Preheat the oven to 425.

  2. Mix together the meat and all the meatball ingredients with your hands until they are well combined. Form large balls and lay them on a baking pan with a rim.

  3. Bake for about 15 minutes.

  4. Serve over rice with dipping sauce and a sprinkle of scallions.

quick-pickled carrots and/or cucumbers for banh mi, bibimbap, ramen, tacos, etc.

An easy way to add tons of bright flavor and crunch to a meal. We pickle carrots and cucumbers most often, but you can also use radishes, red onions, daikon, or any firm vegetable. 

Ingredients

  • 6-7 medium carrots, peeled
  • 1 lb mini cucumbers (or 1 lg cucumber)

For the brine (make double if pickling both carrots and cukes)

  • 1 cup water
  • 1/2 cup rice vinegar (other vinegars will also work; you'll just get a slightly different flavor)
  • 1/2 cup sugar
  • 1 Tbsp kosher salt

Instructions

  1. Mix brine ingredients together until salt and sugar are dissolved. 

  2. Slice or julienne the vegetables. The thinner they are, the more flavor they pick up, but the more quickly they will go soft, so decide how soon you are going to eat them and cut accordingly!

    Add them to the brine so they are submerged.

  3. Cover and let sit for a few hours or overnight or longer. Refrigerate if you're going to leave them overnight or longer.

 

Fried dough

Makes about 15 slabs of fried dough the size of a small plate

Ingredients

  • 4 cups flour
  • 4 tsp baking powder
  • 1-1/2 tsp salt
  • 4 Tbsp (half a stick) cold butter
  • 1-1/2 cups lurkworm water
  • 2 cups oil for frying
  • confectioner's sugar for sprinkling
  • cinnamon for sprinkling (optional)

Instructions

  1. Mix together the flour, baking powder, and salt.

  2. Cut the cold butter into bits and work it gently into the dough.

  3. Add the water and stir until the dough is all combined.

  4. Cover the dough with plastic wrap or a damp towel and let it rest for 15 minutes

  5. Separate the dough into pieces and flatten each piece into a thin disk with your fingers. If it's sticky, put a little confectioner's sugar on your work surface.

  6. Heat the oil in a pan. You can deep fry it or use less oil and fry it in a small amount of oil; your choice. The oil is ready when you put a wooden spoon in and little bubbles form around it.

  7. Carefully lay the disc of dough in the hot oil. Let it cook a few minutes, just barely getting brown, and then turn it and cook the other side.

  8. Remove the dough, let the excess oil drain off, and sprinkle it immediately with sugar and cinnamon if you like.

  9. You can keep these hot in the oven for a bit, but they're best when they're very hot.

What’s for supper? Vol. 134: Damn that little bird

We really hit some high highs and some low lows this week, speaking in terms of foodwise. Here’s what we had:

SATURDAY
Sugar rub chicken, brats, mahogany clams

Damien made dinner, with some help from Corrie:

He put some brats and some clams on the grill:

and when the clams opened, he served them in a sauce of white wine, onions, and melted butter. Still the greatest way to end a Saturday afternoon; still too slimy and weird for the kids to want any.

He made a rub for the chicken thighs:

Brown sugar 1.5 cups
White Sugar .5 cups
Chili powder 2 table spoons
Garlic powder 2 table spoons
Salt/Pepper
2 tsp chili pepper flakes

When the flames died down, he shoved the coals to one side and laid the chicken on the other side and put the lid down, and let it cook slowly. This makes the meat sweet and moist and gives the chicken skin a remarkable caramelized crust that you need to have in your life.

The brats were the vegetable.

SUNDAY
Steak salad

Steak was on sale, so I was powerless not to buy several pounds of it. Damien made another rub and grilled it lovely and rare:

I sliced the meat and set out bowls of mixed greens, blue cheese, and sliced Granny Smith apples. This dish is actually supposed to have pears, and I will admit that pears are really superior here; but the apples were good.

Very good!

Very good indeed. I put wine vinegar on mine. Any slightly sweet, non-creamy dressing would go well.

MONDAY
Chicken quesadillas

I don’t really remember Monday, but I’m pretty sure the kids made supper. I think I put oil and chili lime powder on some chicken breasts and put them under the broiler to cook, but I think they did the rest. We like quesadillas with cheddar cheese, chicken, and sliced jalapenos, with salsa and sour cream.

TUESDAY
Hot dogs, cheezy weezies

I remember even less about Tuesday. There was a lot of driving, a lot of running, a lot of rain, and a lot of writing.

WEDNESDAY
Pesto chicken burgers with sweet roast peppers; crispy circles

I had high hopes for these sandwiches. They were good, but a little bland for our tastes. First I put a bunch of peppers on a pan and put them in a 500 oven for about 30 minutes, until they were soft and a little charred.

Then I let them cool, then pulled off the skins and scooped out the seeds and cores. This is very satisfying and entertaining.

Then I sliced them up

and added a little olive oil and freshly-ground pepper. I served the peppers on the sandwiches, which were on Kaiser buns with sliced, roasted chicken and pesto sauce.

I made the pesto sauce with, um, a jar of pesto from Aldi. I know, I know.

1-1/4 cup yogurt
1/2 cup mayo
6.7 oz jar of Aldi pesto

fresh ground pepper

It was probably too much yogurt and I don’t know why I skipped the salt; and why no garlic? I don’t know. And we were out of lemon juice (but had three bottles of lime juice). It would have been good to chop the chicken and mix it with the sauce and let it sit for a while, but I was afraid the kids wouldn’t eat it.

A pretty sandwich, but it needed more texture and sharpness. Maybe some capers and red onions? Cheese?

 

The peppers are pretty, but also disappointingly bland. Help me out! Help this sandwich out. I want to like it. I want to like all sandwiches.

THURSDAY
The blight man was born for, with apricot

This pork I bought had been hanging over my head like a, like a hanging pork. That’s ominous enough, isn’t it?

Pork was on sale, so when I was planning the weekly menu, I looked around for a new recipe, and found one that tantalizingly already had the carbs toted up. Asian Pork and Cabbage Salad. Okay, sure, it looks a little peculiar, but maybe people will eat it, YOLO and whatnot. I even bought the right kind of cabbage, $1.99 a pound.

But the pork that was on sale didn’t look great, so I got more expensive pork. And the cabbage was more expensive than I expected, so I figured we could have noodles or something? Noodles and cabbage and almonds, with apricot? YOLO?

You can see where this meal is headed already, right? It was doomed. I sliced the pork up thin, but then decided that I didn’t like the sound of cucumbers and cabbage together; so I veered again, and after heating up the pan I started making a completely different recipe, distinctly non-Asian. Not even faux diabetic Asian, but faux. . . German? I don’t know. I did know I had apricot jam, so I made this Budget Bytes recipe for sauce. 

It gives you the choice of topping chops with sauce, or cooking the chops right in it. Only it called for chops, and I had already cut the meat in slices, and anyway, someone had left the Dijon mustard open in the cabinet for three months, so I threw that out and used regular mustard. Then I started some rice cooking, because I had a hunch we might need it, and we were out of noodles anyway.

Then I cooked up the meat in a skillet, then added the sauce. It didn’t look too terrible, really, and there was a chance a few good sports might eat it, especially over rice. I completely forgot about the cucumbers. Where were the almonds? I couldn’t find them, and a little bird told me to stop looking, because this probably wasn’t going to be a dish that deserved almonds.

Then, just when it seemed possible that all was not lost, another little bird, a real bastard of a little bird, was like, “Hey, this could just be a stir fry! Throw the chopped cabbage into the pan, and stir it up, you witless dinner monkey! Stir fries have mustard all the time! More cabbage, more! And now put a lid on it.”

You may or may not be aware, but when you heat up a chopped Napa cabbage, it sweats about six gallons of water.

So here’s what I put on the table:

Not with a bang, but with soaking wet cabbage and little bits of apricot. I wearily nodded toward the pizzas in the freezer, and they ate them. With rice.

FRIDAY
Tuna Noodle

Despite my unbroken record of making flawless dinners, the kids liked the idea of taking turns planning and making dinner each week. Sophia came up first, and what she wanted was tuna noodle, so that’s what we’re having.

Oh, Damien said I had to tell you about the squid jerky! Well, there’s not that much to tell. In the morning, I found and opened up Kyra’s package of smoked, dried squid, and, although the taste was not great, the smell was really dreadful, so I ate the rest of the package so it wouldn’t stink up the kitchen, and then I spent the rest of the day pooping. What top eleven things are the matter with me, would you say?

In my defense, eating the squid jerky was an entirely new experience for me. My brain couldn’t decide if it was candy, or fish, or waxy string, or what, and kept demanding additional data, so I kept eating it. Then I went for a 2.5 mile run in 93% humidity, with optional hill at the end.

And now my story is all told.
