What’s for supper? Vol. 319: In which I rest on pie laurels

Hap the Friday! I didn’t do a What’s For Supper last week because of course it was the day after Thanksgiving, and I assumed you already knew what we were having for supper. We aren’t amazing turkey leftover wizards anyway, so the following week wasn’t too spectacular. How about if I just do the highlights of the last two weeks? Who will stop me?

Here’s some of what we had the last few weeks: 

Pulled pork, cole slaw, french fries, Hawaiian rolls

Damien made this yummy pulled pork using the Deadspin recipe. For me, pulled pork is what you make when you have lost all interest in life and yet there is this hunk of meat to deal with, so you conceal it inside some kind of pot as quickly as possible and then pull it out at dinner time when it’s too late for anyone to get away; but Damien took a lot more trouble over it, and it showed. 

The next day, Damien also made a gigantic lasagna or possibly two lasagnas, also from Deadspin

Somewhat less photogenic, but ravishingly delicious. This recipe requires you to make a ragù and a béchamel sauce and let me tell you, any time I have to use the ålternate keybœard twïce in a sêntence, you know it’s going to be tæsty. 

Beef barley soup and store bought croissants 

Yaas, beef barley soup. This one, I made, and it was a cold, drizzly day, just perfect for building up a hearty, heartening soup. Garlic, salt and pepper and olive oil, carrots and onions, beef broth and red wine, beef, barley, and then mushrooms.

That was the week before Thanksgiving.

Thanksgiving went great! I started baking on Tuesday. On Thursday, all my weird little chickens came home to roost, if temporarily

and my son’s gf also came over, and my brother and his bf, and we all had an excellent time, talking and laughing and shouting important opinions about obscure movies. Damien made the turkey injected and basted with white wine and lime juice and stuffed with sausage and oyster stuffing. I didn’t see or get a photo of it roasted, but here is the carving:

and he also made the gravy. He also made the mashed potatoes at the very last minute, because I put all the food on the table and told everyone dinner was served and then wandered around with a confused expression, and then he suddenly realized all I had done was boil a bunch of potatoes. So he mashed them and threw in a bunch of milk and butter, and mashed them, oops! Everything he made was scrumptious.

I did fully made candied sweet potatoes using this recipe from My Forking Life, and they turned out great. This recipe includes a little fresh orange juice, which is nice. I think next time I may include actual slices of oranges. 

I had my annual internal query about what the difference is between yams and sweet potatoes. Sometimes I look it up and sometimes I don’t, but it doesn’t matter, because I never remember. So I thought about it for a while while I was cutting them up, and then I double-checked the bag, and it said “Mr. Yammy Sweet Potatoes.” So there you go. 

I also made parker house rolls using my own recipe, and they turned out nice and cute,

hard as a rock, and dry as a bone, and just about tasteless, so I need to find a new recipe.

I made cranberry orange bread which was fine, a little dry

spanakopita triangles to start us off, which were delightful

and we had a cranberry sauce vortex!!!

and three pumpkin pies, and a festive pecan pie that turned out rather pretty

I learned how to make pie crust roses from this website. Good to know! Very easy.

and I was inspired to make an apple pie that turned out quite lovely.

Refrigerating the pie for half an hour before baking helps all the decoration keep its shape). I gave it a little egg wash and sugar sprinkle and it was nice

Although the apples inside were a little chompy, to be honest. Can’t have everything.

I also made a few quarts of vanilla ice cream, and a quart of butternut squash ice cream with curry candied nuts, following a recipe from Blue Apron. (I ran out of pecans and they were like a dollar each this year, so I made it with 3/4 walnuts.) 

I really really liked the squash ice cream. It distinctly had all the flavors in the title — squash, curry, candied nuts — and it just worked. Really good autumnal flavor with just a little fiery edge from the curry. 

And finally, Dewey brought a lovely dense, moist gingerbread made using the Smitten Kitchen recipe,  plus a jar of heavy cream that the kids shook to whip up into whipped cream, so that was fun

Oh and I made a bunch of mulled cider with cinnamon stick and orange slices. 

And that was Thanksgiving, and it was great! 

Moving on!

Turkey ala king

When I was little, we had turkey ala king constantly, and I really loved it. I don’t know if it was the fun of having toast with dinner or what, but it felt like such a treat, and it was just so cozy and comforting, even with the mushy, muddy peas. So I was determined to recreate it, even though I knew in my heart that not many people would want it. I think my mother used to make it just by adding some cream of mushroom soup to leftover turkey, and throwing in some canned peas and heating it up; so I decided to elevate it by making a cream sauce with real cream, and adding fresh mushrooms, and using frozen peas (well, that’s not elevated very high, but it’s better than canned!). 

And it tasted . . . fine.

I think I was the only one who ate it, except for also one kid who came home super late and would have gladly eaten microwaved roadkill. So I guess I got that out of my system. I’ll probably forget and try it again in five years or so, and rediscover that this is just an intrinsically medium-okay dish and I can just move on with my life. 

Anyway, we used up the turkey. 

I also threw the picked-over carcass in the Instant Pot with water and some carrots and celery, onions, salt and pepper, and a little cider vinegar. I would have added herbs and whatnot, but we were fresh out.

I cooked it on high pressure for two hours, and I got about a gallon of good, golden bone broth, which I put in the freezer for future souping. 

Chicken broccoli stir fry and rice 

Boneless skinless chicken thighs were on sale, so I cut it in strips and fried it up with broccoli spears, sliced mushrooms, and two bottles of teriyaki sauce, and served it over rice.

Right after Thanksgiving, I always jump at the opportunity to buy bottles of sauce, because it’s one of the few weeks of the year I know I won’t give myself a hard time about it. It’s normal and fine to buy bottled sauce. It’s there for a reason, and people should never feel guilty about it. Except me. I’m different, and I should feel bad. 

And that’s it! Today I’m running away to go see the great and glorious Leticia Ochoa Adams speak, so I don’t really know what they’re having for supper at home! Spaghetti, I suppose. Maybe they can have nothing ala king. 

Beef barley soup (Instant Pot or stovetop)

Makes about a gallon of lovely soup

Ingredients

  • olive oil
  • 1 medium onion or red onion, diced
  • 1 Tbsp minced garlic
  • 3-4 medium carrots, peeled and diced
  • 2-3 lbs beef, cubed
  • 16 oz mushrooms, trimmed and sliced
  • 6 cups beef bouillon
  • 1 cup merlot or other red wine
  • 29 oz canned diced tomatoes (fire roasted is nice) with juice
  • 1 cup uncooked barley
  • salt and pepper

Instructions

  1. Heat the oil in a heavy pot. If using Instant Pot, choose "saute." Add the minced garlic, diced onion, and diced carrot. Cook, stirring frequently, until the onions and carrots are softened. 


  2. Add the cubes of beef and cook until slightly browned.

  3. Add the canned tomatoes with their juice, the beef broth, and the merlot, plus 3 cups of water. Stir and add the mushrooms and barley. 

  4. If cooking on stovetop, cover loosely and let simmer for several hours. If using Instant Pot, close top, close valve, and set to high pressure for 30 minutes. 

  5. Before serving, add pepper to taste. Salt if necessary.

Sorry, there will be no follow-up Ghostbusters reference in this What’s For Supper. I just ran out of title ideas. We did go back to school, though. 

If you look closely, you’ll notice that all the food photos this week were taken either outside, or in my bedroom. This is because I’m spending half my time pining for the kids because they’re at school, and the other half hiding from them because they’re home.

SATURDAY
Pork ribs, mashed potatoes, corn

Damien made his lovely sugar rub for the pork ribs, and cooked them on the grill. Scrumptious as always. Great little char, great caramelization, a little sweet, a little hot, nice and juicy inside.

You could make a big batch of this sugar rub and have it on hand in a baggie for just about any kind of meat, and it really makes it special.

I made seven pounds of mashed potatoes, and it wasn’t enough. Next time, a full ten. I also remembered too late about garlic parmesan mashed potatoes, where you boil the garlic cloves right along with the potatoes and then mash them in, then embarrass yourself with how much cheese you add.

SUNDAY
Spaghetti carbonara

Always popular.

Damien made dinner while I languished or something. Oh, wait, I was doing school supply shopping! Really down to the wire this year. I remember the first year I did school shopping, when we were SO broke and having SO much culture shock after years of home schooling. I remember being so heartbroken and outraged that I was expected to buy a thumb drive for my innocent sixth grader. It seemed like they were trying to turn her into a faceless drone, enslaved to technology and commercialism. So, this year, Corrie got a P.J. Masks backpack and Frozen II water bottle and a shiny gold Wonder Woman dress and Lion King socks and whatever the hell else she wanted. And all Crayola, no Rose Art at all. You can judge for yourself if that’s progress or not. Anyway, Damien made dinner.

MONDAY
Aldi pizza

For the first day of school, a nice, easy meal was in order, especially since I had somehow made myself believe school was still a full week away, so we had zero acclimatization to the new bed times. 

School is . . . okay. The kids are okay with masks. The school has set up tents for outdoor classes and lunch, and the kids sit on yoga mats, and no one spends more than 45 minutes in a room with other people, and they have fans going all the time. They do temperature checks every morning. They ask my five-year-old if she’s been out of the country (and I always listen closely for her answer, because you never know). It is okay. I have no idea if they’re learning anything. Corrie has learned a dinosaur song and a fishie song and has a friend named Greta. She has a classmate named Oliver who is silly. We have no idea how long this all will last, but for now, it’s okay. 

Mirabile dictu, no one in the school has life-threatening allergies this year, so we can pack whatever we want for lunch, so there’s that. In a few weeks, we’ll add in hybrid public high school and Catholic high school, and eventually the college kids will go back to college. Moe is in quarantine. It’s been several days since anyone called Clara “Hitler” for enforcing mask rules in the store.  Walmart is selling unscented hand sanitizer again, so you don’t have to go around smelling like fermented cranberry fart. It’s okay. How are you?

TUESDAY
Grilled ham and cheese, carrots and hummus, broccoli salad

I cleaned out the cabinet and discovered I’ve been diligently stocking up on sunflower seeds and dried cranberries, for some reason. So I poked around and found a recipe that uses both of them, along with broccoli and a basic dressing (mayo, white vinegar, sugar, pepper). 

Everyone liked it well enough, and it was a nice change from coleslaw. Vaguely autumnal. Some people also add bacon, but I was trying to pretend it was a vegetable. You could also put minced red onion.  Maybe a little blue cheese. But it was nice in its simple form. 

WEDNESDAY
Steak teriyaki stir fry, white rice

Feeling unambitious, I bought two bottles of ginger teriyaki sauce. I’m often unhappy with my stir fries because they are watery and the vegetables are overcooked, because I crowd the pan and overcook some ingredients while others are catching up. So this time, I cooked the food in batches and in stages. I heated up some sesame oil and cooked the strips of beef in batches until just barely not pink, then took the meat out of the pan. Then I cooked the broccoli in the meaty pan until just barely done, and then I added the red peppers and cooked them just a little. Then I put the meat back in and added the sauce and just stirred everything up quickly so it was heated through, and served it over rice.

Good results! The vegetables were crunchy, the meat wasn’t chewy, and the sauce did not get watery. I made a bunch of rice in the Instant Pot, and it was a tasty, pretty meal. 

Steak continues to be cheap, and I’m running out of ideas! We’ve had steak and cheese, steak salad, steak steak, and tortas. What else do you make with steak? Never thought I’d have this problem

THURSDAY
Carnitas with guacamole, corn on the cob

Not the very fine carnitas from J.R.’s Art Place that you cook in a pot until the meat’s all lacquered and lovely, but still not bad. I put a giant bone-in pork picnic in the Instant Pot with a can of Coke, some cinnamon sticks and bay leaves, orange quarters, salt, pepper, and oregano, and cooked it for 35 minutes on high. It wasn’t really tender, so I gave it another 35 minutes. It still wasn’t as tender as I wanted, but I was out of time, so I pulled the meat out and shredded what I could, and cut the rest off. Then I spread it in a pan and sprinkled it heavily with chili powder and salt, and crisped it up under the broiler.

I flirted with the notion of beans and rice, but it seemed hard, so we just had the meat with guacamole, and cheese, sour cream, salsa, lime wedges, and cilantro. 

I made some rather tomato-heavy guacamole with the few avocados that didn’t turn out to be all sad and grey inside. What the heck is wrong with avocados lately? They’re not overripe, they’re just blighted or something. What do you expect: These are Joe Biden’s avocados. Ask yourself if you’re really prepared for four more years of Joe Biden’s avocados.

FRIDAY
Tuna burgers, cheesy tomato soup

This may just be a fantasy. Most likely, people will request plain tuna with mayo. But I will offer the option of tuna burgers.

And I will offer tomato soup from a can, and they can put cheese in it. Or they can act like it’s not even exciting that it’s finally almost soup season. But it is exciting! It is. 

 

Smoked chicken thighs with sugar rub

Ingredients

  • 1.5 cups brown sugar
  • .5 cups white sugar
  • 2 Tbsp chili powder
  • 2 Tbsp garlic powder
  • 2 tsp chili pepper flakes
  • salt and pepper
  • 20 chicken thighs

Instructions

  1. Mix dry ingredients together. Rub all over chicken and let marinate until the sugar melts a bit. 

  2. Light the fire, and let it burn down to coals. Shove the coals over to one side and lay the chicken on the grill. Lower the lid and let the chicken smoke for an hour or two until they are fully cooked. 

 

Garlic parmesan mashed potatoes

Ingredients

  • 5-6 lbs potatoes
  • 8-10 cloves garlic, peeled and smashed
  • 8 Tbsp butter
  • 1-1/2 cups milk
  • 8 oz grated parmesan
  • salt and pepper

Instructions

  1. Peel the potatoes and put them in a pot. Cover the with water. Add a bit of salt and the smashed garlic cloves.

  2. Cover and bring to a boil, then simmer with lid loosely on until the potatoes are tender, about 25 minutes.

  3. Drain the water out of the pot. Add the butter and milk and mash well.

  4. Add the parmesan and salt and pepper to taste and stir until combined.

 

Spaghetti carbonara

An easy, delicious meal.

Ingredients

  • 3 lbs bacon
  • 3 lbs spaghetti
  • 1 to 1-1/2 sticks butter
  • 6 eggs, beaten
  • lots of pepper
  • 6-8 oz grated parmesan cheese

Instructions

  1. Fry the bacon until it is crisp. Drain and break it into pieces.

  2. Boil the spaghetti in salted water until al dente. If you like, add some bacon grease to the boiling water.

  3. Drain the spaghetti and return it to the pot. Add the butter, pieces of bacon, parmesan cheese, and pepper and mix it up until the butter is melted.

  4. Add the raw beaten egg and mix it quickly until the spaghetti is coated. Serve immediately.

White Lady From NH's Guacamole

Ingredients

  • 4 avocados
  • 1 medium tomato, diced
  • 1 medium jalapeno, minced
  • 1/2 cup cilantro, chopped roughly
  • 1 Tbsp minced garlic
  • 2 limes juiced
  • 1 tsp chili powder
  • salt and pepper
  • 1/2 red onion, diced

Instructions

  1. Peel avocados. Mash two and dice two. 

  2. Mix together with rest of ingredients and add seasonings.

  3. Cover tightly, as it becomes discolored quickly. 

 

Tuna burgers

Ingredients

  • 1 can tuna
  • 1/2 cup bread crumbs
  • 1 egg, beaten
  • seasonings, minced onion, etc.
  • oil for frying

Instructions

  1. Drain the tuna.

  2. Mix tuna thoroughly with egg, bread crumbs, and whatever seasonings you like. Form into two patties. 

  3. Heat oil in pan. Fry tuna patties on both sides until golden brown. 

What’s for supper? Vol. 202: Grasping at strawberries

Oops, I forgot to do a food post last week. We had a few meals outside of the normal rotation, so let’s review!

One that people liked was turkey bacon wraps. I had mine in spinach wraps , with smoked turkey from the deli, bacon, pea shoots, a nice mild lacy Swiss, and horseradish sauce, with a snappy dill pickle.

We also had some berries and some of those awful spicy crunchy onion ring snacks that are so unreasonably delicious. Fresh fruit is not great at this time of year, but I’m so desperate for color, I’m willing to grasp at strawberries. 

Against my best instincts, I also made a giant chicken pot pie last week. For reasons I don’t understand, no one except me likes chicken pot pie, but I thought maybe I would just make one so delicious and wonderful that they’d all . . . change their minds. Look how cozy and enticing it is!

What you can’t see, since this is a still pic, is that I made the sauce way too thin, and the contents were rolling and sloshing around under that lovely crust. It still tasted good! But we ate it in bowls. 

I used readymade puff pastry dough, top and bottom. (I had some left over, which is what gave me the idea of chicken pie.) I cooked the chicken, carrots, and potatoes in broth in the Instant Pot, and then made a white sauce with chicken broth and milk, then put them together and poured it into the crust. If there’s ever a next time, I will slightly undercook the potatoes and I’ll bake the bottom crust a bit before filling it. And of course I’ll make the sauce much thicker.

I still thought it was a delicious. But no hearts or minds were won this day.

We also had a new kind of salad that I expected to be more popular than it was. The family is pretty tired of buffalo chicken salad and all the other chicken salads, but mango and avocado were both on sale, so I made this lovely mango avocado lime cilantro honey salsa to go with a salad with chicken, tomatoes, and cucumbers.

I don’t seem to have written the recipe down, because why would I? Bah. I guess it was . . . mango, avocado, cilantro, lime juice, honey, and red onion. And there was a dressing made of olive oil, honey, dijon mustard, apple cider vinegar, minced garlic, cilantro, and salt and pepper. It was really tasty, sweet and summery. Ugh, why did I not write this down? Doesn’t matter, nobody liked it anyway except me. They are so dang spoiled.

Finally, we had gochujang beef with rice. Usually I made this dish with pork. It turns out it’s good either way, and certainly easy. The sauce is just a few ingredients, and you can prep everything in the morning or even the night before, and then just, zoop, cook it up. I’ll put my recipe card at the end,

and you can just substitute beef if you like. I used shredded coins of carrots rather than matchsticks, and I think I prefer it that way. 

Oh gosh, last week was also Valentine’s Day. Clara baked something like 130 cupcakes, and we decorated about half of them. I iced them and added some fancy sprinkles, and Benny sat there and sedately rolled up about 72 fruit roll roses. 

The way you do this is you roll the end of the roll tightly, and then you rotate the roll in one direction while twisting the unrolled part in the other direction and wrapping the twisted part around the roll. I can’t describe it better than that, because I’m not very good at it. But Benny is!

The cupcakes were a big hit. Benny also made those Valentines where you take a photo of the kid holding her fist out, and then cut two little slits in the print and insert a lollipop.

Hamburgers, strawberries, chips

Nothing to report. These February fruits are not great, but it’s so cold and bleak, I’m willing to grasp at strawberries. 

SUNDAY
Pizza

Nothing to report. 

MONDAY
Roast pork ribs, tater tots, asparagus

Crazy busy day with hours of driving and appointments, so I was pretty pleased to have this meal cooked in what we professionals “a twinkling.”

Pork ribs with salt and pepper under the boiler, turn once, boom. BBQ sauce from a bottle. Asparagus sautéed in a pan with some sesame oil and lemon wedges. 

TUESDAY
Paprika parmesan chicken with tomatoes and peppers, buttered noodles

Second time making this recipe, which takes a bit of chopping but is a one-pan dish with a simple but very tasty sauce.

About half the family likes it, which is pretty good. It’s easy enough, and the chicken turns out very moist and full of flavor.

I love the bright colors for winter, and it’s important to make sure everyone knows you used TWO kinds of paprika. Two!! (If you have to pick one, go with the smoked one.)

As you can see, I crowded the pan.

It’s just what I do. It turned out fine; the chicken just didn’t get as crisp as it might have. Still delicious!

WEDNESDAY
Beef teriyaki stir fry with rice

One kid is very fond of stir fry, and every once in a while, we indulge her. It’s a sacrifice, but I’m willing to ask Damien to cut up a hunk of beef, and then when I get home, I start some rice cooking in the instant pot, sauté the sliced meat in a pan, chuck in some frozen vegetables, and then slop on some bottled sauce at the end.

I really like this teriyaki sauce: Veri Veri Teriyaki, although it’s a bit thin, so I added a little cornstarch while cooking.

I always ask myself if I like it just because it’s called “Soy Vay,” and I just don’t know. 

THURSDAY
Chicken quesadillas, beans and rice

Damien cooked the chicken in the morning, and I threw together some beans and rice and made the quesadillas. 

I didn’t take any pictures, but here is a beans and rice of ages past.

I snacked on so much cheese and chicken while cooking everyone’s quesadillas, I ended up not wanting one myself. I could actually eat beans and rice every day. Recipe card below. 

FRIDAY
Fish burgers, cole slaw

This will be tonight.

Probably I should get chips or something. I got some soft rolls and some battered frozen fish and tartar sauce.

Oh, speaking of which, Lent is coming, and you need to know that Wendy’s cod sandwich is the best fish burger you can get, and if you’re looking for a really stinging penance, give up ordering Wendy’s cod sandwich.  No further questions at this time. 

One-pan paprika chicken with parmesan, tomatoes, and peppers

Bright, sweet, easy, tasty! Make with buttered noodles or hearty bread, or just by itself.

Ingredients

  • 6 lbs chicken parts with skin and bone
  • salt and pepper for sprinkling
  • 1/4 cup olive oil
  • 3 Tbsp apple cider vinegar
  • 4 Tbsp minced garlic (probably a whole head)
  • 2 Tbsp paprika
  • 2 Tbsp smoked paprika
  • 1 Tbsp oregano
  • 3-4 pints cherry tomatoes (I used fancy tomatoes in various colors), halved
  • 4 sweet peppers (I used red, orange, yellow, and green), sliced thinly
  • 1/2 cup grated parmesan
  • 1 bunch parsley, chopped, for garnish

Instructions

  1. Preheat oven to 425

  2. In a bowl, mix together the olive oil, cider vinegar, garlic, paprikas, and oregano, and toss with the chicken so it's coated

  3. Spread the chicken in a pan with a rim and sprinkle with salt.

  4. Add the tomatoes and peppers to the pan in between the pieces of chicken. If the pan is too crowded, spread everything out into a second pan. You want to leave room so it will roast a bit.

  5. Sprinkle the vegetables with salt and pepper and lightly drizzle with olive oil.

  6. Sprinkle the parmesan cheese over everything.

  7. Roast for about 40-50 minutes until chicken is golden and a little crisp.

  8. Serve chicken, topped with parsley and a little pepper. Sprinkle a little extra cider vinegar on top if you like.

Gochujang bulgoki (spicy Korean pork)


Ingredients

  • 1.5 pound boneless pork, sliced thin
  • 4 carrots in matchsticks or shreds
  • 1 onion sliced thin

sauce:

  • 5 generous Tbsp gochujang (fermented pepper paste)
  • 2 Tbsp honey
  • 2 tsp sugar
  • 2 Tbsp soy sauce
  • 5 cloves minced garlic

Serve with white rice and nori (seaweed sheets) or lettuce leaves to wrap

Instructions

  1. Combine pork, onions, and carrots.

    Mix together all sauce ingredients and stir into pork and vegetables. 

    Cover and let marinate for several hours or overnight.

    Heat a pan with a little oil and sauté the pork mixture until pork is cooked through.

    Serve with rice and lettuce or nori. Eat by taking pieces of lettuce or nori, putting a scoop of meat and rice in, and making little bundles to eat. 

 

Coleslaw

Ingredients

  • 1 head cabbage, shredded
  • 2 carrots, grated
  • 5 radishes, grated or sliced thin (optional)

Dressing

  • 1 cup mayo
  • 1 cup cider or white vinegar
  • 1/2 cup lemon juice
  • 1/2 cup sugar
  • pepper to taste

Instructions

  1. Mix together shredded vegetables. 
    Mix dressing ingredients together and stir into cabbage mix. 

Beans and rice

A good side dish, a main course for meatless meals, or to serve inside carnitas, etc.

Ingredients

  • 3 cups uncooked white rice
  • 1 15-oz cans red or black beans, drained
  • 1 20-oz can diced tomatoes with some of the juice
  • 1 diced jalapeno
  • 1/2 cup cilantro, chopped roughly
  • 1 small red onion, diced
  • 2 Tbsp minced garlic
  • chili powder
  • cumin
  • salt and pepper

Instructions

What’s for supper? Vol. 188: A week of truly fast, truly easy, mostly decent meals

Today’s post will be pretty bare bones, as I have cleverly arranged my schedule so that every time I say, “Whew, that big thing is done!” I suddenly remember I now have to do the other big thing. At least I was smart enough to plan quick and easy meals for this week. Everything on this list goes from cold kitchen to hot food on the table in about half an hour, if you don’t shilly shally (and that takes into account that I’m making massive amounts of food, which you are probably not).

Here’s what we had:

SATURDAY
Domino’s

This wasn’t actually the plan. The plan was to use the huge collection of french bread we forgot to make into garlic bread last week, and turn it into french bread pizza. But the “last week” part turned out to be important, and the bread was all moldy. So we got Domino’s.

SUNDAY
Beef stroganoff and caramel apples

Nice simple recipe, which I actually prefer to stroganoff made with good beef that you have to cut up and cook slowly. I cooked up a bunch of chopmeat in a heavy pot (does anyone else call ground beef “chopmeat?” Or is that just something my mother would say, like “dungarees?”), then took the meat out and drained out most of the fat, then sauteéd up some chopped onions and garlic (pre-minced garlic from a jar, thank you very much) in the fat. Then I put the meat back in, added some beef broth, wine, salt, and pepper, and sliced mushrooms, and let it cook down a bit, and got some egg noodles cooking.

Just before serving, I stirred in a bunch of sour cream to the meat, and served it over the noodles. Very tasty and filling, if not photogenic. 

The caramel apples were made with those caramel wrap sheets, and the kids handled it after I demonstrated one.

You just stretch the wraps over the apple, jam in a stick, and put them in a warm oven for a few minutes, and you become an Accomplished Autumn Homemaker, so you can check that off the list for the year.

MONDAY
Chicken burgers, roast brussels sprouts, grains and veg, chips

Cut them stems off the Brussels sprouts and cut them in half. Drizzle with olive oil and sprinkle on plenty of salt and pepper. Roast in a hot oven until they are slightly charred. So good. I fleetingly considered mixing them with some dried cranberries I happened to have, but I didn’t want a mutiny on my hands. I still think it would have been good, though. 

As you can see, I bought some kind of frozen thing with various grains and vegetables mixed in, that just needed to be heated up in a pan. It wasn’t very good, but it made me feel better about serving chips. 

TUESDAY
Chicken stir fry on rice

I set a bunch of rice cooking in the Instant Pot using the 1:1 method, which makes it turn out sticky and good. 

I cut up a bunch of chicken breasts into bite-sized pieces. I cut up a bunch of broccoli into bite-sized pieces. I cooked the chicken in sesame oil in a big pan, drained out the moisture that accumulated, then added the broccoli and cooked it just lightly. Then I dumped in a few bottles of sauce and heated it through. 

I used something called Citrus Ponzu Sauce, which claimed to be “Japanese inspired.” It was, as advertised, a blend of bright citrus, savory soy sauce, and red chili peppers. I also sprinkled some red pepper flakes on top of mine. 

WEDNESDAY
Giant pancake, bacon, eggs

You know about giant pancake. Even the NYT now knows about giant chocolate pancake, and they have the nerve to put it behind a paywall. (They also did a thing about how neat Funfetti is a few weeks ago, so I don’t know why I ever feel bad about anything I cook.) You preheat the oven to 350, take a whole box of “just add water” pancake mix, and add enough water that it looks like, you know, pancake batter. Then you can stir stuff in. I had a bag of chocolate chips on hand, so, boop. You butter a pan and throw it in the oven for about half an hour until it’s a little brown on top. Cut it into wedges and be adored. Your degenerate children will want to put syrup on it, and you will let them.

While it was baking, I fried up five pounds of bacon and scrambled a few dozen eggs. While I was cooking, Irene goes, “It’s funny, they call it ‘breakfast for dinner,’ but I never have bacon or eggs for breakfast.”
“Yeah,” I said; “If it were breakfast, we’d be having–”
“Cold Pizza,” she said. “Cold cake. Or nothing.”

So, I need to step up my breakfast game, then.

Or they can get out of bed when I tell them to get out of bed, how about that. 

THURSDAY
One-pan kielbasa, cabbage, and red potato

This one may have taken a little longer than half an hour, because you have to cut three things and also make a dressing, but it’s stupid easy. Recipe card at the bottom. It’s delicious. 

I did buy parsley and chop some up for the top, and it still qualifies as stupid easy. 

FRIDAY
Macaroni and cheese, my dudes. 

There may even be a vegetable of some sort in the fridge, who can say.

One-pan kielbasa, cabbage, and red potato dinner with mustard sauce

This meal has all the fun and salt of a wiener cookout, but it's a tiny bit fancier, and you can legit eat it in the winter. 

Ingredients

  • 3-4 lbs kielbasa
  • 3-4 lbs red potatoes
  • 1-2 medium cabbages
  • (optional) parsley for garnish
  • salt and pepper and olive oil

mustard sauce (sorry, I make this different each time):

  • mustard
  • red wine if you like
  • honey
  • a little olive oil
  • salt and pepper
  • fresh garlic, crushed

Instructions

  1. Preheat the oven to 400. 

    Whisk together the mustard dressing ingredients and set aside. Chop parsley (optional).

    Cut the kielbasa into thick coins and the potatoes into thick coins or small wedges. Mix them up with olive oil, salt, and pepper and spread them in a shallow pan. 

    Cut the cabbage into "steaks." Push the kielbasa and potatoes aside to make room to lay the cabbage down. Brush the cabbage with more olive oil and sprinkle with more salt and pepper. It should be a single layer of food, and not too crowded, so it will brown well. 

    Roast for 20 minutes, then turn the food as well as you can and roast for another 15 minutes.  

    Serve hot with dressing and parsley for a garnish. 

 

What’s for supper? Vol. 123: House of carbs

Sometime before dawn, a shelf holding my son’s swords collapsed, falling on the hamster cage, which released the hamster, which caused the cat to go berserk and knock over some boxes of tools. That’s what woke me up, and I leaped out of bed thinking this was clearly the noise of my daughter struggling to get to my door before she crumpled into a diabetic coma.

Which hasn’t actually happened yet. Yay! We’re doing fine, overall. She’s doing great. I’m trying to strike a balance between reading enough real-life accounts of managing the inevitable crises so I know what to do when it happens, and not reading so much that I feel like we’re always about to fall off a cliff. We’re doing fine, overall. Oh, and the hamster survived, who cares.

Anyway, CARBS. We’re counting them, and starting to venture into figuring out how different kinds of carbs affect blood sugar. Most days, diabetes management feels like a hassle, more than a calamity, and basic recipes have suddenly become unfamiliar territory, because I can’t eyeball anything anymore.

I won’t bore you with more details. I’ll just say that even though I wasn’t grateful to Mrs. Dootlittle when I was in third grade and she made us learn math, I’m grateful now. (Yes, we have a calculator. You still have to know what the hell you’re doing.)

So here’s what we had. You can see that Lucy is not on a special diet, exactly, except the “for crying out loud, let’s get some meat on your bones” diet. She eats normal food; we just have to know exactly what’s in it and how much she gets, and keep an eye on her. I’m going to include the carb counts at the end, in case anyone’s interested. Let me know if this is something you’d like to continue to see in food posts.

SATURDAY
Cranberry pecan chicken salad

I had a migraine, so Damien roasted some chicken breasts, and served them sliced up over mixed greens with dried cranberries, toasted pecans, feta cheese, and balsamic vinegar. Always a popular meal (although I noticed that the younger kids ate everything except the greens, so I probably shouldn’t call it salad. Salad bar, maybe).

This meal was so low carb, Lucy had an entire chocolate bar for dessert and still stayed within her target.

SUNDAY
Shrimp linguine, garlic bread, roast Brussels sprouts

There was a crazy sale on frozen whole shrimp at Aldi, so I bought . . . kind of a lot. Damien used this Deadspin recipe, which starts with boiling a big pot of saltwater. Not salty water, but saltwater, “like the ocean, briny and harsh and intense.” Then you shell and devein the shrimp and dump the shells in the water, too, and then fish them out, and then you cook the pasta. The recipe notes, “You may now dump those shells in the trash and tell them that you will see them in hell.” Then you cook up the shrimp with olive oil, minced garlic, hot pepper flakes, and white wine. There are more steps, but you can see what kind of ridiculously flavorful deliciousness this is.

Normally, a dish like this will have you working through some insipid pasta to get to the occasional bright light of the shrimp, but this dish was worth your full attention with every bite.

I ate so much, and I’m not even sorry. I had it for lunch the next two days, too.

The Brussels sprouts were cut in half, mixed with olive oil and plenty of salt and pepper, and I think parmesan cheese, and put under a hot broiler until they were gorgeously charred. The chompy texture was the perfect accompaniment to the creamy shrimp linguine.

We had Italian ices for dessert.

MONDAY
Tacos and tortilla chips

Nothing to report.

TUESDAY
Pork ribs, risotto, frozen peas

Still the best way to serve pork ribs, if you’re not going to get all fancy with smokers and three-day commitments. Sprinkle the ribs with plenty of salt and pepper, put them on a shallow pan with drainage, and shove them under a hot broiler for a few minutes on each side until they’re browned and sizzling. Juicy and wonderful.
I made a double recipe of risotto in the Instant Pot, using this recipe minus the squash. I forgot to take pictures.

WEDNESDAY
Beef teriyaki stir fry, crunchy noodles, white rice

Blithely ignoring what cut of meat it was, I trimmed and sliced the hunk of beef as thin as I could in the morning, then set it to marinate in half a bottle of teriyaki sauce. At dinner time, I sauteed the meat, then added two bag of frozen mixed stir fry veggies and the rest of the bottle of sauce. Made a bunch of white rice and put out crunchy noodles. No complaints.

THURSDAY
Chicken nuggets, raw veggie platter and dip, deviled eggs, chocolate milk

Sort of a “preschooler’s delight” meal. If we haven’t hit Lucy’s carb target for a meal, we often make it up with milk, and this time, we had so much to make up, we had chocolate milk. So of course everyone had to have chocolate milk. Again, no complaints.

Well, Corrie threw up, but we think that was more because she ate most of a bag of salted pumpkin seeds not long before dinner. But it was good for a good two-hour terror while I thought about what would happen if it was a virus and Lucy started throwing up. This is why there is Buspar in the world. Not that I took any, because I am stupid.

FRIDAY
Mac and cheese, raw veg

I haven’t worked out the carbs yet, but I’ll probably use this Instant Pot recipe, and maybe add a layer of buttered bread crumbs on the top.

What’s for supper? Vol. 66: Food is magic

We certainly ate a lot this week! Here’s what we had:

SATURDAY
Grilled ham and cheese, chips, carrots and dip

Saturday we were winding up vacation, so we took the kids ice skating and to a Chinese buffet for lunch, where we proceeded to eat so much that most of us swore off food forever. That didn’t last, so we had grilled cheese for supper. For some reason, I took a picture of it.

At the buffet, I thought briefly of viruses and plagues and a citizenry innocent of basic hygiene practices, and then I threw caution to the wind and loaded up on stuffed mushrooms, sushi, and tapioca, because if you’re going to die, you might as well have some stuffed mushroom, sushi, and tapioca first.

It was a pretty good spread, with crab legs, barbequed ribs, and probably more than a hundred other yummy items to choose from, all you can eat. The most popular choice with the kids? That ancient and venerable dish of the far orient: Banana halves with strawberry syrup on them. They also each ate their weight in Oreos.

We had a pretty good time ice skating, but nothing lodges in my mind like last time we went ice skating, about six weeks before Corrie was born:

An attendant came over and told us to get off the ice. I almost kissed him.

She then had hysterics and had to be driven around the byroads of rural Vermont until she fell asleep, and she and my husband hung out in the van while the rest of us did a year’s worth of damage to muscles that we normally don’t even acknowledge.

At home, we salved our pain with hot chocolate and popcorn. Gosh, we eat a lot. Sometimes, I think, “Shouldn’t we be encouraging the kids to learn how to mark happy occasions, respond to strong emotions, and pass the time, day and and day out, with something other than food?” And then I think, “There, there, you seem overwrought. Here, did you know there was leftover goat cheese?”

Look, food is magic. It just is.

SUNDAY
Calzones

Birthday! Damien took the kids sledding at the stupendous sledding hill over by the town dump:

and then the birthday girl very brilliantly suggested pepperoni and olive calzones for supper.

Yes ma’am! I used three balls of pizza dough to make twelve calzones, and followed this recipe for the filling, only I never heard tell of putting breadcrumbs in calzone filling, so I skipped it.

This is an easy meal, but it takes forever. When you make twelve of them, anyway. The thing to remember about calzones is you can manhandle them pretty badly before they go into the oven (say, if you want to get the cheese distributed more evenly after you have crimped the edges) and they will still puff up beautifully anyway. The other thing to remember is don’t crowd them, because they need room to puff up!

YUHM. Heat up a little sauce for dipping, and you have yourself a lovely birthday meal. We also happened to have some salami and muffaletta salad in the house, so those went out too. Would have been better with some bruschetta and maybe some cheese, but it was a good companion dish.

The birthday girl requested cheesecake for dessert, but I thought that would be . . . I’m sorry for what I’m about to say . . . too much cheese for one meal. So we had banana splits instead. With cheese!

MONDAY
Hot dogs, chips, salad

No memory of Monday.

TUESDAY
Pulled pork o’ my heart

We were a little low on beer, so I cooked the pork in the slow cooker with salt, pepper, and a can of Coke. GOOD CHOICE. I hear that Dr. Pepper is also a winner with pork.

I did buy rolls for sandwiches, but then I realized that I could make a sort of pyre of tater tots, pile some juicy pork on top of that, drizzle it with dreadful hot cheese from a jar, scatter some winsome red onions on top, and launch the whole thing off to a toward a delirious dream of the afterlife by blessing it with a final smattering of barbeque sauce. Of course those jerks had loosened the top, so most of the bottle fell out onto my plate, but I did not care. I didn’t even use a fork. Good heavens, it was good.

Food. Is. Magic.

WEDNESDAY
Pork posolish, corn bread

The plan was to make pork posole with this recipe, but it turns out that hominy is some kind of corn, I guess? And not really the same as polenta, which is what I had. Also, I forgot to buy chile peppers. So I made some soup this way:

I fried up a bunch of diced red onion and several diced garlic cloves in olive oil. Then I threw a bunch of leftover pulled pork, a can of drained black beans, a can of diced tomatoes with juice, a can of tomato paste, some cumin and chili powder, and several cups of beef broth, and a little water.

I let it cook for several hours, and then served it with chopped cilantro and sour cream, and some fresh lime juice squeezed over the top. The lime was a great addition. The soup tasted a lot like the chicken tortilla soup I made the other week (duh, lots of the same ingredients), but it was sturdier, almost like a pot roast, and very warming. I was the only one who ate it, of course. The jerks had toast.

There is a photo of this fine soup on my daughter’s phone, but I’m writing this at 11 PM and I don’t want to message her to send it to me, because that would make her phone buzz and would wake her up, and I’m a good mother. Not only do I make them soup, I let them sleep while I write about it. A+ And what do they do? They laugh at me when I get half a bottle of barbeque sauce slopped all over my pulled pork prye. F-.

The cornbread was terrible. I didn’t check the temp and baked it at too low of a heat, so it was dense and mushy. Bleh. I mean, I ate it, but it wasn’t magic.

THURSDAY
Beef and cabbage stir fry, rice, raw broccoli

I love this recipe from Budget Bytes. I made the sauce and shredded the veg ahead of time, and then it went together so fast when we got home stupid late. Very tasty.

Very satisfying, and the ginger, garlic, and sriracha cleared up everyone’s stuffy noses at least for the dinner hour.
