What’s for supper? Vol. 469: Loveseat! That’s where we eat!

Happy Friday! Every year, May takes me by surprise with how incredibly, bounteously, tenderly gorgeous it is, and also! with how many freaking events we have to go to!

Happily, both cars are currently running, so we are able to do that! And it is just swooningly beautiful out there. My peach tree burst into bloom this week, there are daffodils and tulips swaying in the breeze, the birds are hysterical with love, and the skies are the bluiest bluesty blue I’ve ever seen. I thought I saw a little patch of ice in the stream, but it turned out to be just bubbles.

Shortly after I wrote last week’s post, the ducklings started hatching in earnest! Only one had totally emerged by the time Damien and I went to bed,

so we moved the incubator into our room overnight, for fear of the cats. I did fret about them all night, but this is what we saw in the morning:

Totally exhausted, poor things, but very healthy. These are all pekins.

One more, half pekin and half Swedish black, eventually muscled its way out of the shell the next day. Two did not make it, but the remaining four are doing absolutely great. Everyone got to see at least one baby emerging from the egg, which is dramatic and excruciating, thrilling and ridiculous, just like many other births. I posted a few videos on Facebook. This is seven minutes of hatching compressed into one minute of video;  this is the poor Swedish black trying to hatch while being repeatedly trampled by its three half siblings; and this is their first living room rodeo

They grow insanely fast, and they are now living happily under a heat lamp in a tub on top of the dryer, gobbling up their food, thrashing around in their water dish, and wearing themselves out and falling asleep in a fluffy pile. 

Sonny is pretty resigned to having these peeping little maniacs dashing around his living room in the evening

but he does clearly feel like it’s one of our dumber life choices. He’s not necessarily wrong! But they are so lovely. 

SATURDAY
Shawarma, pita, cream puffs, strawberry ice cream 

On Saturday, Lena came over for a belated birthday celebration! It was great to see her. I made chicken shawarma

and yogurt sauce, and also gave people one final shot at the toum. The shawarma turned out great, although I overcooked the meat a tiny bit because the pita too so look to cook. I use this recipe for pita, and I made a double recipe but just make really big breads. It turns out yummy, but I always underestimate how long it will take to cook eight breads for six minutes each, even though my father did sit me down with flash cards in third grade and I did finally learn my multiplication facts. Next time, I will get two pans going. 

Anyway, it was worth the wait, and it was all very tasty.

and some extremely messy cream puffs. 

The cream puffs were actually from a Bridgerton-branded kit that was on clearance at Walmart, and they definitely made me realize that, from now on, I will be making cream puffs from scratch. They’re actually really easy. A choux pastry is very simple to make, and once you know how, you can make all kinds of fancy stuff. I really wish I had made an actual cream filling, instead of the mix stuff from the package, which had a bland, oily taste. At least we had something to stick candles in, though! Nobody complained, and we had a nice evening. 

SUNDAY
Leftovers, pizza

I moved leftover day to Sunday, and supplemented it with Aldi pizza.

Those empanadas make great leftovers! It’s crazy to me that the rest of the family isn’t in love with everything pie-like. To me, that is just the standard, baseline desire of humanity: To want to be eating some form of pie. 

MONDAY
Grilled ham and cheese, potato puffs, steamed broccoli

On Monday, I made the first inquiry into my compost heap. I don’t do any of the perpetual turning or sprinkling or layering you’re supposed to do for compost; I just dump organic stuff in one spot and let nature take its course, and then in the spring, I see what I’ve got. It works well enough for my purposes! I dug up four wheelbarrows full of dark, rich soil and dumped it on top of the new garden bed I made in front of Damien’s office. 

The idea is to give it couple of weeks to get rained on, and think about what it’s done; and then by the end of May, which is when it’s safe to plant in this zone, it should be ready for seeds. I saved tons of seeds from that one gargantuan pumpkin last year, and that’s what this bed will be for.

Then I made one final offensive push against the blackberries, and dumped them in the pool so they could think about what they’d done. The liner is torn, so right now it’s just a big drying area, and you have to dry out wild blackberry canes before you dispose of them, or else they’ll just start over again. 

Supper was grilled ham and cheese, tater tots (or possibly potato puffs. These are separate things, but I don’t know which is which), and steamed broccoli.

Corrie thought this was a hilarious combination of foods, for some reason. I forget she is still young enough that everything we do (for instance, eating chips and raw vegetables with grilled ham and cheese) gets registered as The Way It’s Done, and any other way looks absurd. 

TUESDAY
Tacos al pastor

It was Cinqo de Mayo, which, as I understand it, is Mexican Arbor Day or something? So obviously we had tacos al pastor, to honor our Lebanese ancestry, which is the best we can do since we don’t drink anymore. I cut the pork up thinly and sorta kinda followed this recipe for the marinade. Then I cut up a couple of pineapples, chopped up some cilantro, and sliced up a few red onions and set those to pickling. I believe I used cider vinegar, pineapple juice, salt, sugar, and hot pepper flakes. 

Then I turned my attention to . . . other things. 

I don’t know if I’ve ever favored you with the Sad Tale of the Wrong Loveseat. We had this loveseat that fit our tiny living room perfectly, and even though the room is small and kind of shabby, I was really happy with how cozy and harmonious it was. But then a child accidentally saturated it, down to its bones, with a smelly lotion which gives me migraines. So we threw it out, and I’d been hunting for a replacement on Marketplace.

We did find one, and the kids loved it, because it was so spacious and comfy and plushy.

IT WAS TOO SPACIOUS. It was about eight inches longer than the people said it would be. But I pride myself on being able to tetris furniture into compliance, so we can make room for whatever we need to make room for (hence the ten children). WELL, I could not, could not figure out how to make this dang loveseat fit. And also, it was grey, and the rest of the room is warm colors.

Also, it’s not really a loveseat, but actually just the orphaned short end of a sectional. 

So I started looking for another loveseat again, and I finally I found one! and this one is the right size, and it was free! It’s not, like, an amazing piece of furniture? 

But it fits, and it’s brown, and I was able to put the room back the way I like it. I’m very happy. And very grateful that Damien goes along with my dumb furniture struggles. 

So, but now we have the old loveseat on its end in the dining room. We couldn’t put it out on the side of the road because it kept raining. But in the meantime, the cats discovered that it’s the greatest spot in the world to fulfill their true destiny: Being High Up. 

SO, I didn’t want to take that away from them. But I also didn’t feel like we needed a sideways couch in the middle of the living room. So I started looking at cat trees so I could throw out the loveseat, and I looked at a few, and I was like, HECK, I COULD MAKE THAT. So I did!

I found a dry tree in our little woods, and cut it up, and screwed the ends to a piece of wood I’ve been saving for just such a purpose. Then I used leftover pool deck spindles to make supports for the tree parts. Then I added some wooden rounds left over from some craft projects, and made little platforms; and then I used a broken drawer piece for the top platform. And it was not bad!

Level and sturdy. Then I cut a bunch of fabric off old loveseat #1 and stapled it on to the little platforms. Then we kind of forcefully placed a cat on it, and Behold: A cat tree. 

Of course we still haven’t dragged loveseat #2 out of the house yet. So now the dining room looks like this:

and I think it goes really well with the ducklings in the laundry room. 

But anyway, by late afternoon, I had this wonderful marinated meat to cook. I decided to broil it in the oven while cooking the pineapple on the stovetop. I just heated up some olive oil and then sauteed the pineapple until the edges browned up a bit. 

Cooked pineapple is SO sweet and wonderful, and amazing with cilantro and spicy meat. So we had tortillas with sour cream, cilantro, pineapple, pickled onion, meat, and hot pineapple, with lime wedges.

Oh my gosh, you guys. This was the most delicious thing ever. I was definitely hungry from my cat tree project, but also it was just amazing food. Definitely returning to this recipe, and definitely adding pickled onions to more things!

WEDNESDAY
Hamburgers, chips, veggies and dip

Wednesday began rather whimsically with our very first fairy egg.

It’s not a true egg; sometimes a duck’s plumbing gets irritated and then it’s like, oh, I guess we’re making an egg! and builds a shell around the irritant. Because a duck’s insides are not any smarter than its outsides.

I haven’t cracked this fairy egg yet, but it is probably all egg white inside; but there may be a tiny yolk. I am going to try to blow the insides out so I can save it to decorate. 

I don’t even remember what we did all day, but we had hamburgers with the last of the mysteriously cheap ground beef I stocked up on a few weeks ago. Gobbled up my burger, did not take a picture.

Oh wait, I did take a picture of my veggie platter.

Food styling is my passion. 

Oh, I had leftover pickled onions on my burger, and it was YUMMO. 

Wednesday night, I made pumpkin muffins with cream cheese frosting for staff appreciation day. We’ve been sending our kids to this school for . . . I don’t even know how many years. Ten kids’ worth, anyway, and I DO appreciate the staff, so very much, but I’ve never had my act together enough to make muffins. Until this year!

and I used this simple recipe for the frosting: Just 8 oz. of cream cheese, 1/3 cup of sugar, and 1/2 tsp vanilla. I made a triple batch of frosting, which was more than enough, so I, uh, ate the rest. (In my defense, it was over the course of three days.)

They turned out great, and for once in my life I thought to buy disposable trays to carry them in. 

I was also immensely pleased and gratified to have a separate little fridge to keep them in overnight. This is one of my great satisfactions in middle age: I have my very own mini fridge which is exclusively for baked goods I don’t want anyone to touch. 

THURSDAY
Pork rice bowls

Thursday I had some cheesecake orders for Mother’s Day, and LET ME TELL YOU. I did nothing but make mistakes all day. Not even just with the cheesecakes, but with every little thing, just one dumb thing after another. I ended up having to make the cheesecakes twice, because I lowered the temperature in the oven too dramatically, for no reason, and they all cracked. 

Just for fun, I did make one extra one, which turned out pretty cute: 

This is about 6.5 inches in diameter and actually has a secret chocolate center. Which reminds me, I need to put up an ad and see if someone wants to buy it!

Anyway, the plan was pork quesadillas, but I forgot to buy cheese, so I just made kind of spicy pulled pork. I cut the pork into chunks and browned them in oil with salt and pepper. Then I put it in the Instant Pot with the last of the pineapple juice, some jarred jalapeños and their juice, some garlic powder, a bunch of cumin, and bunch of that Valentina’s salsa picante. I let that cook all day, and then before supper I made a truly terrible pot of rice. How do you mess up rice? I don’t know, but it was that kind of day. 

But actually it was a decent meal, considering it was forged in sheer panic. I had mine with sour cream, cilantro, and lime.

Not bad at all. I may start keeping pineapple juice in the house! Very handy. 

Damien has had to be out of town covering various hearings and whatnot this week, and then Benny had a fundraising event in the evening, and when I got home, I still had to remake those cheesecakes, so I switched kitchen clean-ups with Irene, made the cheesecakes, cleaned the kitchen, Damien picked up Benny, and then I fell asleep on the couch, phew. 

FRIDAY
Spaghetti

I just remembered that, when I went shopping for cream cheese, they had everbearing strawberry plants for $3 each, so I bought six. Yay! I forgot about that. My strawberry bed got all eaten up by varmints over the winter, so it will be nice to stock it up again. Maybe I will go back for another six plants. I’m solidifying my vegetable garden plans for the year, and have pretty much settled on corn, pumpkins, potatoes, basil, and eggplant. Might do butternut squash on an arbor this year, if I can get around to rigging it up. 

I slept in this morning while Damien got the kids to school and brought one to an appointment, and then some of them had a half day, and then he’s going to cover adoration while I get one kid to her new art class, and then pick up the rest. And then we shall have spaghetti! And maybe drag the loveseat out of the dining room. Because it is chilly as heck today, but it is NOT raining. And guess what, the surgeon just called and I have a surgery date. August 20, which is absolutely perfect. We’ll have a nice summer, I’ll get my head fixed, and we’ll all be in good shape by Christmas. 

For dessert, it just so happens we have a bunch of cracked cheesecakes in the house. Mom in a heart, indeed. 

Chicken shawarma

Ingredients

  • 8 lbs boned, skinned chicken thighs
  • 4-5 red onions
  • 1.5 cups lemon juice
  • 2 cups olive oil
  • 4 tsp kosher salt
  • 2 Tbs, 2 tsp pepper
  • 2 Tbs, 2 tsp cumin
  • 1 Tbsp red pepper flakes OR Aleppo pepper
  • 1 tsp cinnamon
  • 1 entire head garlic, crushed OR bashed into pieces

Instructions

  1. Mix marinade ingredients together, then add chicken. Put in ziplock bag and let marinate several hours or overnight.

  2. Preheat the oven to 425.

  3. Grease a shallow pan. Take the chicken out of the marinade and spread it in a single layer on the pan, and top with the onions (sliced or quartered). If you kept the garlic in larger pieces, fish those out of the marinade and strew them over the chicken. Cook for 45 minutes or more. 

  4. Chop up the chicken a bit, if you like, and finish cooking it so it crisps up a bit more.

  5. Serve chicken and onions with pita bread triangles, cucumbers, tomatoes, assorted olives, feta cheese, fresh parsley, pomegranates or grapes, fried eggplant, and yogurt sauce.

 

Pumpkin quick bread or muffins

Makes 2 loaves or 18+ muffins

Ingredients

  • 30 oz canned pumpkin puree
  • 4 eggs
  • 1 cup veg or canola oil
  • 1.5 cups sugar
  • 3.5 cups flour
  • 2 tsp baking soda
  • 1.5 tsp salt
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • 1/2 tsp ground cloves
  • 1/4 tsp ground ginger
  • oats, wheat germ, turbinado sugar, chopped dates, almonds, raisins, etc. optional

Instructions

  1. Preheat oven to 350. Butter two loaf pans or butter or line 18 muffin tins.

  2. In a large bowl, mix together dry ingredients except for sugar.

  3. In a separate bowl, mix together wet ingredients and sugar. Stir wet mixture into dry mixture and mix just to blend. 

  4. Optional: add toppings or stir-ins of your choice. 

  5. Spoon batter into pans or tins. Bake about 25 minutes for muffins, about 40 minutes for loaves. 

 

Ben and Jerry's Strawberry Ice Cream

Ingredients

For the strawberries

  • 1 pint fresh strawberries
  • 1/4 cup sugar
  • 1-1/2 Tbsp fresh lemon juice

For the ice cream base

  • 2 eggs
  • 3/4 cup sugar
  • 2 cups heavy or whipping cream
  • 1 cup milk

Instructions

  1. Hull and slice the strawberries. Mix them with the sugar and lemon juice, cover, and refrigerate for an hour.

Make the ice cream base:

  1. In a mixing bowl, whisk the eggs for two minutes until fluffy.

  2. Add in the sugar gradually and whisk another minute.

  3. Pour in the milk and cream and continue whisking to blend.

Put it together:

  1. Mash the strawberries well, or puree them in a food processor. Stir into the ice cream base.

  2. Add to your ice cream maker and follow the directions. (I use a Cuisinart ICE-20P1 and churn it for 30 minutes, then transfer the ice cream to a container, cover it, and put it in the freezer.)

What’s for supper? Vol. 466: Oh toum, where is thy victory?

Happy Friday! I don’t think there was a single day this week when I knew what day it was. Which is why I put every single thing down in my calendar, so I don’t get confused. Unfortunately, I have an incredible knack for entering things on the right day of the week, but the wrong month. So I’m constantly getting notifications like, hey, remember that scholarship deadline? Yeah, that’s gone. Yo, happy one month anniversary of the time you said you’d bring in muffins and didn’t! Also, alert: that lab order has officially expired, and unfortunately you are now dead.

The good news is, these notifications don’t bother me at all, because I somehow accidentally turned off my ringer and the battery died, and my phone is carefully tucked in between some dish towels where I set it down for a second and then just walked away

Did I mention I don’t have any cognitive impairment? This is just what I’m like. This is what peak Simcha performance looks like!

But seriously, I so, so appreciate all the many kind messages, prayers, and donations folks have been sending. We are all doing pretty much fine and chugging along. My special intractable schwannoma headaches are ramping up again, but what can one do. Oh actually, probably surgery. I’m waiting to hear back about that! 

And here is what we had for supper this week!

SATURDAY
Leftovers and stuffed potato skins

Just a regular day of chores and shopping. I also did a big Egg Reconciliation. Duck eggs can sit on the counter unrefrigerated for quite some times, as long as you leave them unwashed; but I was running out of counter space! So I scrubbed them all

and then carefully dropped them into a pitcher of water. The ones that sank and lay flat were the freshest, so I boxed those up and sold them to the Chinese restaurant down the road.

None of them floated (which they do when they’re really stale), but about half of them tipped up a bit on one end, which means they’re not super fresh, but still edible. So I separated those and froze them

, without any specific goal except to stop thinking about eggs for a while. Perhaps I will make a pavlova for Mother’s Day. I really like pavlovas!

The shopping turn kid chose stuffed potato skins for the leftover supplement, and there was tons of other food leftover.

I also heated up the last of the chicken soup with matzoh balls, and it was yummy one last time. 

SUNDAY
Pizza

Actually I must have done the egg thing on Sunday. Anyway I remember hoping to get some other kind of big project done on Sunday, and then not doing it. I did make a yummy pizza. 

I spread half the cheese on the pizza, then adorned it with prosciutto. Then I put the rest of the cheese on and baked the pizza, then topped it with arugula dressed with lemon juice and pepper. Yummo. 

MONDAY
Buffalo chicken drumsticks, garlic knots, raw veggies and dip

Monday I just roasted a bunch of drumsticks with olive oil, salt, and pepper, and then tossed them in bottled buffalo sauce and put them back in the oven to reheat saucily while I made some garlic knots with the leftover pizza dough. (I bought three balls of pizza dough out of habit, but there were only FOUR people home for supper, so I made a mere two XL pizzas.) And a nice robust vegetable platter. 

I was gonna roll the baked garlic knots in melted butter, but everyone was super hungry, so I just served them right out of the oven. 

Solid little meal, easy peasy. 

TUESDAY
Pulled pork on waffle fries, raw veggies

Tuesday was a very drivey day, so I started the pulled pork nice and early. Here’s the recipe.

I found a replacement Instant Pot for cheap on Marketplace, so we are pressure cookin’ again, hooray!

Sonny and I got some stream time. Poor Sonny, he drives me absolutely bonkers when he’s inside. He’s just so gross and smelly and dumb and in the way. But we get along so well outside. He chills out and becomes a noble and sedate enjoyer of nature, and also yearns to protect me from biting ducks, which is endearing. I guess he has just learned to accept that I kind of hate him when he’s inside, but when we’re outside, we’re best friends, and that’s just how it is. 

Anyway, it sure is purty down there. We’ve had a lot of sudden bursts of rain lately, so a pretty good haul of pottery and bottles had washed up on the banks. I like to collect these and put them in a pile by a tree, and admire lichen. I guess probably I’m the one who chills out when I get outside. 

In the afternoon, I gave a kid a driving lesson, and we set a new record for how close you can zoom past a tree without actually hitting it. Also thrilling in its own way, a new light came on on the dashboard. Alas. 

But supper was delicious. I cooked a bunch of waffle fries and sliced up some red onions, shredded the meat, set out some BBQ sauce, and we had tasty pork bowls.

I’m not too proud to tell you that I think this would have been even tastier with some horribly orange, dangerously salty fake cheese melted, or possibly extruded, over the top. But it was very good without, as well. 

WEDNESDAY
Chicken shawarma, pita, toum 

Wednesday I spent almost all day cooking, for some reason. I was planning two meals with chicken thighs, but had thriftily bought ones with bone and skin, so I spent a good long time processing about eight pounds of thighs, much to Sonny’s intense interest. (Unfortunately this was Inside Dog, so I hated him, and did not give him any chicken. Also, even though I hate him, I had actually given him some pork yesterday, which he promptly threw up, and I HATE that.) I set aside eight of the most intact ones for the next day, and set the rest to marinating. 

Yes, oh yes, it was SHAWARMA DAY. Here is my oven shawarma recipe

Then I made a double batch of pita dough. Last week’s pita was a little disappointing, so I reverted to this recipe, which is a little more labor intensive (more ingredients, and the frying process is longer and slightly more complicated), but it’s really worth it, and easy enough once you get into the rhythm. Anyway I made the dough and let it rise for an hour and a half, and then I put it into the fridge because it was too early to do the second rise. 

AND THEN, I made some TOUM. I have never heard of this Lebanese garlic sauce before, but I saw a video and it looked magnificent. I settled on the Serious Eats recipe, which calls for a cup of garlic cloves. This turned out to be about two-and-a-half heads of garlic, which I peeled with the aid of one of those little silicone tubes lined with nubbins

The recipe says you should split each clove open and cut the germ out, but life was passing me by, so I skipped that. You pulse it up in the food processor with some salt, and then add some lemon juice and make a paste. Then, with the food processor running, you start slowwwwwly adding three(!) cups of oil,

alternating half cups of oil with the rest of the lemon juice and then with ice water.

I’m so bad at adding things slowly, and even though I read the little explanation about emulsification and whatnot, I really just wanted to dump the whole amount in. I just had to keep thinking about that part in The Witch of Blackbird Pond where Kit gets mad and dumps all the cornmeal into the pudding at once, and the family has to eat lumpy corn pudding and that was all that was for dinner, and she feels so bad; and that gave me the fortitude to keep it at a slow drizzle. In this way, I avoided the harsh approbation of my dour and exacting uncle, at least for one more day. But oh, ’tis a weary task. What would grandfather think, to see me this way? 

Well, I whipped it and whipped it, but it was still kinda soupy, and even though I’ve never had or seen toum, I was pretty sure that wasn’t right. Happily, the recipe says if this happens, you can just pull most of the toum out of the food processor, whip up the rest with an egg white until it’s fluffy, and then add the rest back in. Worked great!

I can’t really think of anything with a similar texture. It’s light and fluffy, but . . . I guess unguent is the word? But not really. It’s definitely not greasy, and not exactly creamy. One thing we can all agree about: It is GARLICKY. One little dab of it lights your whole head up like an emergency flare. Wow! I was delighted. 

Then I made some normal yogurt sauce (Greek yogurt, lemon juice, crushed garlic, salt), because People Don’t Like Change, and they had been looking forward to this meal and I didn’t want anyone to be sad. Then I put a bunch of stuff in bowls.

and heaved my sorry self outside to deal with the giant smashed window. NOT a window of the house, I hasten to add. Just one of those gigantic windows I lugged home last year — or was it the year before? — to make into a sunporch, and then didn’t do that. I had dragged one into the back yard and leaned it up against the old bunkbed,

thinking I would surely figure out some way to make this into a little greenhouse. Then came a mighty wind, and we got this:

The good news is, it is safety glass, so there were not super sharp shards of glass everywhere. The bad news is, broken safety glass collapses into millions of teeny little bits when you so much as breathe on it, even if you don’t have ultrasonically powerful garlic breath. Also, I had set this up on an area of the yard where I had made an attempt to do some landscaping, by which I mean I dumped thousands and thousands of little rocks there, back when we were digging up the ground for the pool and had to move thousands and thousands of rocks.

I did kind of enjoy this “mighty whale breaching out through the arctic ice” effect

but most of the rocks are much smaller, very effectively trapping the glass bits in between them, so the glass sinks into the dirt buuuuut you can’t reach it. 

So . . . I’ll just say I tried lots of different ways to clean it up easily, and there is no such thing. And I’m not gonna rent a shop vac, because the only thing that would make this project worse would be spending money on it. So I settled for putting on my goatskin gloves and just gloomily grabbing up handfuls of glass and throwing them in a tub, over and over and over and over again. I did this for quite some time, and there is still a lot of glass out there. And of course in my foot.  

I’m gonna have to get out there with a shovel and excavate the whole thing, which I’m not super excited about. Also, it has since rained very hard a couple of times, so the tub and bag full of glass bits are also now full of water. 

HOWEVER, after the school run I got home, cut up the pita dough and started it on its second rise, cut up a bunch on onions and sprinkled them over the meat and got that cooking, and ALL WAS WELL. BY WHICH I MEAN DELICIOUS. 

The method for this pita recipe is to fry on one side for 30 seconds, then on the other side for 30 seconds, then brush both sides with olive oil and continue cooking for five minutes, flipping it every minute or so. I made eight pieces (I doubled the recipe and just made really big pita), and it did take quite a while, but man, they were yummy. 

They puffed up so nicely in the pan, and came out really fluffy and chewy, with little crisp bits and a rich flavor. Excellent. 

It was all excellent. 

 
Sadly, nobody else would even try the toum! (Nobody except Damien said the food was good, either, but I’ll kill them about that later.) So I ended up with quite a bit of it leftover. It took so much time and effort to make, I decided to go ahead and offer it on my town Facebook page, and it got snapped up right away! So that was nice. The woman who picked it up even gave me a dozen eggs from her chickens, and several heads of garlic from her garden. I’m growing garlic this year, but it’s nowhere near ready to harvest.

Anyway, the meal was just great and I was very proud of myself. A very satisfying way to turn the day around. 

THURSDAY 
Spicy chicken pepper sandwiches, cheese curls

Thursday I suddenly got a bee in my bonnet about one of the bedrooms upstairs. I knew supper would be easy, so after I did my calisthenics (I’ve been doing calisthenics lately, I don’t know why) I lumbered upstairs with a bunch of garbage bags and tore into the mess. Six bags of laundry and three bags of trash later, it looked a little better up there! I was powered by the sound of Tom Holland’s spectacularly horrible southern accent. I will never, ever, ever once again be embarrassed when an American tries to do a British accent. Seriously, it will make you feel like you are going insane. 

Damien volunteered to pick up the kids, and he also got a bunch of cleaning supplies and my prescriptions, and I was able to stay home and push through to start scrubbing the walls and ceiling (don’t ask), and I got so much done. 

Eventually I called it a day, took a shower, and then threw together some chicken sandwiches with the thigh meat I had prepped the day before. It’s basically this recipe from Sip and Feast, except I use Tony Chachere’s, and I had cubanelle peppers instead of shishito, and kaiser buns instead of brioche rolls. Neither one is necessarily an improvement; it was just what I happened to have. This is a wonderful sandwich, though, and I think you should make it soon. 

 
With some pointed prompting, the child thanked me for cleaning her room, and then I slithered off to bed. Well actually first I handwashed some dishes, because the stinking dish washer broke. But then Damien fixed it! I guess it was some food and grease had gotten into the control panel or something, which is strange, because the children certainly always rinse the dishes before loading them, as they have been instructed to do. A mystery. 

While I was cooking the chicken, the dog came over and horked up a Brillo pad. Then he lay down and looked regretful for a while, then he went back to hoping intensely for some chicken. Which I did not give him, because, dude.

FRIDAY
Tuna sandwiches, possibly risotto

Today Damien is working on my car, and he also got a new coil or something for the water heater (we’ve been taking lurkworm showers for a while now, which is kind of discouraging), and also a pipe for the basement, because when the kitchen sink pipe broke, it leaked dirty kitchen water into the dirt basement floor and you know what, that is probably why we have so many flies. HOWEVER. We’re gaining on them, I feel. The flies, the appliances, the children, the mess, the everything. Superabimus, or something like that. Anyway, when I was cleaning I found six pairs of scissors. 

Not to get too edifying on your asses, but I did realize that, as long as I’m going to be digging up a big swath of dirt to clean up all that glass near the patio, I might as well plant something there. It gets TONS of sun, and I might just get one of those giant pouches of mixed seeds and dump it in. Gotta have some fun somehow!

Season heavily with salt and pepper. 2) Heat oil in heavy pot and brown pork on all sides. 3) Move browned pork into Instant Pot or slow cooker or dutch oven. Add all the other ingredients. Cover and cook slowly for at least six hours. 4) When pork is tender, shred.  

Clovey pulled pork

Ingredients

  • fatty hunk of pork
  • salt and pepper
  • oil for browning
  • 1 cup apple cider vinegar
  • 2/3 cup apple juice
  • 3 jalapeños with tops removed, seeds and membranes intact
  • 1 onion, quartered
  • 2 Tbsp cumin
  • 1 tsp red pepper flakes
  • 2 tsp ground cloves

Instructions

  1. Cut pork into hunks. Season heavily with salt and pepper.

  2. Heat oil in heavy pot and brown pork on all sides.

  3. Move browned pork into Instant Pot or slow cooker or dutch oven. Add all the other ingredients. Cover and cook slowly for at least six hours.

  4. When pork is tender, shred.

Chicken shawarma

Ingredients

  • 8 lbs boned, skinned chicken thighs
  • 4-5 red onions
  • 1.5 cups lemon juice
  • 2 cups olive oil
  • 4 tsp kosher salt
  • 2 Tbs, 2 tsp pepper
  • 2 Tbs, 2 tsp cumin
  • 1 Tbsp red pepper flakes OR Aleppo pepper
  • 1 tsp cinnamon
  • 1 entire head garlic, crushed OR bashed into pieces

Instructions

  1. Mix marinade ingredients together, then add chicken. Put in ziplock bag and let marinate several hours or overnight.

  2. Preheat the oven to 425.

  3. Grease a shallow pan. Take the chicken out of the marinade and spread it in a single layer on the pan, and top with the onions (sliced or quartered). If you kept the garlic in larger pieces, fish those out of the marinade and strew them over the chicken. Cook for 45 minutes or more. 

  4. Chop up the chicken a bit, if you like, and finish cooking it so it crisps up a bit more.

  5. Serve chicken and onions with pita bread triangles, cucumbers, tomatoes, assorted olives, feta cheese, fresh parsley, pomegranates or grapes, fried eggplant, and yogurt sauce.

Happy Friday! We had so much yummy food this week, and I can’t wait to tell you about it! So I won’t! I mean I won’t wait! Here’s what we had: 

SATURDAY
Leftovers and pizza pockets for kids, steak dinner for adults

Saturday Damien and I went tent camping! It wasn’t that far from home, but it was rural enough that there was no cell phone or internet service. So I put my phone in my purse and I didn’t take it out again for twenty hours. (If you felt a disturbance in the universe, that’s probably what it was.) So I have zero pictures, and zero regrets about that. 

It was glorious. It felt like my brain was being bathed in cool, refreshing water. We just slowwwwed down and did very little. Well, I did very little. Damien did all the packing and made all the arrangements and blew up the air mattress and set up the tent, and he also shopped for and cooked a wonderful meal: Good cheese and good bread and fresh berries for starters, and then he cooked two steaks over the fire. We had some good sharp ginger beer along with it. After we ate, we just sat and stared at the fire, and then we walked to the nearby field and looked at the stars for a bit, and then we went to bed. Magnificent.

The only sour note was the way acorns kept falling from the trees. I know that sounds like a very basic bitch thing to complain about (very “scenery is not breathtaking”), but these were the biggest acorns I have ever seen, and they were firing down from the trees like artillery. I’ve never seen anything like it, and I was genuinely afraid of getting hit. The weirdest thing was, I couldn’t figure out which tree they were coming from! We were surrounded by maples and evergreens, but there was still this invisible oak tree trying to kill us all night. It was truly alarming, and it actually woke me up about fifteen times. But even so, the first thing I thought in the morning was, “We have to do this again soon.” I really love sleeping outside, even if I barely sleep. 

Last time we went camping, we brought the coffee machine, but the battery pack turned out not to be strong enough to power it. This time, we brought a little propane camp stove and a French press, and Damien made coffee and toasted some bagels and fried some bacon over the fire, and brought me a lovely breakfast in tent. 

These are campsites that you park at, and there are other sites fairly close by. The guy across the road from us, for instance, was chopping and sawing wood when we arrived, and he continued to chop and saw wood for hours. And hours. He just kept chopping and sawing and stacking wood, chopping and sawing and stacking wood. Sometimes he would take a break for a while, and then we’d hear the saw start up again. So of course every time, we muttered, “He’s at it again!” and “Lass ihn, lass ihn!” but it was just weird. We figured maybe he promised his wife they could absolutely talk about The Thing, definitely, babe, as soon as he got some wood chopped. Just gotta chop some wood first. What, does she want them to freeze? Then she wakes up the next morning and the entire forest has been felled, and he’s still chopping. 

Anyway, we were thinking next time we might go to a more remote spot. They have campsites with platforms and I think maybe even pit toilets, but you have to hike to them — so no backing up to your site and unloading a million supplies onto a picnic table, but you have to carry it on your back. I think we can do it! Probably won’t be bringing fresh blackberries and a french press, but maybe we will. 

SUNDAY

So we went to Mass at a local church, and the kids at home were all sick, so they stayed home. We were both pretty tired when we got back, but Damien did a million jobs anyway — he did some work on some rotten soffits, and I think he worked on someone’s car,  winterized the pool, set some traps, and yes, he chopped some wood. For the wood stove in his office! Just a normal amount of wood. 

I got busy with the pressing task of rearranging my skeletons. I had an ambitious idea of setting them up on one of those see-saw swings, suspended from a tree, but blah blah blah it was harder than I thought; so I ended up just perching three of them together up in a tree, and they do look like they’re having fun. This year’s new skeleton, Mortadella, I arranged on top of one of our defunct cars, with a young skeleton on his shoulders. I’m not completely happy with them right now, so I’ll probably rearrange them. Anyway, Instacart never has trouble finding our house anymore. 

I truly forget what we had for supper. Oh wait, it was chicken quesadillas. I bought a rotisserie chicken for this because I figured we’d want something quick and easy, and I was right! 

MONDAY
Ziti with sausage and Alfredo sauce

Monday I made my very first Alfredo sauce. I can’t understand how it is that I’ve never made it before, but wow, it is delicious and easy. I followed this recipe from Sip and Feast, and all you do is put butter, cheese, and cream in a bowl (the cream makes it not 100% authentic, but oof it was good), dump your cooked pasta on top of it and mix it up with a little reserved hot pasta water. 

I cooked up a bunch of sausages and added those in with the pasta, and it was fantastic. Totally worth grating some cheese fresh while the pasta is cooking. (Those wedges of parmesan from Aldi have changed my life in a minor but undeniable way.)

Note, I was eating outside with a book. I have been trying to prolong the no-phone brain-rinse effect as much as possible. 

The kids were not impressed with the Alfredo sauce, and I anticipated this, so I made a pound of plain pasta and set aside some plain sausages and grated cheese. And all was well. 

Also on Monday, I finally managed to finish cleaning the pot I burned last Saturday making applesauce! I soaked it for the longest time and attacked it with every tool I could get my hands on, but it still looked like this:

so I dumped in a bunch of baking soda and water and dish soap and let that simmer for several hours. I actually forgot about it and it cooked itself dry, so I ended up having to scrub the baked-on soapy baking powder as well as the burned-on applesauce, but I did it. 

Phew. I really liked that pot. I got it on the side of the road, along with two other very big pots. The only thing I don’t like about them is that they’re so big, it’s hard to find a spot for them. WHICH IS NO LONGER A PROBLEM, AS YOU WILL SEE. 

TUESDAY
Pulled pork, tater tots, roast butternut squash rings

Tuesday I got a pork butt cooking in the morning for pulled pork.

Cut it up, heavy salt and pepper, sear it in a pan, and then dump it in the Instant Pot with cider vinegar, apple cider, cumin, ground cloves, jalapeños, red pepper flakes, and a quartered onion. I think I cooked it for 18 minutes on high and then let it just keep warm the rest of the day.

When it was close to suppertime, I pulled the meat out of the liquid and shredded it in the standing mixer

 

and then added back a little bit of that savory broth it was cooking in. 

My knock-off Instant Pot (I think it’s called Potastic or something) is doing great, by the way. And now the silicone ring smells permanently like cumin and onion, so it’s officially mine. 

I made a few bags of tater tots and a pan of butternut squash rings. It being squash season, I will remind you that it’s way way easier to peel and cut butternut squash if you cut off the ends and/or jab it all over with a fork, and throw it in the microwave for three minutes. Comes out way more compliant!

So I cut the peeled squash into circles and rings (I sliced it into rings first, and then  removed the seeds and pulp by pressing them hard with a mason jar ring), laid them on a pan on parchment paper, and drizzled it with honey, olive oil, cumin, cinnamon, and salt. I just roasted it under the broiler, and it came out lovely. 

I also indulged in some incredibly vulgar jarred cheese product to top it all off. So I had a heap of tater tots, shredded pork on top of that, and topped with BBQ sauce and hot cheese sauce, with squash on the side. 

It was so good. The only thing that would have made it better would have been to eat it out of a little cardboard boat with a plastic fork. I did eat it outside, anyway. Getting as much outdoor time as possible as the temperatures drop. 

The squash was great, too! I do love squash, ever since I ate it for the first time in the hospital a few hours after giving birth to Corrie, who also loves squash. 

WEDNESDAY
Nachos

You know it’s gonna be a top notch meal when I defrost The Chub.

You know which one: The one with the opaque wrapper with a photograph of meat on the outside, and a picture of a cow.

I made two trays of what I am recklessly calling “nachos” — one with just tortilla chips, unseasoned ground beef, and shredded cheese on top, and one with chips, seasoned meat (salt, pepper, garlic powder, onion powder, cumin, paprika, chili powder), jalapeños, shredded cheese, and the rest of that horrible yellow cheese sauce.

They were magnificent nachos, just like 7/11 used to make. 

I think it was also Wednesday that I suddenly got really mad and cleaned out the refrigerator. It was truly foul, and it’s so unnecessary for it to get that way! I have this wonderful system where all the jars and bottles go in the two tubs in the bottom (I long ago replaced the cracked and shattered original vegetable drawers with plastic bins from Walmart), and all the vegetables and herbs go in the door. IT’S SO EASY. Everything is visible and accessible, and I have one tub for dairy products that come in cartons, two tubs for cheese, and one for deli meat; and I let them put leftovers in ZIPLOCK BAGS. Could not be easier. But they insist on putting tops on halfway and laying things diagonally on top of a bag of spaghetti, so everything drips and drools and oozes downward, and the bottom of the fridge slowly fills up with a sticky, unspeakable sludge. Oh, I was so mad. I’ve been mad about this for almost thirty years, and I’m not done yet! Anyway, I cleaned the fridge. 

To clarify: I do clean it more frequently than every thirty years. You know what, let’s move along. 

I also picked the last of the peaches. They were so ripe that I didn’t have to blanch them to pull the skins off. I cut the flesh into chunks, threw it in the blender, and then simmered the pulp. Oh, what a color!

Then I realized I’m really big on burning things these days, so I transferred it to the slow cooker and set it to keep warm, and let it cook the rest of the day.  This will be for today’s dinner.

And that’s the end of peach season! It’s definitely a B year for my peach tree. Next year I expect to have a whole lot more fruit. 

Oh, I also cut up the second pork butt I bought (I forget the exact number, but it was a heck of a sale) and started it marinating for Thursday. 

THURSDAY
Banh mi

Thursday morning, I was like, “Okay, stupid, it’s time to put away that wood that’s been sitting on the dining room table all week. You had your chance to finish building those shelves, and you’re clearly not gonna do it, so just put the freaking wood away.” But then I was like, “But, let’s just see.”

And it turns out I finished building the shelves! Hooray! 

This looks very grimy and broken-in because I used wood we already had lying around. That’s right, I DIDN’T GO TO HOME DEPOT. I made some clownishly scalloped edges and absurdly crooked screws, but! this is a space that was once just a musty, greasy void, where springform pans and sifters went to die, and now it’s a three-layer built-in shelf that goes all the way back

so it’s not gonna fill up with irretrievable measuring spoons and onion skins and candy thermometers. And I finished it in time to pick up the kids who had a half day. So I feel pretty great about it all. 

The top shelf is very narrow because it’s just for pizza pans and cutting boards, which tend to get lost; and the bottom shelf is very tall because it’s just for my beloved giganto stock pots. Hope springs eternal! I also attached the bottom shelf with just a few screws, so we can take it out if there’s a leak or something, and we need to get in there. Eventually I will line the shelves with linoleum or something, and I’m gonna sand and stain the wood. In theory. Why rush? Maybe I’ll just think about it for thirty years. 

So the day before, as I said, I had made the marinade and sliced up the pork for banh mi.

You can see that I double bagged it, because it has a lot of garlic, onion, and fish sauce in it. I was actually a little short on fish sauce, so I supplemented with soy sauce, but didn’t notice any difference.  Still plenty stinky.

In the afternoon, I made a big batch of quick-pickled carrots

chopped up a bunch of cucumbers and cilantro, and sliced a bunch of baguettes. I took the meat out of the marinade and spread it on a pan on parchment paper, and shoved it right up under a hot broiler. It doesn’t take long to cook, because it’s cut thin and I had marinated it over night. 

Oof, it was so tender and so savory. I put out jalapeños and mayonnaise with the carrots, cukes, and cilantro, and toasted the buns in the last few minutes as the meat finished cooking, and hoooo boy. What a sandwich. 

I probably won’t be making this again for quite a while, because some family members really truly do not like the smell, and we all gotta live here. But I enjoyed that sandwich. 

FRIDAY
Peach waffles, eggs, OJ

Today, we’ll be having homemade waffles, which — dang, I thought I had made a recipe card, but I guess not. Well, it’s basically this

and for anyone who wants it, I will make peach-filled waffles. I mean anyone who lives here, sorry.

You grease the waffle iron, put a thin layer of batter on, then add the filling

then top it with a little more waffle batter and close the iron. This is a picture from  last year, made with what was basically peach pie filling;

This time, I just have the cooked-down peaches, and I didn’t add anything, because they’re so sweet. Sweet and fleet! That’s peaches. 

I bought a huge amount of eggs, and I can’t remember why, so I guess I’ll make a big batch of scrambled eggs for supper, and orange juice. 

Speaking of eggs, one of our newbie duckies has started laying! Did I already tell you that? I’m not sure if it’s Shaq or Tulip, but we got three eggs in one day, and there are only two adult females (Annie and Ray), so there you go. See if you can guess which egg was laid by the beginner. 

Ducks so crazy. 

Well, I also have some very cool news to tell you about, but it’s not 100% official yet, so I’ll hold off! But you know what, God is being really sweet to me this week. There have been at least three separate things that I’ve been like, “Ughhhhh, I have to do this hard thing. Okay. Okay. I can do it. I’m gonna do it, in a minute. But it’s harrrrd!” and then suddenly I get a little help, something that makes me want to do the thing. Amazing! 

And now, Damien’s covering adoration for me so I can get caught up on writing. So that is what I’m gonna do! Smell ya later.

Pork banh mi

Ingredients

  • 5-6 lbs Pork loin
  • 1/2 cup fish sauce
  • 3/4 cup sugar
  • 1 minced onion
  • 1/2 head garlic, minced or crushed
  • 2 tsp pepper

Veggies and dressing

  • carrots
  • cucumbers
  • vinegar
  • sugar
  • cilantro
  • mayonnaise
  • Sriracha sauce

Instructions

  1. Slice the raw pork as thinly as you can. 

  2. Mix together the fish sauce ingredients and add the meat slices. Seal in a ziplock bag to marinate, as it is horrendously stinky. Marinate several hours or overnight. 

  3. Grill the meat over coals or on a pan under a hot broiler. 

  4. Toast a sliced baguette or other crusty bread. 

quick-pickled carrots and/or cucumbers for banh mi, bibimbap, ramen, tacos, etc.

An easy way to add tons of bright flavor and crunch to a meal. We pickle carrots and cucumbers most often, but you can also use radishes, red onions, daikon, or any firm vegetable. 

Ingredients

  • 6-7 medium carrots, peeled
  • 1 lb mini cucumbers (or 1 lg cucumber)

For the brine (make double if pickling both carrots and cukes)

  • 1 cup water
  • 1/2 cup rice vinegar (other vinegars will also work; you'll just get a slightly different flavor)
  • 1/2 cup sugar
  • 1 Tbsp kosher salt

Instructions

  1. Mix brine ingredients together until salt and sugar are dissolved. 

  2. Slice or julienne the vegetables. The thinner they are, the more flavor they pick up, but the more quickly they will go soft, so decide how soon you are going to eat them and cut accordingly!

    Add them to the brine so they are submerged.

  3. Cover and let sit for a few hours or overnight or longer. Refrigerate if you're going to leave them overnight or longer.

 

 

 

What’s for supper? Vol. 412: Food of America

Happy Friday! Happy Valentine’s Day! Damien and I are GOING OUT DANCING! Or, well, we are taking our kids to the school dance, presumably to watch the girls text each other and giggle, and the boys shove each other, and the little kids chase each other under the tables. I was discouraged (by my kids) from bringing in food, so none of this, this year:

I went to a Valentine’s Day dance in middle school, which was such a long time ago, it was still called “Junior High.” It was my first dance ever, and I had read a lot of Archie Comics, so I borrowed my sister’s bright pink dress with the flared skirt, paired with a wide, glossy, black plastic belt with a gold heart-shaped clasp, and a pair of pink heart earrings. I nervously crept through the door of the gym, and a teacher chaperone immediately cried, “Oh, don’t you look nice!” Which is how I knew I had worn the Wrong Thing. 

Thanks, brain, for remembering that in excruciating detail. So important.

Anyway, boy am I glad to be an adult. And you know what is important? Food! Here’s what we ate this week: 

SATURDAY
Leftover buffet with dino nuggets

The forecast warned us of a big storm Saturday night, so we went to the vigil Mass. But first it was the shopping turn of a child who made me very proud by picking out the things SHE WANTED, and steadfastly rebuffing the howls of complaints from her older sisters. For her frozen food supplement to leftover day, she picked dino nuggets because that’s what sheeee wanted. 

They also gave her a hard time about the weekend cereal and the desserts she chose, but she didn’t crumple. For real, being a teenage girl and actually expressing what you want, and sticking to it when your peers don’t like it, is almost heroic.

Also heroic was the leftover coconut chicken curry. I ignored all the other leftovers and just stuck with the curry, and oh my dammit, it was amazing.

Next time, I may make curry ahead of time just to have it several days old on purpose, because it was really great the first time, but as leftovers, it was MAGNIFICENT. 

SUNDAY
Buffalo wings and blue cheese dip, Doritos, hot pretzels, raw veggies

The big snow came as forecast, and in the midst of all that brilliant white, my pesky lingering headache turned into a full-blown migraine, so I noped out of shoveling and went back to bed. Bless Damien for making me feel like this was a reasonable thing to do. 

But I was feeling better by the afternoon, and it was, of course, the Super Bowl. We didn’t care about either team, but we do like hot salty football food, so I made some hot pretzels using the King Arthur recipe.

I’ve made it before, and it’s pretty easy, and they come out delicious, although they never really look like the picture, probably because I’m too impatient to roll the dough out into long enough snakes before shaping them. (And no, I never did get dressed, as you can see.) 

Anyway, you make the dough and let it rise (I used the slow cooker on “keep warm”), then cut the dough into lumps

And by the way, this is around the time of year last year I got my new-to-me cabinet and marble countertop from Marketplace, and it’s been SUCH a boon. I set it slightly lower then the other countertops, so it’s very convenient for things like kneading dough or decorating cakes. I have short legs, whatcha gonna do.

If you look closely, you will see that I have discovered PVC pipe as the universal solution. 

So I have been continuing my decluttering tour, which launched, hmm, right around the time of the inauguration, for some reason. It’s turned less maniacal now and a little more grim this week, but I’m determined to deal with all the worst spots in the house by the end of February. So far I have cleared out the landing and turned it into a playroom, cleared out the laundry room, fixed and cleared out the white cabinet/craft area, re-hung the curtains in front of the gaps in the kitchen cabinets, and done lots and lots of scouring and scrubbing in both bathrooms and the oven, and also stuff like replacing a bunch of old smoke alarms and whatnot. And, I bought my very first Swiffer.

I have come to loathe this piece of furniture, and will replace when I can. But organizing it it led to shifting around some other stuff in other parts of the kitchen, and I had the revelation that the kid’s water bottles can go LOW DOWN ON THE BOTTOM SHELVES, and my seltzer and Damien’s soda can go AT WAIST HEIGHT because WE ARE OLD and OUR BACKS HURT. A lot of stuff in this house is still set up to keep meddling toddlers out of stuff, and we may have some problems right now, but not that! 

Okay, so anyway, the pretzels turned out nice! You brush them with melted butter when they come out of the oven, and they’re super soft and chewy and rich. 

Damien made a big pile of his excellent hot chicken wings with blue cheese dipping sauce. Here’s that recipe:

He actually made some hot, some with BBQ sauce, and some plain; and I had the kids chop up a bunch of veggies, and I bought NAME BRAND Doritos. 

An extremely delicious meal. 

We scored some points with the teenagers by enjoying the halftime show, too, and I liked that guy’s pants. 

MONDAY
Spaghetti and meatballs

Every year when I do the shopping around Super Bowl Sunday, there is, of course, lots of football-priced ground beef available(it was $2.99 a pound here), and I cleared out the freezer a bit so I could stock up on that. And something about buying all that beef shifts my food thoughts into irresistibly American channels, so we had some of the saltiest, meatiest, least ethnically diverse meals imaginable this week. The kids have been pretty happy.

TUESDAY
Pulled pork, tater tots, corn

Tuesday we had a thing in the morning, so I started pulled pork early. Here is my tasty pulled pork recipe:

Came out of the pot niiiiiice and tender. 

so I shredded it up

and put it back in the pot with the juice, to stay warm, while I cooked the tater tots, and also one bag of hilariously overpriced heart-shaped potato . . . things. I guess I was planning to serve this on Valentine’s Day, but this was Wednesday, I dunno. They were actually pretty good. Basically mashed potato in a crisp skin, same as those smiley fries. 

The kids had pulled pork sandwiches in deli rolls, but I had my preferred mode: Hot Pork Heap. Tater tots, then pulled pork, then corn, then red onion, the BBQ sauce. You can spot the potato hearts over to the left. 

This is also really good with some of that disgusting melted yellow cheese stuff that comes in a jar, but some of us are watching our figgahs. 

WEDNESDAY
Pizza

Wednesday I actually did some writing for once in my life, and completely lost track of time and had to ask Elijah to make the pizzas. Got home around 5:30 and finished them up, using, as you can see, the leftover meatballs, with pepperoni in between. 

Yum. 

THURSDAY
Burgers and chips

Just regular hamburgers, which I make in the oven on a rack like the meatballs, but right up under a hot broiler. 

On Wednesday, one of the schools called a snow day for one school on Thursday, and the two other schools said it would be a two-hour delay. Damien proposed a Fisher Flop-Out. I’m not saying I married him because of his ability to make up names that don’t quite mean anything but make me laugh, but I will say that this is the man who once called his kids “a bunch of freshwater jerks,” and THAT’S EXACTLY WHAT THEY ARE. So Thursday came and, while we slept, the other schools decided it made more sense to have a full snow day, so there you go. Fisher Flop-Out!

FRIDAY
Quesadillas, chips and salsa

I guess the kids at home can fend for themselves, actually, because as I mentioned, we will be out dancing our fool heads out, or anyway watching teenage girls texting each other while standing next to each other. It’s a pretty sweet life, even without the yellow melty cheese. 

Hot chicken wings with blue cheese dip (after Deadspin)

Basic, tasty hot wings with blue cheese sauce

Ingredients

  • chicken wingettes
  • oil for frying

For the hot sauce:

  • 1/2 cup butter
  • 1/8 cup tabasco sauce
  • 1/8 cup sriracha sauce
  • salt
  • vinegar (optional)

Blue cheese sauce:

  • sour cream
  • blue cheese
  • optional: lemon juice, mayonnaise
  • celery sticks for serving

Instructions

  1. Fry the wingettes in several inches of oil until they are lightly browned. Do a few at a time so they don't stick together. Set them on paper towels to cool.

  2. Melt the butter and mix together wit the rest of the hot sauce ingredients. Toss the wings in the hot sauce.

  3. Mix together the sour cream and crumbled blue cheese. Use a food processor or whisk vigorously to break up the blue cheese. You can add lemon juice or a little mayonnaise to thin it.

  4. Serve with blue cheese dip and celery sticks.

 

Meatballs

Make about 100 golf ball-sized meatballs. 

Ingredients

  • 3 lbs ground meat (I like to use mostly beef with some ground chicken or turkey or pork)
  • 4 eggs, beaten
  • 2 cups panko bread crumbs
  • 4 oz grated parmesan cheese (about 1 cup)
  • 1/4 cup Worcestershire sauce
  • salt, pepper, garlic powder, oregano, basil, etc.

Instructions

  1. Preheat oven to 400.

  2. Mix all ingredients together with your hands until it's fully blended.

  3. Form meatballs and put them in a single layer on a pan with drainage. Cook, uncovered, for 30 minutes or more until they're cooked all the way through.

  4. Add meatballs to sauce and keep warm until you're ready to serve. 

 

Clovey pulled pork

Ingredients

  • fatty hunk of pork
  • salt and pepper
  • oil for browning
  • 1 cup apple cider vinegar
  • 2/3 cup apple juice
  • 3 jalapeños with tops removed, seeds and membranes intact
  • 1 onion, quartered
  • 2 Tbsp cumin
  • 1 tsp red pepper flakes
  • 2 tsp ground cloves

Instructions

  1. Cut pork into hunks. Season heavily with salt and pepper.

  2. Heat oil in heavy pot and brown pork on all sides.

  3. Move browned pork into Instant Pot or slow cooker or dutch oven. Add all the other ingredients. Cover and cook slowly for at least six hours.

  4. When pork is tender, shred.

Happy Friday!  I’m feeling so good because I just exercised. I regret to inform you that this is a thing. (And I am grateful I have the time and health to be able to exercise! That’s not something everyone has.) 

I did one of Alba Avella’s 30-minute yoga power flows on YouTube. It starts slow, and you don’t ever move fast, but I was schvitzing by the end, let me tell you. 

And now let me tell you what we ate this week!

SATURDAY
Hot dogs and leftovers

It was pretty great when they started selling a store brand version of those natural casing hot dogs. Damien and I really like hot dogs, but our kids don’t! Isn’t that weird? Is this a generational thing? Anyway we occasionally foist hot dogs on them. 

We also had leftover chicken soup with orzo, leftover risotto, and leftover garlic cinnamon roast chicken, from last week

(I have given up clearing the table for dinner. If people want a table that doesn’t have their crap all over it, they can go right ahead.)

The new refrigerator system is working out really well! It’s simple enough that the kids can clearly tell where things go, but organized enough that it’s really making a difference to me. I’ve also instituted a ruthless throw-away policy for food. I make one attempt to serve it as leftovers, and then it goes in the trash. This has always been the plan, but now it’s a policy.

Anyway, I know it’s only been a little over a week, but that’s more than enough time for a new system to go completely to hell, and that hasn’t happened yet.

SUNDAY
Pulled pork, tater tots, mashed acorn squash, collard greens

Sunday I was gonna do an easy, literally peasy meal of ham, peas, and mashed potatoes, but a kid had a friend over, and it turned out I only had three potatoes in the house. I floated the idea of making soup and muffins, but was informed that being invited over for dinner and then being served soup was not . . . rizzly, or whatever. Very un-totes m’goats. I don’t know what I’m saying. 

So I made pulled pork with this nice, easy recipe

which I did in the Instant Pot, but you could also do in the oven or slow cooker, if you give it long enough. I served it with potato rolls, but I just had mine over tater tots with red onions. I do like food that comes in heaps. 

For sides, I roasted another acorn squash from the garden, with olive oil and salt, and then mashed it with brown sugar and powdered ginger. And I gathered up one of the last bunches of collard greens from the garden (there’s a lot left, actually, but most of it has been pretty ravaged by slugs) and cooked them on the stovetop, more or less following this recipe, but decreasing the liquid smoke. 

Dang, it was a good meal. I think I was the one who ate the collards, and I think only one other person ate the squash, but I expected that, so I don’t make giant vats of food this time. I can learn! 

MONDAY
Ham, peas, mashed potatoes

Monday I don’t even remember what happened, but I didn’t get home until like 5 PM. The perfect day for already-cooked ham, frozen peas, and instant mashed potatoes!

It’s such a self-explanatory meal, I don’t have anything to say, except that you can carve up a pre-cooked ham before putting it in the oven, and it heats up much faster. 

After dinner, the kids went out back to finally pick pumpkins. I’ve been worried they’re going to get mushy or cracked if they stay on the vine too long, and one of them — the biggest one, sadly — did have a big rotten spot. So the ducks got that one. 

We did find fifteen nice intact ones, though, good and orange and decently sized. 

There are still about six on the vine, still partially green. This has probably been the most satisfying garden experience I’ve ever had! Most definitely saving the seeds from this batch and doing it again next year. 

The last thing to harvest will be dozens of useless gourds. I wouldn’t classify that as “satisfying,” exactly, but it sure is a lot of gourds. 

I should probably mention that we have sad news about EJ. He got a foot injury some time ago, and we tried to treat it in various ways, and he kept looking like he was getting better for a while, and keeping up with the group and enjoying life even though he had been supplanted by Coin as the leader; but then he’d lose ground again. This happened a few times, but the other day it became pretty clear that he was at the end of the road, so Damien had to put him down. The kids fed him some peas and stroked his head and said their goodbyes first. Poor EJ. He was my favorite duck. Always an adventurer, but not a monster. I do think it’s better to have just one male in the flock, and Coin has calmed down a bit and is less of an a-hole lately. But we will miss EJ the valiant. He was so dumb, but he was a good boy.  

Ah, well. 

TUESDAY
Roast beef salad with pears, feta, and candied pecans

Oh, I love this meal. It was either top or bottom round roast that was on sale, so I bought two good-sized hunks. I took one and really crusted it with lots of salt and pepper, and then seared it in very hot oil, along with several cloves of garlic.

Then I covered it with tinfoil and put it in a 350 oven for about forty minutes. We got distracted and it got a little overdone, but it was still yummy. 

I sliced it up and served it with salad greens, candied pecans, feta cheese, diced red onion, homemade croutons, and sliced pears. 

I’m always surprised at how quick it is to candy nuts. I cannot for the life of me find the recipe I followed, but it was SO simple.  Obviously you can get fancy and add all kinds of spices, or do an egg white thing to give the nuts extra texture, but the one I did was just heat up some brown sugar and water in a pan and heat it up until it’s bubbly, add the nuts, and cook and stir them until they’re coated. Maybe there was some butter in there? Then spread them out on parchment paper and let them cool and harden for a few hours. 

I added a little chili powder, but it turned out not to be enough to taste. 

Anyway they tasted great and it was an unexpected treat to dress up the salad.

WEDNESDAY
Beef barley soup, pumpkin muffins

Wednesday I used the other hunk of beef and made soup.

I forgot to buy mushrooms, and we didn’t have wine in the house, but it still turned out lovely. 

While it was simmering, I made a batch of pumpkin muffin batter

and was congratulating myself on how well I had distributed the batter into the 24 muffin tins. It came out so tidy and exactly even. See?

Oh wait, this is actually a photo of raw muffins that I foolishly set on a stool while I went to write a quick email, and when I got back, SOMEONE, perhaps someone about the height of a large boxer, had licked the nine most reachable muffins on two sides of the pan.

He’s not a naughty dog, but he has his limits. 

So I just baked the muffins anyway, and threw out the nine with obvious tongue marks on them, because it was easier to remove them when they were baked!

The remaining muffins turned out nice, cozy and tender

and it was a very pleasant meal for a chilly day.

I actually wish I had cut the meat into smaller pieces. I thought I was making it kind of lavish, with big pieces of meat, since I had more meat than I usually do; but it actually would have been better if they had been smaller. Still good! Just less balanced. 

Wednesday I also finally got around to making applesauce out of the apples we picked off Marvin. 

They’re pretty poor apples, as you can see, because I don’t do even one single thing to take care of this tree. But I usually make a batch of applesauce, by quartering the apples and setting them to simmer in a pot for a few hours with a cup of water or so. Then when they get mushy, I run them (cores and peels and all) through a food mill and add a little cinnamon, and sugar if necessary to the applesauce that comes through. 

This year I forgot what I was doing and burned it. Very sad! We’ll have to make applesauce when we go apple picking, because nothing beats homemade applesauce. 

THURSDAY
Regular tacos

Thursday Corrie had Cub Scouts at 5:30, so I cooked up some taco meat in the morning and Damien heated it up for the rest of the family while we were out. I was a little annoyed because I couldn’t find cumin, and I know I have cumin. I always have cumin. I was so miffed about not being able to find it that I forgot to add any salt, and that turned out to make much more of a difference than missing cumin! What do you know about that. What an amazing story. 

FRIDAY
Waffle iron grilled cheese, tomato soup

I am going to try making the grilled cheese in the waffle iron, but if they don’t like it, I can easily just do the rest on the stovetop as usual. 

It will be just canned tomato soup. I think the kids actually prefer it to my homemade tomato soup, which I understand. I enjoy and appreciate more nuanced, sophisticated meals made from scratch with fresh ingredients, but I also very clearly remember being a kid and wanting things to taste exactly the same every single time, and for that taste to be either sweet or salty, and for it not to have any damn chunks in it. Grown ups are always putting chunks of things in food, and it’s tiresome. I mean I remember how tiresome it feels, even as I actively put chunks in food.

I do have a can of those crunchy fried onions if anyone wants to sprinkle them on top of the soup. Crunchy is different from chunky! And I did bring in my big pots of basil, hoping to keep them going over the winter. So perhaps a little sprinkle of little basil leaves. If desired. 

When I was little, we had this cookbook of recipes kids could make without help, and the only one I remember is a can of condensed tomato soup heated up without water, but with shredded cheddar cheese that you melt into the soup to make a thick sauce. You pour this over rye toast, and enjoy.

If anyone can think what this cookbook might possibly be, I’d love to know! I can’t remember any other recipes from it, but I think it had stylized pictures of kids with chef’s hats, and possibly a chic black cat, on the cover. Very much in this mode:

It must have been from the 60’s or 70’s. I did spend some time in this searchable collection of vintage cookbooks and didn’t see it, but hoo boy there are some doozies.

Clovey pulled pork

Ingredients

  • fatty hunk of pork
  • salt and pepper
  • oil for browning
  • 1 cup apple cider vinegar
  • 2/3 cup apple juice
  • 3 jalapeños with tops removed, seeds and membranes intact
  • 1 onion, quartered
  • 2 Tbsp cumin
  • 1 tsp red pepper flakes
  • 2 tsp ground cloves

Instructions

  1. Cut pork into hunks. Season heavily with salt and pepper.

  2. Heat oil in heavy pot and brown pork on all sides.

  3. Move browned pork into Instant Pot or slow cooker or dutch oven. Add all the other ingredients. Cover and cook slowly for at least six hours.

Beef barley soup (Instant Pot or stovetop)

Makes about a gallon of lovely soup

Ingredients

  • olive oil
  • 1 medium onion or red onion, diced
  • 1 Tbsp minced garlic
  • 3-4 medium carrots, peeled and diced
  • 2-3 lbs beef, cubed
  • 16 oz mushrooms, trimmed and sliced
  • 6 cups beef bouillon
  • 1 cup merlot or other red wine
  • 29 oz canned diced tomatoes (fire roasted is nice) with juice
  • 1 cup uncooked barley
  • salt and pepper

Instructions

  1. Heat the oil in a heavy pot. If using Instant Pot, choose "saute." Add the minced garlic, diced onion, and diced carrot. Cook, stirring frequently, until the onions and carrots are softened. 


  2. Add the cubes of beef and cook until slightly browned.

  3. Add the canned tomatoes with their juice, the beef broth, and the merlot, plus 3 cups of water. Stir and add the mushrooms and barley. 

  4. If cooking on stovetop, cover loosely and let simmer for several hours. If using Instant Pot, close top, close valve, and set to high pressure for 30 minutes. 

  5. Before serving, add pepper to taste. Salt if necessary. 

 

Pumpkin quick bread or muffins

Makes 2 loaves or 18+ muffins

Ingredients

  • 30 oz canned pumpkin puree
  • 4 eggs
  • 1 cup veg or canola oil
  • 1.5 cups sugar
  • 3.5 cups flour
  • 2 tsp baking soda
  • 1.5 tsp salt
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • 1/2 tsp ground cloves
  • 1/4 tsp ground ginger
  • oats, wheat germ, turbinado sugar, chopped dates, almonds, raisins, etc. optional

Instructions

  1. Preheat oven to 350. Butter two loaf pans or butter or line 18 muffin tins.

  2. In a large bowl, mix together dry ingredients except for sugar.

  3. In a separate bowl, mix together wet ingredients and sugar. Stir wet mixture into dry mixture and mix just to blend. 

  4. Optional: add toppings or stir-ins of your choice. 

  5. Spoon batter into pans or tins. Bake about 25 minutes for muffins, about 40 minutes for loaves. 

 

 

What’s for supper? Vol. 386: What to cook when it’s too hot to cook

My goodness, it has been hot. So very hot. I know it’s not like Florida or Houston or whatever here, but in New Hampshire, we have made certain trade-offs. Our growing season is four days long! Sometimes in the winter, I have to scrape off the inside of my windshield!  Our heating bills are so high, we conserve energy by only listing two things in a joke, rather than the classic three!

And so we don’t expect to get frizzled for a week at a time like this. 

But that is what happened. So I tried my best to feed everyone without adding extra heat to the house with the oven or stove. Here is what we had: 

SATURDAY
Muffaletta sandwiches, chips

I don’t really have a recipe for the olive salad. I think I used two cans of black olives, one jar of green olives, maybe a jar of kalamata olives, red wine vinegar, olive oil, and maybe some red onion. Maybe some jalapeños or possibly banana peppers. Probably some red pepper flakes. Those figured heavily into my meals this week. 

And then we just had, I don’t even know what, capicola, pepperoni, ham, provolone, maybe some prosciutto. And we had it on sweet Hawaiian buns.

Close enough. And no oven!

I do like these sandwiches, and I made tons of olive salad and just snacked on it all week. Mmm.

SUNDAY
Southwest chicken salad

I drizzled some chicken breasts with olive oil and sprinkled them heavily with Taijin chili lime seasoning, then broiled them. Cut it up and served it on salad greens with cherry tomatoes, shredded pepper jack cheese, and crunchy fried onions, with chipotle ranch dressing, and some of those “street corn” corn chips on the side. 

Very decent salad. It would have been good with that embarassingly-named Mexicorn, or even some beans, but it was nice as it was. 

MONDAY
Tortellini salad, crackers, watermelon

New recipe! I saw it on Sip and Feast and didn’t see how it could possibly be bad. I more or less followed the recipe, except I used capicola instead of sopressata, but I did have some nice peppered hard salami, and all the rest: Spinach, fresh basil, fresh mozzarella, kalamata olives, and cherry tomatoes, and then the dressing is made of red wine vinegar, olive oil, honey, Dijon mustard, oregano, red pepper flakes, garlic, salt, and pepper. 

I cut a watermelon into chunks and put out some boxes of crackers, and it was a really good little summer meal.

 I would eat this way all summer if I could. I did snack on the tortellini salad for the rest of the week, along with the olive salad, and they both got better as the week went on. 

On Monday night, Benny and Corrie and I finally got around to doing this dumb TikTok recipe we saw, called Orange Milk Jelly

This consists of peeling some tangerines or clementines, impaling them on a straw or chopstick inside a bottle

then simmering together some milk, sugar, and unflavored gelatin and filling up the bottle.

I had a lot of extra milk mixture, but we didn’t have another bottle to use as a mold for another orange stack, so we cut up some peaches and put them in a ziplock bag with the rest of the milk. 

We stuck these monstrosities in the refrigerator and walked away. 

TUESDAY
BLTs, ice cream pie

Tuesday was Lucy’s birthday, so Damien braved the hot kitchen and fried up a ton of bacon for the requested BLTs. She and her sisters made some ice cream pies in the morning so they would be frozen by evening.

If you haven’t made ice cream pies, you can shop for ingredients, but they’re also a good way to use up little bits of leftover this-and-that from various desserts. I usually start with a graham cracker (or Oreo) crust, but if they freeze long enough, you can make them crustless (or make a simple crust with graham crackers, sugar, and melted butter whirred in a food processor, pressed into a pie plate, and baked for ten minutes or so).

You mash up the ice cream in a bowl with a potato masher until it’s the consistency of soft serve, and then spread that in the crust, and festoon it with whatever you like, anything you might put on a sundae.  Then freeze it for several hours until it’s solid enough to cut into wedges. 

She requested blackberry ice cream and coffee ice cream, gummy bears and worms, Skittles, and mini marshmallows. That sounds like a weird combination, and it is! But she was happy.

Me oh my, another birthday. 

We also got the milk jelly thing out of the bottle by running hot water over the outside and shaking it violently. It did emerge in two parts — lovely, winsome-looking parts, if I may say so —

and we sliced them up, and they turned out looking exactly like in the TikTok

uhhh more or less. 

Guess what? They were not that great. I slightly burned the milk jelly part, so that was not great to begin with.  But it really wasn’t sweet enough to be a dessert, at least not for American tastes, so even if it hadn’t been burned, I think it would have been a swing and a miss.

But what about the peach blob! We blorped that out of its bag, and sliced it up into sort of flabby biscotti shapes

What can I say, it didn’t win any prizes of any kind. Don’t forget, I burned it. And now I can stop thinking about it! Which is why you do TikTok recipes. 

WEDNESDAY
Hamburgers, veg and dip or hummus, chips

Damien made the burgers outside on his cinderblock grill. And very good they are, burgers that somebody else made outside. I forgot to take a picture, even though my veggie platter was very pretty and the burgers were very juicy. 

THURSDAY
Pulled pork sandwiches, collard greens

It was shaping up to be a very drivey day, so I started some pulled pork in the morning. It had cooled off a little bit, so I didn’t mind searing the meat on the stovetop before putting it in the Instant Pot to get tender. Here’s my recipe, which is a warm, spicy, cidery kind of pulled pork with lots of cloves and cumin and jalapeños.

Then I ran out to the garden to get some collard greens. We keep having super hot, super humid days with short spells of pounding rain, and then it just goes right back to being punishingly hot and humid again. This is apparently paradise for snails, and they are everywhere. There may or may not be some snails in this picture. I picked off as many as I could find and then I gave up. 

But I can understand why the snails wanted to eat those collards. They are nice and tender, very unlike the tough, rubbery collards you get at the supermarket, so I wasn’t too fussy about removing every bit of stem.I just pulled off the thickest ones and rolled up the leaves to cut them into ribbons

I use this vegan recipe for collard greens, which calls for liquid smoke, just because I rarely have smoked meat or ham hocks or whatever. I cooked the onions and garlic, cider vinegar, greens, broth, pepper flakes, salt, pepper, and paprika in a skillet and then transferred them to the slow cooker to cook the rest of the day.

You know collard greens are ready to eat when they look like something that makes the plumber say, “Well HERE’S your problem right here.”

 But man, they are delicious. 

The pulled pork was quite nice, too. I served it on kaiser buns with Sweet Baby Ray’s BBQ sauce

and woof, that was a pretty spicy meal! The air had cooled down enough that I wasn’t mad to be sweating over my dinner, though, and it was nice to just have an Instant Pot pot and a crock pot crock to wash up. 

FRIDAY

Or something. Damien is taking a bunch of the kids to the beach with friends for Part II of Lucy’s birthday, and Benny has a library lock-in thing, and I think the few still at home will just have to struggle by with whatever we can scrounge. 

And I will be packing! The main thing I did all week, besides sweat and complain, was to write and write and write to get ahead, because on Saturday we are leaving for VACATION. We don’t manage this every year, and I can’t even actually remember where I got the $$; but back in the winter, I rented a house on an ISLAND, that is only accessible by FERRY, and where the natives DISCOURAGE TOURISM, and I remember there being SEA GLASS. So I am pretty excited!

(Burglars, there will be people staying at the house, so don’t bother breaking in to steal our . . . our very valuable and expensive, uhh . . . . . you know what, go ahead and look around and tell me if you find anything good.)

Okay, that’s a wrap! Don’t burn any milk jelly while I’m gone!

  • 1 cup apple cider vinegar
  • 2/3 cup apple juice
  • 3 jalapeños with tops removed, seeds and membranes intact
  • 1 onion, quartered
  • 2 Tbsp cumin
  • 1 tsp red pepper flakes
  • 2 tsp ground cloves

Instructions

  1. Cut pork into hunks. Season heavily with salt and pepper.

  2. Heat oil in heavy pot and brown pork on all sides.

  3. Move browned pork into Instant Pot or slow cooker or dutch oven. Add all the other ingredients. Cover and cook slowly for at least six hours.

  4. When pork is tender, shred.

I do apologize for how dead the site has been lately. I honestly have been writing, and I hope to have more up next week! I also think I have fixed the issue with the com box. If you left a comment last week and it didn’t show up, it’s because I had a leetle spam problem and still have to manually sort through almost 6,000 comments, which, honestly, I might just . . . not do. But like I said, I think I fixed it!

Here’s what we ate this week: 

SATURDAY
Grilled ham and cheese, watermelon

Shopping day, uff cawse. I had planned grilled ham and cheese last week, but didn’t make it, so we had plenty of sourdough and sliced cheddar and ham. Easy peasy, and it was a good thing, because one kid had a party to go to (and a present to buy), two kids needed to be at work, and there was an art thing downtown and the non-working kids were helping the other kids set up, and I realized that meant the other kid was gonna be alone all day, so we invited a friend over for her, which turned into her meeting the friend at the beach (not that beach, the other beach) and then coming here, and then everyone needed to be picked up from their parties and jobs and arts and confession and whatnot, and, long story long, we had grilled cheese. 

Kids had a fire and made s’mores after dinner. I will eat many, many disgusting things, but I draw the line at s’mores, for some reason. 

A few months ago, when I still thought we had a 50/50 chance of seeing the parousia before June, I signed up to make dinner for the youth group. But I lost that bet, so on Saturday night I started hacking up pork shoulder and browning it.

I had bought some ludicrous number of pounds of pork, too much to fit in the slow cooker, so I put it in a giant casserole dish and covered it tightly with tinfoil and cooked it in the oven at 225 for about five hours.

I bumped up all the seasonings a bit, used jarred jalapeño instead of fresh (without the juice), and added a heavy hit of liquid smoke. Oh my dammit, it smelled amazing. I thought I’d have to leave it cooking slowly overnight, but it was shreddy betty and so good. 

SUNDAY
Pulled pork sandwiches, chips, broccoli slaw, watermelon

Sunday was Corpus Christi, which I love so much. My 90-year-old friend has been coming to Mass with us, which is excellent, but of course she wasn’t quite up for a long walk in the blazing hot sun afterward, so I brought her home while the rest of the family joined in the procession. Found out later that Benny, who is not even 90, fainted! Just too much sun and not enough water, and plus we had stayed up late to watch Godzilla Minus One the night before. So down she went, and bopped her head on the pew when she fell. SHE IS FINE. But it was a worrisome day, because we have some medical nonsense in this family to worry about. But she was just very dehydrated. 

It turns out everyone else in the parish is also super busy in early June, so the youth group was a very small group, and even taking that into account, I absolutely CLOBBERED them with food. One smart thing I did, though, was realize that a cooler isn’t just for ice, but will also keep hot food hot. So I didn’t have to muck around with cooking in the church basement and trucking the food over to the other building this time, but just heated everything up at home and then brought it straight to the yoot. 

We had kaiser buns and pulled pork and two kind of BBQ sauce on the side, but the meat truly didn’t need it. Bunch of sliced onions and some of that hot cheese sauce I love so well for the sandwiches, tons of potato chips, tons of watermelon cut into chunks, and tons of soda. At the last minute I also made some broccoli slaw just to have something green.

I threw the broccoli into the food processor and then jammed some carrots in, but I wasn’t thinking clearly, and ended up with basically minced broccoli and discs of carrots. Which is fine, but it looked . . . dated. Can’t explain it, but it looked like someone’s elderly aunt had brought it to a birthday party and called it her famous slaw.

Anyway, I made the dressing from this coleslaw recipe, which calls for mayo, dijon mustard, maple syrup, celery seed, salt, and pepper. I skipped the celery seed and didn’t even notice it called for dijon mustard until about the middle of this sentence. Then I threw in some sliced almonds, and probably would have put in dried cranberries if we had had any. Considered sunflower seeds and realized I’m at least allegedly feeding teenagers, not chipmunks. 

Look, I took a few gummies last night to help me sleep, and I’m feeling too dumb to write short paragraphs, so you’re just gonna get the whole . . . pork. I don’t know. 

Anyway, there was SO much dang pork. Which is not a bad thing! I thought the addition of the liquid smoke was excellent, so I’ll be adding that from now on. 

MONDAY
Roast pork ribs, flavored rice, watermelon, broccoli slaw

Monday I wasn’t ready to look at pulled pork again yet, and I had arranged my day so that I was somehow doing errands for strangers much of the day? I live like I have a personal assistant who has a grudge against me. Anyway I got it all done, and got supper started at like five o’clock. Not pulled pork but roast pork ribs, because they were 99 cents a pound and I’m not made of stone. 

Pork ribs sprinkled heavily with salt and pepper and thrust under a hot broiler, turned once; leftover watermelon (did I mention that watermelons were on sale so I bought four?), leftover broccoli slaw, and something the kids covet ardently and I should probably make more often: Rice cooked in chicken broth. Truly, your jaw would drop if you saw how excited they were about this faintly yellow rice. 

And you know what, it’s good. Tastes like chicken. 

I don’t think I mentioned how the broccoli slaw turned out. The dressing tasted WONDERFUL when I made it, really zippy and nice; but it was one of those mysterious recipes that went flat right away, and got flatter every hour thereafter. So it was quite, quite bland by Monday. I was still happy to have something cool and vegetabally, but it was not exciting. I did like having the crunchy almonds in there. 

TUESDAY
Pizza with chive blossoms

My chives peaked over the weekend, and I had been meaning and meaning to fry the blossoms, but I just did not have time. So I made some pizzas on Tuesday: One pepperoni, one plain cheese, and one with black olive and leftover peppers and onions sauteed up, and then when it came out of the oven, I threw chive blossoms on top of it. 

Kinda wish I had put some of them on first before baking, because I think they would have been nice with a little frizzled, but they were good as they were. Kinda cute, not mindblowing.Tasted like chives. So now I know! 

WEDNESDAY
Pork tacos, watermelon

Wednesday I had to face the fact that I had forgotten to put the leftover pulled pork in the freezer, so it was do or die. Pork or die.

It was supposed to be taco day, so I just heated up the pork and served that with taco fixings. Did not adjust the seasoning or anything, and guess what, it was yummy. 

Or maybe I was just starving because I was going crazy with yard work, but I thought they were great. 

Wednesday I also culled baby peaches. Last year we had a late frost that killed all the buds, and we had zero peaches. This year we have . . . I honestly think over a thousand, on just the one tree. It just went berserk with pent-up peachiness. At first I was delighted, and then I realized that letting that many peaches grow to maturity would yield a bumper crop of small, tasteless peaches, and would probably also split the tree when they got heavy.

I HATE thinning baby plants. It’s not as bad as pinching off blossoms, but it’s pretty rough. Just feels so brutal and wrong. But I want to take care of my tree, so I spent a LONG time plucking off baby peaches, and after about an hour of staring up into the sun between the leaves, calculating six inches between peaches, and repeatedly getting a face full of crispy old peach blossom debris and picking baby peaches out of my cleavage, that particular emotional knife had been blunted quite a bit. 

Here’s what they look like. They’re the size of large olives, and they are too young to have pits. 

I have filled two gallon ziplock bags and I’m maybe 1/4 of the way through the tree. It turns out you can pickle baby peaches. This lady says they don’t taste like much, so they take on whatever flavor you put in the vinegar solution. I told myself I was going to try this, but honestly I think I’ll offer them on buy nothing and let them be someone else’s broken dreams this year. Or maybe just feed them to the ducks. Ducks have no dreams. 

THURSDAY
One-pan garlicky chicken thighs with potatoes and zucchini

Thursday was the first day this week I deliberately cooked something specifically for that day, rather than just dealing with whatever nonsense that hostile PA had set up for me. Samantha, or Simba, or whatever her name is.

What I had was a bunch of chicken thighs that were on sale, and zucchini that reminded me that I once made a zucchini dish that everybody liked, and it was on a week we were replacing the bathroom floor, so I figured it must be easy. So I made it again! Yay!

Got the chicken marinating in the morning. It’s a simple marinade, just olive oil and balsamic vinegar and apple cider vinegar, plus garlic powder, onion powder, salt and pepper, and fresh basil and garlic. I prepped the garlic by peeling it, putting it in a sandwich bag, and bashing it with the end of a rolling pin, so it was it kind of flattened fragments. I don’t know if there’s a name for this form of garlic, but I find it very useful in marinades, because it imparts garlic flavor to the whole thing, but also has little bits of garlic you can bite into.

So that marinated all day. I forgot to buy summer squash, but I cut up about four pounds of potatoes (skin on) and two large zucchini, also skin on. I cut them into thickish quarter-round wedges, and put them in a bowl covered with cold water to keep them from browning.

Later that day, I was worried they’d be getting soggy, so I drained the water off, recalling that I have heard that potatoes that have been doused with cold water will not get discolored even if you drain the water off. I wish I had done this sooner, so I’d have a better idea of how long you can do this in advance of cooking them, but I can say that they will go at least two hours after draining the water off without turning brown. Nice.

I sprayed a couple of giant sheet pans, put the chicken on, and then arranged the potatoes and zucchini in between the chicken. I didn’t pour all the marinade in, but I did fish out the basil and garlic with a slotted spoon and spread that over the chicken. Then I sprinkled the potatoes and zucchini with more garlic powder, onion powder, and salt, and just cooked it undisturbed for about forty minutes. 

It doesn’t look glamorous, but it’s really delicious. Probably wouldn’t have hurt to stir up the potatoes and zucchini 20 minutes in, so they’d be more brown on the top; but they had a great little crust and wonderful flavor on the bottom, so no complaints.  

 

The fresh garlic and basil are really pleasant and summery, and the chicken came out super juicy. I’m not a giant zucchini fan, but I remembered to cut it into big enough wedges so it didn’t get slimy, and it was really tasty with the slightly sweet, sharp marinade. Would have been good with some crusty bread to sop up the extra sauce. 

If you’re looking for an easy, one-pan meal that’s nice and summery, this is the one!

If you’re looking for something really fantastic to do with zucchini, I recommend this zuchhini agrodulce recipe from Sip and Feast. It’s quite a hassle, but holy wow, it is fantastic. I hope I have time to make this when vacation starts. 

FRIDAY
Lemon garlic shrimp pasta

This bag of shrimp I got on sale a few weeks ago has been in the freezer long enough. I had kind of a long argument with the kids wherein they accused me of CONSTANTLY serving shrimp lo mein, which I KNOW is not true, and even if it were, WHO COMPLAINS ABOUT SHRIMP LO MEIN. They were, of course, just yanking my chain, but I just dangle it out there all the time, begging one or more of our innumerable chain-yankers to come yank it. 

ANYWAY, I’m not going to make shrimp lo mein. I’m going to make lemon garlic shrimp pasta from Sip and Feast, who claims that it is easy and impressive. I like all those words (lemon, garlic, shrimp, pasta, easy, and impressive, not to mention sip and feast), so I don’t see how this can be bad. The jerks can eat plain pasta with butter, which I will admit is also delicious. 

This week the main things I’ve been working on are — well, Millie’s garden and Millie’s fall alert system, to be honest, and also my garden (got the last bits filled in with collard, hooray!) and adding legs to the final piece of salvaged platform, so we can have a little pool deck. I’ve only been to Home Depot three times so far, and I know that’s not going to be enough to satiate the project gods.

Oh, I also did some more work on my wattle fence, which is my pride and joy. It’s very possible it looks stupid and nobody wants to say anything, but I just love it so much. Any time I have more than half an hour free, I get the giant clippers and call the dog, and we go out to the woods and cut down as many saplings as I can drag. Then I sit and trim off all the green and all the twigs, and then I weave what’s left into my fence. It’s deeply satisfying.

I also have an ongoing project that’s less satisfying, and that is putting a lot of energy into not dealing with or even seeing the five trash bags of foam fragments that are in the dining room, which used to be in Corrie’s oversized bean bag chair, and which . . . hey, is there a violent stomach bug going around where you are? Because there is here. All I’m gonna say about that is: If you have a kid who is going through a picky stage and only eats rice for dinner? SOMETIMES THAT’S NOT A BAD THING. 

Anyway, we have ONE WEEK OF SCHOOL LEFT, the peonies all burst open the other day, Merlin says there is an indigo bunting somewhere in my yard, and I’m gonna get those legs on that deck if it kills me. And it will! But I plan to die at home, doing what I love (eating pork). 

Oh, today is the feast of the Sacred Heart, and I’m thinkin of making this Coeur à la Crème with Blackberry Sauce. I’m thinkin about a lot of things. 

Clovey pulled pork

Ingredients

  • fatty hunk of pork
  • salt and pepper
  • oil for browning

One-pan garlicky chicken with potatoes, summer squash, and zucchini

Ingredients

  • 12 chicken thighs
  • 1/2 cup olive oil
  • 1/4 cup balsamic vinegar
  • 1/4 cup cider vinegar
  • 6 cloves garlic, roughly chopped
  • 2 tsp ground pepper
  • 1 Tbsp onion powder
  • 1 Tbsp garlic powder
  • 1 Tbsp salt
  • fresh basil, chopped
  • more salt, garlic powder, and onion powder for sprinkling
  • 4 lbs potatoes, scrubbed and sliced thickly
  • 6 assorted zucchini and summer squash, washed and sliced into discs with the skin on

Instructions

  1. Combine the olive oil, balsamic vinegar, cider vinegar, garlic, garlic powder, onion, powder, salt, pepper, and fresh basil. Marinate the chicken thighs in this mixture for at least half an hour.

  2. Preheat the oven to 400.

  3. Grease two large baking sheets. Arrange the chicken, potatoes, and vegetables on the sheet with as little overlap as possible.

  4. Sprinkle additional salt, onion powder, and garlic powder on the potatoes and vegetables.

  5. Cook about 40 minutes or until chicken is completely done and potatoes are slightly brown on top.

Heyy! Merry Christmas! Happy goodbye old year. Happy indeed. Let’s end strong with FOOD. 

It’s been a bit since I’ve done a WFS, so I’ll just do a highlight reel of the last few weeks.

I published the last one before I finished making my VERY FIRST PAVLOVA. Turns out to be very easy. I used this recipe from Natasha’s Kitchen. You beat up a bunch of egg whites and sugar, then mix in lemon juice, corn starch, and vanilla. Then you just glop it onto a pan with parchment paper and bake it in a low oven for an hour; and then you turn the oven off and let it cool down verrry slowly. 

Then you whip some cream and sugar and plop that on top, and then you throw berries on it. That’s it!

I forget exactly what boneheaded thing I did, but I ended up putting the pavlova into an oven that was warm, but not actually turned on; and I didn’t notice for something like forty minutes. So then I turned it on for a while, and then I turned it off for a while. Guess what?? The pavlova still turned out fine! 

I was skeptical that I would want to eat this much meringue, but it’s got more to it than meringue, and was very pleasant, and not as blindingly sweet as I expected. I think the outer crust was a little tougher than it’s supposed to be, but it was still delicious. The outside is sweet and glossy and crisp, and the inside has a marshmallowy, almost custard-like flavor. It’s supposed to have more cream on top than you see here, but the whipping cream had frozen, so I didn’t have a lot to work with. 

As you can see, I put blackberries, blueberries, pomegranate arils, kiwi slices, and mint leaves on mine. That was a very pleasant combination. I thought the mint would taste weird, but it was very nice having that green freshness along with the hot sugar taste. Some people make wreath shapes, which would be very pretty. I also made a bunch of individual pavlovas. Lots of possibilities. Many more pavlovas in our future!

One of my birthday presents was this wonderful cookbook: Classic Indian Cooking by Julie Sahni.

That week, I ended up using a lot of odds and ends of meat we already had in the freezer, so my budget had a little room, and I splurged on a giant hunk of lamb. I cut it up and divided it, and froze 1/3 of the pieces along with the bone.

The first portion, I made into lamb braised in aromatic cream sauce (rogani gosht). You can see that recipe here. You can also make this dish with beef, which I’m sure I will end up doing, because it was fab. Fab fab fab.

Eating a hot bowl of rogani gosht is like being cuddled by a gigantic, affectionate, fluffy cat (that’s the fragrant cream part) who keeps licking you with its rough tongue (that’s the warming spice part). I know that’s weird, but normal descriptions just won’t DO for this dish. It’s not super spicy, but enough to get your attention, and the meat was insanely tender. It just fell apart with the merest nudge from a spoon. 

I also made a giant taboon bread. I wanted naan, but it was too late to get it started, so I went with this recipe, which is so easy, and you bake it in the oven all in one big slab.

The only thing I forgot was to dimple the dough with my fingertips, and it had already been baking for 7-8 minutes, so like an idiot I stuck my hands in the hot oven and attempted to dimple it anyway. Did not get very far. 

But the meal was worth a little burnt fingers. I made a pot of rice in the Instant Pot and we had a really wonderful meal. 

The braised lamb doesn’t look like much, but I’m telling you. IT WAS MUCH. My goodness, what a treat. 

Let’s see, what else? 

For the last day of school, which was December 22 (ridiculous), I made cookies for Benny’s class party. Just good old reliable no-chill sugar cookies,

which I cut out with little holes, and then filled the holes with crushed Jolly Ranchers, so when they baked, they had little candy windows in them.

We frosted them with royal icing and whatever miscellaneous decorations I could find in the cabinet,

and they turned out looking like a bit of a crime scene, but we did have fun. 

Another nice meal: Pulled pork on tater tots with red onions and corn. Maybe I was just hungry, but this meal was so freaking delicious.

and it was just so dang tasty. 

Oh, and then we had this over-the-top bacon risotto for the last day of school. Heavy cream, egg yolks, bacon, salami, freshly-grated parmesan, white pepper, and so much butter . . .

I knew it was gonna be amazing, and it was. I didn’t even make anything else for dinner, and nobody complained. I had arborio rice in the house, leftover from the suppli I made for our anniversary, and now I don’t think I’m gonna be able to go back to my old cheap regular rice risotto ways. It was just so luxuriously creamy and rich. 

I think people will be asking for this dish for their birthdays. It’s really special.

On Sunday, it was finally Christmas eve! We went to Mass in the morning at our normal time, because Benny was altar serving. Then I got everybody to clean up the house. We weren’t expecting any guests, but we had SO much incredible extra clutter in the house — giant cartons of things, random baskets with other random baskets on top and wads of torn-up leggings flopping around, extra pieces of furniture, dying plants, half-finished crafts, and of course a million Amazon boxes, and of course all the cartons of Christmas decorations that I didn’t manage to put up. And there was this TREE in the living room, and some idiot had strung garlands all over the place, and the line between “merry merry” and “mental breakdown” was getting a little thin. The thought of starting with this mess and adding dozens and dozens of presents and half an acre of discarded wrapping paper and forty six tons of candy wrappers with little wet wads of candy still stuck to them was more than I could deal with. 

So I cracked the whip a bit, and we all cleaned that shit up. Even though we weren’t having guests! Then I made everyone take showers, and then we had supper, and then we decorated the tree, and then I started Alton Brown’s overnight cinnamon rolls.

I made a triple recipe

and had some help from Corrie spreading on the cinnamon sugar, rolling them up, and cutting them out. 

and then they got wrapped up and put in the fridge to rise slowly. 

Midnight Mass was lovely. They’ve started having it at actual midnight in the last few years, which is not so hard when your kids are older, and also it’s been warm out, so there wasn’t that horrible “venture out into the icy wind with your flimsy little spangled dress on” challenge. Corrie immediately went to sleep with her head on my lap, so I was tragically forced to sit down the entire time.

Got home, Damien and I put allll the presents and stockings out

and then we tottered off to bed at around 2:30 a.m. 

Dora and Moe came over for Christmas, and we had an excellent Christmas day. We had cinnamon buns and bacon, orange juice and eggnog, and plenty of fruit. Several of the kids made each other homemade presents, and everyone just went above and beyond with thoughtful and amusing gifts.

 

For dinner, we had our traditional Chinese takeout, acquired in the correct volume by pretending to be four different people (it’s a long story); and Irene got her traditional Jersey Mike’s sub because Chinese food makes her throw up; and then we all played with our new toys and ate lots of candy and then eventually we went to sleep and slept SO HARD. 

The next few nights, we had easy dinners: Leftover Chinese food one day, and Italian sandwiches the next, and then we watched Baahubali: The Beginning. 

This is one of the most gorgeous, violent, insane, joyfully ridiculous movies I have ever seen, and the very last thing that happened on screen made me go, “WHAT???????” So we’ll be watching part 2, believe me! In the mean time, I went back to my Indian cookbook and pulled the rest of that lamb out of the freezer, and this time I made a curry with tomatoes and potatoes, and also a big pot of rice and some spinach yogurt salad. 

Sahni describes this curry as having a “garnet-colored sauce” and that’s just what it is. It’s so rich and the spices blend so nicely, I just don’t even know how to tell you how tasty it was. 

I had my doubts about the spinach salad (you cook some spinach, squeeze it out and chop it up and mix it into some heavily seasoned yogurt and sour cream), but it was a completely delightful accompaniment to the curry, very cooling and refreshing along with the savory meat. 

I think one kid ate the curry or the yogurt salad. The rest of them had leftovers or eggs. Too bad! Damien and I both had seconds and it made us very happy. 

I chose this meal because the recipe called for stuff I already had in the house, but I am so hyped about making more recipes from the book. Her style is nice and clear, and I’m excited!

And that’s it! That’s the year. We have New Year’s Eve coming up, and we usually have a DIY sushi party; then New Year’s Day is Sophia’s birthday, and then we have Benny’s birthday party that we had to postpone because we all got Covid, and then it’s Damien’s birthday, all in the first eight days of the year. I may just make a series of pavlovas. I can see it now: Turning the oven on, turning it off again, turning it on again, turning it off again, whipping more cream, eating more whipped cream, turning the oven on . . . .

I can think of worse fates. 

Oh, one last thing: Benny got a taiyaki maker for Christmas.

She made her first batch with Nutella filling. If you’ve had yummy taiyaki, what filling did it have? I’m thinking of red bean paste for New Year’s Eve, if I can find the right kind of beans. 

That’s it. That’s my final words of 2023: IF I CAN FIND THE RIGHT KIND OF BEANS. If the world ends and this is my legacy, estoy contenta.

taboon bread

You can make separate pieces, like pita bread, or you can make one giant slab of taboon. This makes enough to easily stretch over a 15x21" sheet pan.

Ingredients

  • 6 cups bread flour
  • 4 packets yeast
  • 3 cups water
  • 2 Tbsp salt
  • 1/3 cup olive oil

Instructions

  1. Mix the flour, salt, and yeast in the bowl of a standing mixer.

  2. While it is running, add the olive oil. Then gradually add the water until the dough is soft and sticky. You may not need all of it. Let it run for a while to see if the dough will pull together before you need all the water. Knead or run with the dough hook for another few minutes.

  3. Put the dough in a greased bowl, grease the top, and cover with plastic wrap. Let rise in a warm spot for at least an hour until it has doubled in size.

  4. Preheat the oven to 400. Put a greased pan or a baking stone in the oven to heat up.

  5. If you are making separate pieces, divide it now and cover with a damp cloth. If you're making one big taboon, just handle it a bit, then put it back in the bowl and cover it with a damp cloth. Let rest ten minutes.

  6. Using a little flour, roll out the dough into the shape or shapes you want. Poke it all over with your fingertips to give it the characterstic dimpled appearance.

  7. Bake for 10-12 minutes until it's just slightly browned.

 

No-fail no-chill sugar cookies

Basic "blank canvas"sugar cookies that hold their shape for cutting and decorating. No refrigeration necessary. They don't puff up when you bake them, and they stay soft under the icing. You can ice them with a very basic icing of confectioner's sugar and milk. Let decorated cookies dry for several hours, and they will be firm enough to stack.

Servings 24 large cookies

Ingredients

  • 1 cup butter
  • 1 cup white sugar
  • 1-2 tsp vanilla and/or almond extract. (You could also make these into lemon cookies)
  • 1 egg
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 3 cups flour

Instructions

  1. Preheat oven to 350.

  2. Cream together butter and sugar in mixer until smooth.

  3. Add egg and extracts.

  4. In a separate bowl, combine the flour, salt, and baking powder.

  5. Gradually add the dry ingredients to the butter and sugar and mix until smooth.

  6. Roll the dough out on a floured surface to about 1/4 inch. Cut cookies.

  7. Bake on ungreased baking sheets for 6-8 minutes. Don't let them brown. They may look slightly underbaked, but they firm up after you take them out of the oven, so let them sit in the pan for a bit before transferring to a cooling rack.

  8. Let them cool completely before decorating!

 

Clovey pulled pork

Ingredients

  • fatty hunk of pork
  • salt and pepper
  • oil for browning
  • 1 cup apple cider vinegar
  • 2/3 cup apple juice
  • 3 jalapeños with tops removed, seeds and membranes intact
  • 1 onion, quartered
  • 2 Tbsp cumin
  • 1 tsp red pepper flakes
  • 2 tsp ground cloves

Instructions

  1. Cut pork into hunks. Season heavily with salt and pepper.

  2. Heat oil in heavy pot and brown pork on all sides.

  3. Move browned pork into Instant Pot or slow cooker or dutch oven. Add all the other ingredients. Cover and cook slowly for at least six hours.

  4. When pork is tender, shred.

 

What’s for supper? Vol. 350: In which I do not really use the oven

Hola, amigos. I know it’s been a long time since I rapped at ya. I actually wrote quite a bit this week, but ended up doing whatever the digital version is of crumpling up the paper, and whatever the sitting on your ass version is of stomping off to go stand in a corner and sulk. This has not been a wonderful week for (a) a Jew who (b) has been following the Catholic sex abuse scandal closely for years and (c) lives next door to Maine. You know what doesn’t help? When the 12-year-old public radio host who is reading the headlines suddenly puts on her raggedy, tormented sad kitty voice and says, “Hope you’re taking care of yourself today. Deep breaths, everybody,” before abruptly perking up and announcing that it will be sunny this weekend and there will be a punkin festibal. I’ll sunny you! Good heavens. 

Anyway, I’ve been making steady progress with Halloween costumes this week, so I’ve got that going for me. I managed to almost completely avoid sewing this year. LOTS of duct tape, lots of hot glue, and a tremendous number of zip ties, though. Corrie is going to be Dalek Sec, with a light-up helmet

and Benny is going to be Classic Green Goblin. 

They both needs more work, but we’re in pretty good shape for Oct. 28. 

The oven broke on Sunday (just the bottom heating element) and we haven’t had a chance to fix it yet, but I lucked out and happened to have planned a menu that can be made with the broiler, the stovetop, and of course the Instant Pot. Here’s what we had this week: 

SATURDAY
Pulled pork sandwiches, chips

On Saturday we went to a rummage sale in the morning. We love rummage sales. Corrie has been losing just dozens of teeth lately, so she had a glass jar stuffed with bills to spend. The first thing she bought was, practically, a wallet. She then transferred her money to the wallet and went on an incredible spending spree. She was buying Crayola Glow Domes, she was buying Christmas earrings, she was buying t-shirts bragging about our Bernese Mountain Dog. Zero regrets.

I myself bought a leather motorcycle jacket for some reason (well, the reason was that it was $12) and a bunch of kitchen wares. The duality of mom.

Then we came home and I got some pulled pork going in the Instant Pot

and then we all went to the Pumpkin Festival in Keene. 

it was raining, but we had a pretty good time. The theme this year was “Please Do Not Light Any Cars on Fire” and with an undertone of “How Much Can We Charge For Fried Dough and Still Sleep At Night?” and they nailed it. 

We all got home pretty wet and tired, so I was mighty pleased to have a hot pot of pulled pork waiting. We had sandwiches and chips.

I like the flavor so much, I don’t even put BBQ sauce on my sandwich. You definitely can, but it’s plenty flavorful by itself. This is a rare recipe of mine that doesn’t have any garlic in it! Behold, it can be done! It has a wonderful, warming, autumnal taste with the apple cider, apple juice, cumin, and cloves. You can remove the jalapeño seeds and/or membranes to make it less spicy, but it’s not overpowering as is, just perky. 

SUNDAY
Chicken burgers, nacho chips

Sunday was when we noticed the oven was broken, and also when we discovered you can broil frozen chicken burgers and they turn out fine. 

MONDAY
English muffin pizzas

We used to have this alllllll the time. It’s been several years, I think, and it’s a meal a few of the kids have been agitating for. Damien was going to be out of town, so I took the opportunity. I even got little bitty mini pepperonis to make it cute

I don’t really miss this meal, but it wasn’t terrible. I feared and hated the sourness of English muffins when I was little, and I still have to consciously flip a switch in my head to enjoy the taste of them. 

TUESDAY
Chicken tortilla soup, quesadillas

I had some leftover rotisserie chicken from last week I had chucked into the freezer, so I used that to make one of my favorite soups. The recipe

calls for cooking the raw chicken directly into the broth, and I wasn’t going to do that, so I added extra chicken bouillon to make sure it had some flavor. It also calls for chipotle chiles in adobo sauce, and I couldn’t find that at all in the three stores I went to. So I just added more of all the other ingredients. 

The result was . . . honestly, pretty bland soup. 

Pretty, though. Aldi had these fancy tri-colored crunchy tortilla strips for toppings, so I grabbed a bag of those, and I also topped mine with avocado and cilantro. I made a bunch of quesadillas. It was fine. Not an amazing meal, but it wasn’t the recipe’s fault. 

WEDNESDAY
Mexican beef bowls, pineapple

On Wednesday, I re-burnished my reputation somewhat with a meal everybody likes: Mexican beef bowls.

Roast beef was on sale, so I made the lovely, piquant marinade in the morning and sliced the meat thinly, and let it marinate all day

When it got to be close to supper, I made a pot of rice, sliced up a few pineapples, shredded some cheese, roasted some corn, chopped some cilantro, cut up some limes, and dug up some sour cream, and then I broiled the meat

Honestly I overcooked it, because I forgot how thin it was, but it was fine. 

So yummy. Tons of flavors. 

Earlier in the day, I also made a pot of black beans. Actually I only had one can of beans and one can of kidney beans, so that’s what we had.

Only a few people like beans, so I added as much spice and garlic as I wanted, which was a lot. I’m a huge bean fan. (I realize that’s a slightly ambiguous sentence. I mean it all the ways.) So much so that the kids stored the leftovers in a ziplock bag, and I ate cold bagged beans as a snack the next day and managed to feel guilty about the opulent luxury of it all.

THURSDAY
Blackened shishito chicken sandwiches; veggies and hummus

This is one of my favorite sandwiches, quite popular at our house. This time I had Tony CHachere’s seasoning, rather than some kind of generic “cajun seasoning,” and I forgot how salty Tony CHachere’s is! So they were a little overly aggressive, salt-wise. Still so tasty, though. 

This is a Sip and Feast recipe. You season the chicken thighs and cook them slowly and thoroughly in hot oil 

(this pan is one of my rummage sale finds! A lovely multi-ply stainless steel pan, very sturdy. I love stainless steel the best)

and then you top them with American cheese and let that melt

and while those keep warm, you quickly blister up the shishito peppers in the pan that you cooked the chicken in

and serve it all on toasted or untoasted brioche buns with barbecue sauce and red onion slices

and it’s just a damn fine, sloppy, tasty, delicious sandwich, even if you burn the buns like I did. 

FRIDAY
Regular spaghetti

On Friday, we had already been a million places, and we had a million places to be, so all signs pointed to spaghetti with sauce from a jar. And that’s my story! Now if you’ll excuse me, I have a date with some Dalekanium and a hot glue gun. I suggest taking shallow breaths and being hard on yourself, and writing legally actionable hate mail to your local public radio host. But you know yourself.

Instant Pot Chicken Tortilla Soup

Adapted from twosleevers.com. This is a very flavorful chicken soup. It has a little hotsy totsy burst of spice with the first taste, and then the more complex flavors come through slowly. Magic.

It's fairly brothy, and then you heap up all the garnishes you want on top.

This is a little over a gallon of soup.

Ingredients

  • 2 med onions
  • 1 lb (4 medium) tomatoes
  • 5 cloves garlic
  • 3 chiles in adobo sauce plus some of the sauce
  • 1 jalapeño pepper (include seeds for more heat)
  • 1 bunch cilantro
  • oil
  • 4 boneless, skinless chicken breasts
  • water
  • salt to taste
  • garnishes: avocado slices, sour cream, shredded cheese, chopped cilantro, tortilla strips, chopped scallions

Instructions

  1. Cut the onions and tomatoes into chunks so they will fit in the blender or food processor. Put the onions, tomatoes, jalapeño, chili pepper and sauce, garlic and cilantro into a blender or food processor and blend it until it's a thick sauce. You may need to do it in batches, or just keep poking the big pieces down so everything gets blended in.

  2. Add enough oil to the Instant Pot pot to cover the bottom. Press "sauté" and let the oil heat up for a few minutes.

  3. Pour in the tomato mixture and cook, stirring occasionally, for about ten minutes, until any liquid is mostly absorbed. You may need to press "sauté" again to keep it hot.

  4. Cut the chicken breasts into pieces and put them in the pot. Add six cups of water.

  5. Close the top, seal the valve, and press "pressure cook," then the + button until it goes to 20 minutes. When it's done cooking, let it naturally release for 10 minutes, then release the remaining pressure manually.

  6. Open the top and fish out the chicken. Shred it and return it to the pot. Add salt to taste.

  7. Serve the soup with garnishes: avocado slices, sour cream, tortilla strips, shredded cheese, chopped cilantro, and chopped scallions.

 

Beef marinade for fajita bowls

enough for 6-7 lbs of beef

Ingredients

  • 1 cup lime juice
  • 1/3 cup Worcestershire sauce
  • 1/2 cup olive oil
  • 1 head garlic, crushed
  • 2 Tbsp cumin
  • 2 Tbsp chili powder
  • 1 Tbsp paprika
  • 2 tsp hot pepper flakes
  • 1 Tbsp salt
  • 2 tsp pepper
  • 1 bunch cilantro, chopped

Instructions

  1. Mix all ingredients together.

  2. Pour over beef, sliced or unsliced, and marinate several hours. If the meat is sliced, pan fry. If not, cook in a 350 oven, uncovered, for about 40 minutes. I cook the meat in all the marinade and then use the excess as gravy.

 

Instant Pot black beans

Ingredients

  • 2 tsp olive oil
  • 1 onion, diced
  • 6-8 cloves garlic, minced
  • 2 16-oz cans black beans with liquid
  • 1/2 cup fresh cilantro, chopped
  • 1 Tbsp cumin
  • 1-1/2 tsp salt
  • pepper to taste

Instructions

  1. Put olive oil pot of Instant Pot. Press "saute" button. Add diced onion and minced garlic. Saute, stirring, for a few minutes until onion is soft. Press "cancel."

  2. Add beans with liquid. Add cumin, salt, and cilantro. Stir to combine. Close the lid, close the vent, and press "slow cook."

Happy Friday! I have been bumbling around with a migraine all week, and I managed to lose my freshly-refilled bottle of migraine meds before I got any of it. It wasn’t the worst headache in the world, but I was CONFUSED and CONFUSED and also did not know what was going on. So a few of these meals are a little ,,, irregular. 

You may also notice that most of these photos are either outside or on my bed, because I was hiding from everybody all week. I love them all but they are fricken LOUD. 

I feel so much better today, though, thank the Lord. I woke up this morning with no headache, dizziness, nausea, jaw pain, tooth pain, or photophobia to speak of, and I am so glad. So glad!

Although I just got through all my photos, and finished uploading the last one of the Teenage Mutant Ninj’ Turtle cake with all the buttercream icing, and I’m remembering how much icing I ate and . . . I think maybe I know where my headache started. Huh. 

Well, here is what we had: 

SATURDAY
Chicken caprese burgers, chips

Just frozen chicken burgers on buns with tomatoes, basil from the garden, sliced cheese, salt and pepper, olive oil and vinegar. 

I wanted to be a hero, so I bought salt and vinegar chips. Works every time. 

SUNDAY
Turkey bacon wraps, chips; blueberry rose tarts with candied lemon

On Sunday, we had promised to take the kids kayaking, which we did! Benny and Corrie had their first experience paddling on their own, and they did great. 

 

But first, I got it into my head that I needed to make blueberry pie, which I haven’t made yet this summer. So I planned an easy dinner because I knew dessert was going to be time consuming. 

Damien fried the bacon, and we had sliced turkey (actually I think it was chicken), some leftover fancy salami from opera nite, and on mine I skipped cheese and had spinach and ranch dressing, and the wrap was allegedly spinach flavored, but this was not discernible. I think I put cheese out, but I skipped that. 

I love wraps. Probably if we had them more often, they wouldn’t seem like such a treat, but I find them so enjoyable to eat, so festive and friendly. 

I cut up a bunch of peppers and broccoli and set out baby carrots and dip.

For dessert, I thought it would be fun to make separate blueberry tarts, rather than two big pies. I made a double recipe of this reliable pie crust recipe

But I was super hot and getting a little flustered, and it took much more water than usual, for some reason, so I was struggling. I eventually got eleven large ramekins lined with pastry dough, and then made the filling using the recipe on this site. I had my doubts, because it calls for lemon zest, which is good, but also both flour and corn starch, which sounds STODGY; but I followed it. 

My original plan was to make individual lattice tops, but I had eaten so much raw pie dough that there wasn’t enough left for that. So instead, Benny and I made some dough roses. 

Roses are quite easy to make. You just cut out 4-5 discs, stick them together in a line, roll them up, cut the rolled-up cylinder in half, and pinch the flat edge together; then carefully tease open the other end, to open up the petals. Here’s the site where I learned to do it

Our roses were a little bit chunky because we were lough on dough and made them out of only four circles each, rather than five. I also rolled them out a little too thick. My baking style can best be described as — remember that Doctor Who episode where Mickey gets changed into a plastic guy and his hands are just big mallets and he goes lurching around the room whacking things? That’s how I make little pastry roses. 

So I baked them, and I thought they needed a little dressing up, so I made some candied lemon slices. I followed the very simple recipe here. Basically you just cook up some sugar water with a little lemon juice in it and simmer the lemon slices in it for 15 minutes, and then fish them out and let them dry.

They don’t dry completely, but stay a bit tacky. But they are very good and very pretty. The peels are edible, but most definitely still lemon peels (delicious if you like lemon!). If you wanted to make them sweeter and more candy-like, I imagine you could roll them in sugar when they come out of the pan; but that would ruin the stained glass effect of the candied pulp. 

So when the tarts came out, I sort of twisted up the lemon slices and tucked two into each one, to make little leaves or wings.

I took several pictures, and now you people are gonna hear about it. 

So they were definitely cute, but I saw room for so much improvement. The ramekins just weren’t the right vessels for this dish. I should have made them in cupcake tins or something with slanted sides, so I had some shot at pulling them out of the pans. I also didn’t roll the dough thin enough, so the roses were just kind of wads, and too much dough for people to eat. I also meant to brush the roses with egg white and sprinkle them with sugar, to make them shiny and sweeter, but I forgot. And I meant to make the edges more decorative, at least pressing them with a fork, rather than just leaving them ragged, but I forgot that, as well. 

But the biggest problem was the blueberry filling. It was just bland and too thick. You want fresh blueberry pie to be juicy and messy and luscious. This almost tasted store-bought. I was really disappointed! BUT THEY WERE PRETTY. Oh well. I made some whipped cream, which was good. Honestly, everyone liked these pies and ate them up, so this is just me complaining. 

Anyway, blueberry season isn’t over, and I will probably take another crack at this. I loved the candied lemon thing. Blueberries and lemons forever, man. Maybe I will make a blueberry lemon panna cotta! Who will stop me!

Or I still have some rhubarb in the freezer. Maybe I’ll make a blubarb pie. Maybe I’ll make a UNICORN blubarb pie. 

This one looks like . . . cherry and strawberry, actually? I don’t remember. But it looks like I remembered to glaze and sugar the dough, anyway. 

MONDAY
Mexican beef bowls

Beef was on sale, which it rarely is these days, so I got several hunks, sliced it up, and marinated it in this lovely sauce with lots of lime juice, garlic, and Worcestershire sauce.

Normally, I make this meal with rice, beef, charred corn, maybe some fried onions and sweet peppers, and then things like salsa, sour cream, shredded cheese, cilantro, etc., and I often make a pot of delicious black beans, too

But I was just so spacey while I was shopping. It turned out we only had a little rice in the house, so I cooked a few cups of rice, and people filled out the dish with tortilla chips or corn chips. I did buy beans, but I was too tired to cook them. I forgot corn altogether. It was still a tasty meal, just a little irregular. 

Oh, I see there were avocados and lime wedges! That actually looks really good. Anyway, this marinade is very tasty and you should try it. 

TUESDAY
Pulled pork grilled cheese; veggies and dip

Last week, the phrase “pulled pork grilled cheese” popped into my head, and I knew there was only way to get it out again. This was probably the most planned meal of the week, and oddly it was a little disappointing. 

The pulled pork part of it turned out great, though. I hacked up a fatty hunk of pork loin or something and seasoned it heavily with salt and pepper, some oregano and lots of cumin, and browned it on all sides in hot oil.

Then I moved it into the Instant Pot and added about 3/4 -1 cup cider vinegar and one juice box of apple juice, three fresh jalapeños with the seeds, a chopped onion, some red pepper flakes, and a lot of ground cloves. 

I closed the valve and hit the “meat” button, and then let it do a natural release and keep warm for the rest of the day. When I was ready to make the sandwiches, I pulled the meat out, and it absolutely shattered to pieces under the fork. It was very tasty, spicy and warming with the jalapeño and cloves, but not fiery hot, and worked really well with the cumin and apple. (The oregano was pointless and I will skip it next time.) 

I had meant to buy American cheese, because I wanted something kind of bland and very melty, but I forgot. And the convenience store didn’t have any! So I used what we had in the fridge, which was extra sharp cheddar. I had sourdough bread, which I spread with a little skim of mayonnaise and then fried in butter. 

It was good. But the cheese completely overpowered the flavor of the pulled pork, and it just tasted like a highly textural grilled cheese sandwich. Next time I will use American cheese, and I will maybe add fried onions or jalapeños. 

Or I’ll just make this version of pulled pork on its own, because it was really good!

I also made a bowl of unremarkable coleslaw.

WEDNESDAY
Pizza

One pepperoni, one plain, and one with leftovers from various other meals, which turned out to be: Feta, red onion, black olive, pesto, sliced garlic, red pepper flakes, and some fresh parmesan shredded over the top.

I forgot to buy pepperoni for the pizza, but we had some sandwich pepperoni from some sandwiches last week, so I sliced it up and put it on the other pizza. This is what passes for ingenuity at our house!

THURSDAY
Ramen with some kind of chicken situation

Usually when I make “fancy ramen,” we have some kind of pork, but for some reason I bought chicken; and I usually get some kind of crunchy Chinese noodles, but I forgot. So I ended up drizzling the chicken breasts with olive oil, sprinkling them with Chinese five spice, and then heaping some brown sugar on top, and then roasting them.

It tasted . . . fine? It was a little unsettling, because it was hard to shake the “why isn’t this pork” sensation, but it didn’t taste bad. It certainly got supper on the table fast.

I chopped up a bunch of scallions, and set out raw spinach, and I sliced up some giant mushrooms and sautéed them in olive oil and soy sauce, and when I cooked the ramen, I threw some eggs in the pot, and if people wanted an egg, they had to fish it out and shell it themselves like absolute peasants. 

Not a bad meal, considering I had zero plan and went from cold kitchen to dinner time in about 25 minutes. I also put out sugar snap peas and some kind of hot yuzu sauce, which I didn’t end up yuzing myself.

Look at that fricken mushroom. I actually could have made a full meal of just the broth, the spinach, and the mushrooms. Aldi has two big portobello mushrooms for $1.49 or something crazy, and I think I need to buy them more often. Mushrooms are such a gift. 

FRIDAY
Tuna sandwiches, fries

No tricks, just tuna sandwiches. Tuna sandwich and no headache; I’ll take it! 

Oh wait, I forgot to share pictures of the TMNT cake I made last Friday after the food post went up! I more or less followed the coconut cake recipe from Sally’s Baking Addiction, which is pretty easy and turned out well, tender and moist. I made three rounds and about a dozen cupcakes. I stacked up two of the rounds and then sort of dug holes for the cupcakes, which I anchored with toothpicks.

I used fondant to cover the bottom and buttercream on the cupcakes, with candy eyeballs and fondant masks.

At this point, I stopped, and thought pretty hard about what shape turtles’ heads actually are. I thought about how hot it was in the kitchen, and about the limits of buttercream, and then I went into the other room and basically made the kid sign an affidavit that she understood and acknowledged that her mother did try.

Then I put the third round on a circle of cardboard, to keep it from cracking, and set it on top of the cupcakes, stuck it on with buttercream, and covered that with fondant as well. 

And then I made a series of mistakes and irreversible bad decisions involving black sugar and continued hot kitchen, which seemed funnier and funnier to me as they devolved. I ended up using a paintbrush to paint the cake with black icing from a tube, and it looked really neat for a while, but then I ruined it, because I was very hopped up on icing and had no judgment left. These turtles were absolutely leering at me, and I couldn’t stop laughing and making it worse. 

I ended up deciding to make a logo out of fondant and more brushwork, which was a pain in the neck, but fairly effective. Except I knew I should sketch out the letters with a toothpick first, to make sure there was room; I knew I should. But I just didn’t want to. So it says “TEENAGE MUTANT NINJ'” because I ran out of room.

But there were turtles!

Or, or something. Anyway there were four green entities, with red, yellow, blue, and purple . . . . things. 

I feel like it’s a cake the Teenage Mutant Ninj’ Turtles themselves would have appreciated, anyway. (And Lucy liked it, too, even though it continued to slide and melt after I took these pictures, and then it turned out the candles I got were actually trick candles, and she had to blow them out about fifteen times and then finally dunk them in water. Please refer to the affidavit.)

Basic pie crust

Ingredients

  • 2-1/2 cups flour
  • 1/2 tsp salt
  • 1-1/2 sticks butter, FROZEN
  • 1/4 cup water, with an ice cube

Instructions

  1. Freeze the butter for at least 20 minutes, then shred it on a box grater. Set aside.

  2. Put the water in a cup and throw an ice cube in it. Set aside.

  3. In a bowl, combine the flour and salt. Then add the shredded butter and combine with a butter knife or your fingers until there are no piles of loose, dry flour. Try not to work it too hard. It's fine if there are still visible nuggets of butter.

  4. Sprinkle the dough ball with a little iced water at a time until the dough starts to become pliable but not sticky. Use the water to incorporate any remaining dry flour.

  5. If you're ready to roll out the dough, flour a surface, place the dough in the middle, flour a rolling pin, and roll it out from the center.

  6. If you're going to use it later, wrap it tightly in plastic wrap. You can keep it in the fridge for several days or in the freezer for several months, if you wrap it with enough layers. Let it return to room temperature before attempting to roll it out!

  7. If the crust is too crumbly, you can add extra water, but make sure it's at room temp. Sometimes perfect dough is crumbly just because it's too cold, so give it time to warm up.

  8. You can easily patch cracked dough by rolling out a patch and attaching it to the cracked part with a little water. Pinch it together.

 

Beef marinade for fajita bowls

enough for 6-7 lbs of beef

Ingredients

  • 1 cup lime juice
  • 1/3 cup Worcestershire sauce
  • 1/2 cup olive oil
  • 1 head garlic, crushed
  • 2 Tbsp cumin
  • 2 Tbsp chili powder
  • 1 Tbsp paprika
  • 2 tsp hot pepper flakes
  • 1 Tbsp salt
  • 2 tsp pepper
  • 1 bunch cilantro, chopped

Instructions

  1. Mix all ingredients together.

  2. Pour over beef, sliced or unsliced, and marinate several hours. If the meat is sliced, pan fry. If not, cook in a 350 oven, uncovered, for about 40 minutes. I cook the meat in all the marinade and then use the excess as gravy.

 

Instant Pot black beans

Ingredients

  • 2 tsp olive oil
  • 1 onion, diced
  • 6-8 cloves garlic, minced
  • 2 16-oz cans black beans with liquid
  • 1/2 cup fresh cilantro, chopped
  • 1 Tbsp cumin
  • 1-1/2 tsp salt
  • pepper to taste

Instructions

  1. Put olive oil pot of Instant Pot. Press "saute" button. Add diced onion and minced garlic. Saute, stirring, for a few minutes until onion is soft. Press "cancel."

  2. Add beans with liquid. Add cumin, salt, and cilantro. Stir to combine. Close the lid, close the vent, and press "slow cook."
